WE have enjoyed this recipe for many years. It was given to me by a college friend. It looks like a standard fruit cake, but the rich, moist texture of apples, dates, raisins and nuts makes it a very satisfying dessert. A slice of this cake, topped with whipped cream, whipped topping or a big scoop of ice cream will have your guests coming back for more.

1 package (8 ounces) chopped dates
1 cup raisins
2-1/2 cups all-purpose flour, divided
1/2 cup butter, softened
2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 teaspoons baking soda
1 teaspoon salt
1-3/4 cups boiling water
1 cup chopped peeled tart apple
1 cup chopped walnuts
Confectioners' sugar, optional

Steps:

  • In a small bowl, combine dates and raisins. Add 1 tablespoon flour and toss to coat; set aside. , In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the baking soda, salt and remaining flour; add to creamed mixture alternately with boiling water. Stir in the apple, walnuts and reserved date mixture., Transfer to a greased and floured 10-in. fluted tube pan. Bake at 350° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

300 g whole wheat flour
1 tablespoon baking powder
2 teaspoons ground cinnamon
125 g soft brown sugar
4 tablespoons clear honey
250 g dates, stoned and choppped
175 ml apple juice
120 ml vegetable oil
2 eggs, beaten
250 g apples, peeled, cored and chopped
50 g shelled walnuts, chopped

Steps:

  • Grease a 20cm square cake tin, line with greaseproof paper, then grease the paper.
  • Mix the flour, baking powder and cinnamon together in a bowl. Put the sugar, honey, dates (stoned and chopped) and apple juice in a pan and heat gently until the sugar has dissolved. Remove from the heat and leave to cool slightly, then add the flour with the oil. Beat until smooth. Add the eggs (beaten) and apples (peeled, cored and chopped) and mix thoroughly.
  • Turn the mixture into the prepared tin, then sprinkle with the walnuts. Bake in a preheated moderate oven (180C/350F/Gas Mark 4) for 1hr to 1hr 15 mins until the cake springs back when lightly pressed in the centre. Turn out onto a wire rack, peel off the paper, turn the cake the right way up and leave to cool.
  • To freeze: Wrap the cake in a polythene bag, seal and label and freeze for up to 4 months.
  • To thaw and serve: Unwrap, place on a serving plate and leave to stand at room temperature for 4 hours.

150 grams or 1/2 cup plus 1 1/2 tablespoons (140 ml) eggs (about 3 large eggs)
100 grams or 1 cup walnut halves
300 grams or 2 1/2 cups (lightly spooned into the cup and leveled off) bleached all-purpose flour
5.5 grams or 1 teaspoon baking soda
6 grams or 1 teaspoon fine sea salt
4.4 grams or 2 teaspoons ground cinnamon
4 large tart apples (657 grams or 1 1/2 pounds) / 525 grams or 4 cups diced
269 grams or 1 1/4 cups (296 ml) canola or safflower oil
200 grams or 1 cup granulated sugar
163 grams or 3/4 cup light brown sugar
2 teaspoons (10 ml) pure vanilla extract

Baking Equipment
The pan must be a minimum 12 cup capacity, such as a Nordic Ware Anniversary Bundt Pan with 10 to 15 cup capacity, or a 12 cup Bundt pan, coated with baking spray with flour; or a 16 cup two-piece angel food pan, bottom lined with parchment, then coated with baking spray with flour

Steps:

  • Preheat the oven:
  • Twenty minutes or longer before toasting the walnuts, set an oven rack in the lower third of the oven. Set the oven at 350ºF/175ºC.
  • Mise en place:
  • Thirty minutes to 1 hour ahead, set the eggs on the counter at room temperature (65º to 75ºF/19º to 24ºC).
  • TOAST AND CHOP THE WALNUTS: Spread the walnuts evenly on a cookie sheet and bake for 5 minutes. Turn the walnuts onto a clean dish town and roll and rub them around to loosen the skins. Discard any loose skins and let the nuts cool completely. Chop medium coarse.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • Peel, core, and cut the apples into 1/8 to 1/4 inch dice.
  • Make the batter:
  • Into the bowl of a stand mixer, weigh or measure the eggs. Add the oil, granulated and brown sugars, and the vanilla. Attach the flat beater and beat on medium speed for 1 minute, until blended.
  • Add the flour mixture and beat on low speed for 20 seconds, just until incorporated. Scrape down the sides of the bowl.
  • Detach the bowl from the stand and with a large spoon stir in the apples and walnuts. Spoon the batter into the prepared pan.
  • Bake the cake:
  • Bake for 50 to 60 minutes, or until a wire cake tester inserted near the center comes out clean and the cake springs back when pressed lightly in the center.
  • Cool the cake:
  • Let the cake cool in the pan on a wire rack for 30 minutes. If using a straight sided pan, run a metal spatula between the sides of the pan and the cake. Invert the cake onto a wire rack that has been lightly coated with nonstick cooking spray and cool completely for about 1 1/2 hours.
  • Drizzle Caramel Sauce and Glaze over the cake after unmolding.

2 ounces margarine
1 cup boiling water
1 teaspoon baking soda
8 ounces self-rising flour
6 ounces brown sugar
2 ounces chopped walnuts
1 egg, beaten

Steps:

  • Place dates and margarine in a bowl with boiling water and baking soda. Gently mix with a wooden spoon until margarine has melted and dates are plumped up. Let cool to room temperature, at least 30 minutes.
  • Preheat the oven to 325 degrees F (165 degrees C). Line a 2-pound loaf pan with parchment paper.
  • Combine flour, brown sugar, and walnuts in a separate bowl. Add to bowl with the date mixture. Mix well with a wooden spoon. Add egg and mix in. Spoon mixture into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 75 minutes. Let cool on a wire rack.

125g unsalted butter, cubed and softened, plus extra for the tin
200g soft dates, pitted and roughly chopped
½ tsp bicarbonate of soda
150g light muscovado sugar
2 eggs
1 tsp baking powder
225g self-raising flour
100g walnuts, roughly chopped
1 tbsp icing sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 2lb loaf tin (ours was 22 x 10cm and 6cm deep) and line with baking parchment. Put the butter, dates and bicarbonate of soda (which helps break down the dates) in a large bowl and add 150ml boiling water. Give it a stir so the butter melts, and leave to stand for around 20 mins until the dates have softened.
  • Whisk in the sugar until smooth, then gradually whisk in the eggs until combined. Beat in the baking powder, flour and a pinch of sea salt until there are no lumps of flour left and it's smooth. Fold in three-quarters of the walnuts, then pour into the prepared tin. Sprinkle the remaining walnuts over the top.
  • Bake for 20 mins, then turn the oven down to 170C/150C fan/gas 3 and cook for another 45-50 mins until golden brown and a skewer inserted into the centre comes out clean. Leave the cake to cool in the tin for 15 mins, then transfer to a cooling rack to cool completely. Lightly dust with the icing sugar and serve in slices. Freeze whole or cut into slices, then place in an airtight container or divide between reusable freezer bags. Can be frozen for up to three months. Defrost thoroughly overnight.

1 tsp ground cinnamon
½ tsp bicarbonate of soda
140g dark brown soft sugar
50g golden caster sugar
250ml rapeseed or sunflower oil
4 eggs
3 unpeeled apples , coarsely grated
100g walnuts , roughly chopped
100g butter , softened
50g dark soft brown sugar
1 tbsp black treacle
200g tub full fat soft cheese

Steps:

  • Heat oven to 150C/130C fan/gas 2. Line two 20cm cake tins. Put the flour, cinnamon and bicarbonate of soda in a big bowl, then stir in the sugars, making sure there are no lumps of sugar. Add the oil, eggs and apples, and beat everything together. Fold in the walnuts then divide the mixture between the tins and bake for 45 mins or until a skewer comes out clean. Allow to cool for a few mins in the tin then remove and cool completely on a wire rack.
  • For the icing, beat all the ingredients together then chill until the mixture is thick but spreadable. Spread half the icing on top of one cake, sandwich with the other and spread the remaining icing on top
