Whole-Wheat Date Bars image

These date-filled bars get their soft texture from applesauce; wheat flour and bran add wholesome notes.

Number Of Ingredients 12

2 1/4 cups pitted dates (about 11 ounces)
3/4 cup apple cider
1 1/4 cups whole-wheat flour
1 cup all-purpose flour, plus more for parchment
1/4 cup wheat bran
1/4 teaspoon coarse salt
1/4 teaspoon baking soda
2/3 cup packed dark-brown sugar
1 teaspoon finely grated lemon zest
10 tablespoons (1 1/4 sticks) unsalted butter, softened
1 large egg
1/4 cup smooth unsweetened applesauce

Steps:

  • Make filling: Bring dates and cider to a boil in a medium saucepan over medium-high heat. Reduce heat to medium, simmer until dates are soft and almost all liquid has reduced, about 10 minutes. Let cool completely. Transfer to a food processor. Puree date mixture until smooth, set aside.
  • Make dough: Whisk together flours, bran, salt, and baking soda in a medium bowl, set aside. Put sugar and zest in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed 30 seconds. Add butter, mix until combined, about 1 minute. Add egg, mix until fluffy. Mix in flour in 3 batches, alternating with 2 batches of applesauce. Divide dough in half. Wrap each half in plastic; shape into a rectangle. Refrigerate until firm, about 2 hours.
  • Preheat oven to 375 degrees. Roll out 1 piece of dough between two lightly floured sheets of parchment paper to a 9 1/2-by-13-inch rectangle. Dust with more flour, if needed. Remove top piece of parchment. Trim dough to a 9-by-11-inch rectangle. Transfer rectangle on parchment to a baking sheet.
  • Cut rectangle in half lengthwise. Spread a heaping cup filling down half of each length, leaving a 1/4-inch border. Fold dough over; pinch to seal. Refrigerate until firm, about 20 minutes. Repeat with remaining chilled dough and filling.
  • Bake until golden brown, about 20 minutes. Let cool on sheets on wire racks 5 minutes. Cut into 1 1/2-inch bars. Transfer bars to racks using a spatula; let cool. Bars can be stored in airtight containers up to 3 days.

1 1/2 cups white whole wheat flour
2 teaspoons baking powder
1/2 teaspoon sea salt (fine grain, not flaked kosher salt)
1 cup sugar
1 tablespoon butter, softened (but NOT melted)
2 eggs, lightly beaten
2 tablespoons water
1 teaspoon vanilla
7 ounces whole, dried dates, chopped (to equal about 1 1/2 cups)
1/2 cup finely chopped walnuts
to finish: about 1/4 cup powdered sugar (you will actually end up using only about 1 tablespoon)

Steps:

  • Preheat oven to 350°F.
  • Prepare a 9 x 13" baking pan by spraying with cooking spray and/or lightly but thoroughly flouring the bottom (if needed - my pan doesn't need this).
  • In a medium bowl, whisk flour, baking powder, and salt until thoroughly combined.
  • In a second medium bowl, combine sugar and butter until butter is completely incorporated into the sugar. The mixture will be crumbly, similar to wet sand. (I find it's easiest to do this with my hands, rubbing the butter into the sugar with my fingers, but you can also use an electric mixer.) Add eggs, water, and vanilla, and stir until thoroughly combined. Add the dates and walnuts and stir again to distribute evenly.
  • Lightly dump the dry ingredients (flour mixture) over top of the wet ingredients (sugar mixture) and stir just until thoroughly combined. The dough will be very thick and sticky.
  • Using a rubber scraper, spread the dough into the pan, pushing it and flattening it until it's an even thickness (dough will only thinly cover the entire pan).
  • Bake for about 20-22 minutes, until lightly golden brown.
  • Let cool completely in the pan on a cooling rack before cutting. Cut into 39 sticks that are 1 inch wide and 3 inches long.
  • Place at least 1/4 cup of powdered sugar in a wide bowl. Roll each bar in the sugar to coat, tapping gently to remove any excess, loose sugar. (You should actually use only about 1 tablespoon of the sugar to thinly coat the bars, but it makes it much easier to work with them if there is plenty of extra sugar in the bowl. You can discard the excess.)

Light in texture but chock full of dates and nuts. Low in sugar and fat. The dates I used were very moist and mushy. If you are using mushy dates make sure you beat the eggs with the dates well. I also used a pinch of baking soda to beat them up. This cake took 40 minutes to bake. Bake until the tops are slightly firm and springy. I ran out of honey and in its place I used golden syrup.

1 cup chopped dates
1/2 cup walnut pieces
1/2 teaspoon vanilla extract
6 tablespoons whole wheat flour
1/2 teaspoon baking powder

Steps:

  • Preheat oven to 325°F.
  • Add dates, nuts, and vanilla.
  • Combine flour and baking powder and stir into date mixture until evenly blended.
  • Pour into a well oiled 8 or 9 inch square pan. Bake for 20 to 25 minutes until lightly browned on top. Cool in the pan. Cut into squares or bars to serve. Makes 16 (2-inch) squares, or 32 bars, 2 x 1 inches.
  • NOTE: To double, use 3 eggs, double remaining ingredients, and bake in a 9 x 13 inch pan.

1/2 cup water
1/4 cup sugar
1-1/2 cups quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar

1 large egg white, room temperature

Steps:

  • Preheat oven to 350°. Place dates, water and sugar in a small saucepan; bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until thickened, about 5 minutes, stirring constantly., In a large bowl, mix oats, flour, brown sugar, baking soda and salt; stir in melted butter and egg white. Press half of the mixture into an 8-in. square baking pan coated with cooking spray. Spread carefully with date mixture; top with remaining oat mixture. , Bake until lightly browned, 20-25 minutes. Cool in pan on a wire rack. Cut into bars.

1/2 cup (95 grams) dark brown sugar
2/3 cup (160 grams) plain yogurt, buttermilk or sour cream
1 tablespoon (20 grams) honey
1 tablespoon (14 grams) vanilla extract
3 large eggs, at room temperature
1 cup (125 grams) all-purpose flour
3/4 cup (90 grams) whole-wheat flour
1 1/2 teaspoons (6 grams) baking powder
1/4 teaspoon (1 gram) baking soda
1/2 teaspoon (3 grams) fine sea salt
2/3 cup (140 grams) extra virgin olive oil
1 cup (200 grams) sliced pitted dates
Cream cheese, for serving
Red seedless grapes, halved, for serving

Steps:

  • Heat oven to 350 degrees. Grease a 9-by-5-inch loaf pan. In a medium bowl, whisk together the sugar, yogurt, honey and vanilla. Whisk in the eggs, one at a time.
  • In a separate bowl, mix together the flours, baking powder, baking soda and salt. Whisk the dry ingredients into the wet, just until no longer lumpy. Using a rubber spatula, fold the olive oil into the batter in 3 additions. Fold in the dates.
  • Pour the batter into the prepared pan and bake until it is golden brown and a cake tester inserted in the center comes out clean, 50 to 55 minutes. Let rest for 10 minutes before turning the cake out onto a rack to cool completely.
  • To serve as sandwiches, cut into 1/2-inch-thick slices and make sandwiches with a layer of cream cheese studded with grape halves. Freeze any remainder; the bread can be sliced while frozen.
