WHOLE WHEAT, BAKED PITA CHIPS
This is a great healthy alternative to greasy fried white flour pita chips. So good and they work great for other dipping sauces and spreads that might be too heavy for potato chips or party crackers.

Steps:
- 1. Heat the oven to 400°F and arrange a rack in the middle.
- 2. Slice the pitas into approximately 8 wedges. If using pita instead of Greek flat bread, don't separate the layers.
- 3. Place the pita wedges in a single layer on a baking sheet.
- 4. Brush the tops with half of the olive oil and sprinkle with half of the salt.
- 5. Turn the wedges over and repeat with the remaining oil and salt.
- 6. Bake until the chips are golden brown and crispy, about 15 minutes.
- 7. Remove from the oven and transfer the chips to a wire rack until completely cooled. Store in an airtight container for up to 1 week.
SPICY WHOLE WHEAT PITA CHIPS
Great with dips, spreads, hummus or soups. Keep extra pita chips stored in an airtight container for up to three days.

- Place pita triangles in a bowl and pour seasoned olive oil over pita. Gently toss to coat each pita triangle, use your hands for this.
- Next place pita triangles on prepared baking sheet.

- In a large bowl, dissolve yeast in 1/2 cup warm water. Add honey; let stand for 5 minutes. Add the oil, salt 3 cups of whole wheat flour and remaining water. Beat until smooth. Stir in enough whole wheat flour to form a soft dough. , Turn onto a surface dusted with all-purpose flour; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down; let rest for 10 minutes.
