4 1/2 ounces spelt flour (about one cup)
1 cup quick-cooking oats
1/2 cup packed brown sugar
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
6 tablespoons unsalted butter, melted
3 tablespoons orange juice
1 1/3 cups dried cranberries
3/4 cup sour cream
1/2 cup sugar
2 tablespoons spelt flour
1 teaspoon vanilla
1/2 teaspoon grated orange zest
1 large egg, lightly beaten

Steps:

  • Preheat oven to 325 degrees.
  • To prepare crust:.
  • In medium bowl, whisk together the spelt flour, oats, brown sugar, salt, baking soda and cinnamon. Pour melted butter and orange juice over mixture and stir to combine. Reserve 1/2 cup of mixture (for topping) and press the remaining mixture into the bottom of an 11X7 baking dish that has been coated with cooking spray.
  • To prepare filling:.
  • Combine cranberries, sour cream, sugar and remaining ingredients in a medium bowl, stirring well. Spread cranberry mixture over prepared crust. Evenly crumble reserved topping over filling.
  • Bake for 40 minutes or until edges are golden. Cool completely in pan on a cooling rack before serving.

1-1/4 cups butter, softened, divided
1-1/2 cups packed brown sugar, divided
3-1/2 cups old-fashioned oats, divided
1 cup all-purpose flour
1 can (14 ounces) whole-berry cranberry sauce
1/2 cup finely chopped pecans

Steps:

  • In a large bowl, cream 1 cup butter and 1 cup brown sugar until light and fluffy, 5-7 minutes. Combine 2-1/2 cups oats and flour. Gradually add to creamed mixture until crumbly. Press into a greased 13x9-in. baking pan. Spread with cranberry sauce. , In a microwave-safe bowl, melt remaining butter; stir in the pecans and remaining brown sugar and oats. Sprinkle over cranberry sauce. Bake at 375° until lightly browned, 25-30 minutes. Cool on a wire rack. Cut into bars.

1 1/2 cups old-fashioned rolled oats
1 1/4 sticks (10 tablespoons) unsalted butter, softened
1 cup packed light brown sugar
2 large eggs
2 tablespoons whole milk
2 teaspoons vanilla
1 cup all-purpose flour
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups pecans (6 ounces), chopped
1 1/3 cups dried cranberries, chopped

Steps:

  • Put oven rack in middle position and preheat oven to 350°F. Generously butter a 9-inch square baking pan.
  • Toast oats in another baking pan, stirring occasionally, until pale golden, about 12 minutes.
  • Beat butter and sugar with an electric mixer until fluffy. Beat in eggs, milk, and vanilla. Whisk together flour, nutmeg, salt, and baking soda, then beat into butter mixture until incorporated. Stir in oats, pecans, and cranberries. Spread in buttered pan.
  • Bake until golden and a wooden pick inserted comes out clean, 30 to 35 minutes. Cool in pan 20 minutes, then cut into bars.
