Whole Grain Morning Glory Muffins image

Whole wheat pastry flour combines with apples, raisins, carrots, coconut and walnuts in these nutritious and satisfying muffins.

1 1/3 cup whole wheat pastry flour
1/2 cup sugar
1/4 cup packed brown sugar
1 1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
2 cage-free eggs
2/3 cup safflower oil
1 teaspoon pure vanilla extract
1 Fuji or Granny Smith apple, cored, peeled and diced
1/2 cup seedless raisins
1 large carrot, grated
1/2 cup toasted walnuts, finely chopped
1/4 cup plus 2 tablespoons dried flaked unsweetened coconut, divided

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, mix together flour, sugar, brown sugar, baking soda, cinnamon and salt; break up any brown sugar lumps with your fingers or a wooden spoon.
  • In a separate bowl, whisk together eggs, oil and vanilla, then add to flour mixture and stir just until combined.
  • Add apples, raisins, carrots, walnuts and ¼ cup of the coconut and stir gently until well combined.
  • Spoon batter into 16 paper-lined muffin tins, filling each about ⅔ full.
  • Top evenly with remaining 2 tablespoons coconut and bake until golden brown and a toothpick inserted into the center comes out clean, 25 to 30 minutes.

This is a wonderful bran muffin that my Mom always made and now I carry on the tradition. This recipe came from the back of Rogers Wheat Bran. Quick to make, plus the recipe doubles well and freezes excellent.

1 1/2 cups rogers wheat bran
1 cup buttermilk (or 1 tbsp. lemon juice added to 1 cup milk)
1/3 cup vegetable oil
1 egg
2/3 cup brown sugar
1/2 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup raisins (I use 3/4 cup)

Steps:

  • Preheat oven to 350.
  • Mix together Rogers Wheat Bran and buttermilk; let stand.
  • Combine the vegetable oil, egg, sugar and vanilla and add it to the bran-buttermilk mixture, this is now your first mixture.
  • Mix flour, baking powder, baking soda and salt.
  • Add to the first mixture, stir until just blended and add the raisins.
  • Line muffin tins with baking cup papers and spoon into baking cup papers using all the batter.
  • Bake at 350 for 15 to 20 minutes.
  • Note: I bake mine for only 15 minutes and find them much moister.

1 ½ cups wheat bran
1 cup buttermilk
⅓ cup vegetable oil
1 egg
⅔ cup brown sugar
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
  • Mix together wheat bran and buttermilk; let stand for 10 minutes.
  • Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
  • Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

Use a navel orange, as they are seedless and juicy. Organic oranges should be used, as conventionally grown ones have a lot of pesticides in their peels. Adapted from "Living the G. I. Diet". They will keep up to 2 days, otherwise freeze them for up to a month.

2 cups whole wheat flour
1/2 cup wheat bran (not the bran cereal, the real thing)
1/4 cup sugar substitute
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 pinch salt
1 whole navel orange
3/4 cup skim milk
1/2 cup fresh orange juice
1/4 cup non-hydrogenated soft margarine
1 egg
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 400 degrees Fahrenheit.
  • In a large bowl, combine the dry ingredients (flour though salt) and whisk to combine.
  • Scrub the orange and cut into 8 wedges, peel and all. Place in the work bowl of a food processor and pulse until finely chopped, nearly a puree. Add the milk through vanilla and pulse until combined.
  • Pour the wet mixture into the dry ingredients and stir until just combined. Divide into 12 greased or paper-lined mufffin cups and bake until golden and firm to the touch, about 20 minutes.

½ cup raisins
1 cup all-purpose flour
1 cup whole wheat flour
⅔ cup white sugar
2 teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
1 tablespoon ground cinnamon

½ cup nonfat dry milk powder
¼ cup toasted wheat germ
¼ cup wheat bran
3 tablespoons uncooked farina hot cereal (such as Cream of Wheat®)
3 egg whites
1 ¼ cups unsweetened applesauce
1 large carrot, peeled and shredded
⅓ cup vegetable oil
¼ cup bran cereal
3 tablespoons raw sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 18 muffin cups with paper liners.
  • In a small bowl, cover the raisins with water, and set aside to plump. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, salt, cinnamon, allspice, dry milk powder, wheat bran, and farina cereal until thoroughly combined.
  • Drain water from the raisins. In a separate bowl, beat the egg whites until frothy, then mix in the drained raisins, applesauce, carrot, vegetable oil, and bran cereal. Pour the liquid ingredients into the flour mixture, and briefly mix just to moisten (do not overmix). Fill muffin cups about 2/3 full, and sprinkle each muffin with about 1/2 teaspoon of raw sugar.
  • Bake in the preheated oven until the muffins are set and the tops are golden brown, 25 to 30 minutes. A toothpick inserted into the center of a muffin should come out clean. Serve warm.

5 cups whole wheat flour
1 teaspoon salt
4 cups all-bran cereal
2 cups bran flakes
2 cups raisins
1 cup walnuts
2 cups boiling water
5 teaspoons baking soda
2 cups sugar
1 cup butter
4 eggs
1 quart buttermilk

Steps:

  • In large bowl sift together flour and salt. Stir in All-Bran and Bran Flakes. Add raisins and nuts. Set aside.
  • Mix boiling water and baking soda; set aside to cool.
  • Cream sugar and butter in a large bowl. Stir in eggs, one at a time. Beat well. Stir in buttermilk and soda/water mixture Stir in bran mixture. Cover tightly. Best if refrigerated 12 hours (or more).
  • The mixture will keep 4-6 weeks in the refrigerator and can be baked as needed. When ready to bake, drop 1/2 cup batter into large greased muffin tins. Do not stir mixture. Bake at 375 for approximately 20 minutes or until lightly browned. Makes 24 large muffins.

Moist, delicious, full of blueberries, healthy, very low in fat. To change them up use apples instead of blueberries and add 1/2 ts. nutmeg.

3/4 cup natural bran
1/3 cup raw sugar
2 teaspoons baking powder
1 teaspoon baking soda

8 ounces applesauce
1/4 cup molasses
1 teaspoon pure vanilla extract
1 1/2 cups blueberries (fresh or frozen but thawed and drained)

Steps:

  • Mix dry ingredients together in one bowl.
  • Mix wet ingredients together in a different bowl.
  • Combine wet into dry with Blueberries and just mix together.
  • Grease bottom of muffin tin, and scoop in muffin mix.
  • Bake at 350f and enjoy!
  • Will make 12 regular sized muffins or 6 large muffins. Muffins will be done about 20 mins for reg. and 30-35 mins for lg.
