Looking for a cool, healthy treat? This icy dessert is full of fruit and little else.

Number Of Ingredients 6

4 ripe peaches (about 1 1/2 pounds), peeled, halved, pitted, and coarsely chopped
1/2 cup water
1/4 cup sugar, plus more if needed
1 tablespoon fresh lemon juice
Coarse salt
2 teaspoons finely chopped fresh basil (optional)

Steps:

  • Puree peaches, water, sugar, lemon juice, and 1/4 teaspoon salt in a blender; add more sugar to taste. Transfer to an 8-inch-square baking dish. Freeze for 2 1/2 hours, scraping with a fork every hour (mixture should be icy and fluffy). Stir in basil.

5 medium ripe white peaches, peeled and cut into chunks
1/2 cup superfine sugar
2 tablespoons fresh lemon juice, or to taste
1 cup prosecco or other dry sparkling white wine

Steps:

  • 1 Place a 13 × 9 × 2-inch pan in the freezer to chill at least 15 minutes. In a blender or food processor, combine the peaches, superfine sugar, and lemon juice. Blend or process until the sugar is completely dissolved. Stir in the wine. 2 Remove the chilled pan from the freezer and pour the mixture into the pan. Place the pan in the freezer for 30 minutes or until a 1-inch border of ice crystals forms around the edges. Stir the ice crystals into the center of the mixture. Return the pan to the freezer and continue freezing, stirring every 30 minutes, until all of the liquid is frozen, about 2 to 2 1/2 hours. Serve immediately, or scrape the mixture into a plastic container, cover, and store in the freezer up to 24 hours. 3 Remove from the freezer to soften about 15 minutes before serving, if necessary.   • In a small saucepan, combine the prosecco, sugar, juice of 1 lemon, mint, and salt. Bring to a simmer and cook just to melt the sugar, about 2 minutes. Remove from the heat and let cool.
  • When the prosecco syrup has cooled, put it in a blender with the peaches and remaining lemon juice. Purée until smooth.
  • Pour into a wide, shallow metal pan so the mixture comes about 1 inch up the sides. Put in the freezer.
  • Once ice crystals begin to form around the sides of the pan, about 1 hour, scrape the granita with a fork to incorporate the crystals back into the slush. Keep freezing and scraping every ½-1 hour until the granita is completely frozen in light, fluffy crystals.
