Best ever White Chocolate Cheesecake made from scratch.

300 grams Digestive biscuits or graham crackers, broken into pieces
115 grams (1/2 cup or 1 stick) butter
500 grams (2 and 1/2 cups) full fat cream cheese*, room temperature
100 grams (1/2 cup) caster sugar or granulated sugar
1 teaspoon vanilla extract
3 large eggs, room temperature
120 ml (1/2 cup) full fat sour cream, room temperature
1 teaspoon cornflour or corn starch
150 grams good quality white chocolate, melted
75 grams (1/2 cup) white chocolate, finely chopped
250 grams (2 cups) fresh raspberries, to decorate
Icing sugar or powdered sugar, to serve

Steps:

  • Preheat oven to 170 C (340 F) standard / 150 C (300 F) fan-forced. Line the bottom of an 8-inch springform pan with baking or parchment paper.
  • Add cookies to a food processor and whiz until finely crushed. Place crumbs in a large mixing bowl. Melt butter in the microwave, then pour over cookie crumbs and mix well. It should resemble wet sand.
  • Place wet crumbs in your prepared pan and press down gently to form one even layer. Use the back of a spoon to smooth crumbs. Pop in the fridge.
  • Add cream cheese (make sure it's nice and soft) to a large mixing bowl and beat for a minute or two until smooth and creamy. Add sugar and vanilla and beat again. Then add eggs, one at a time, beating on a low speed until incorporated.
  • Add sour cream, cornflour and melted chocolate and stir until smooth - but try not to overmix. Add white chocolate chunks.
  • Pour cheesecake filling over cookie crust and smooth the top. Bake in the oven for approximately 35-40 minutes or until it no longer wobbles in the middle. Try not to over bake it as it will continue to cook as it cools. Leave the cheesecake in the oven with the door ajar (with the oven turned off) for at least one hour.
  • Remove cheesecake and leave to cool at room temperature before transferring to the fridge. The cheesecake is best left in the fridge for 3-4 hours (or overnight) until it cools completely and becomes nice and firm before slicing.
  • To serve, top with fresh raspberries and dust with icing sugar.

1 package (9 ounces) chocolate wafer cookies, crushed (about 2 cups)
1/4 cup sugar
1/4 teaspoon ground cinnamon

FILLING:
2 packages (8 ounces each) cream cheese, softened

1 cup sour cream
8 ounces semisweet chocolate, melted and cooled
1/2 teaspoon almond extract

TOPPING:
1 cup sour cream
1/4 teaspoon baking cocoa
2 tablespoons sugar
1/2 teaspoon almond extract
Sliced almonds, toasted, optional

Steps:

  • In a small bowl, combine crust ingredients; reserve 2 tablespoons for garnish. Press remaining crumbs evenly onto the bottom and 2 in. up the sides of a 9-in. springform pan. Chill. , For filling, in a large bowl, beat cream cheese and sugar until smooth. Beat in the sour cream, chocolate and extract. Add eggs; beat on low speed just until combined. Pour into crust., Place pan on a baking sheet. Bake at 350° for 40 minutes (filling will not be set). Remove from oven and let stand for 5 minutes., Meanwhile, combine topping ingredients. Gently spread over filling. Sprinkle with reserved crumbs. Bake 10 minutes longer. , Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Steps:

  • Heat oven to 325°F.
  • Beat butter, 1/4 cup sugar and 1/2 tsp. vanilla in small bowl with mixer until light and fluffy. Gradually beat in flour until well blended; press onto bottom of 9-inch springform pan. Prick with fork. Bake 25 min. or until edge is lightly browned.
  • Beat cream cheese, remaining sugar and vanilla in large bowl with mixer until well blended. Add chocolate; mix well. Add eggs, 1 at a time, beating on low speed after each addition just until blended. Pour over crust.

CRUST
1 pkg graham crackers, out of a 3 pkg box
1/3 c sliced almonds
1/4 c sugar
1/3 c butter, melted
CHEESECAKE BATTER
1 - 12 oz bag white chocolate chips or any good white chocolate, melted
5 - 8 oz packages creamed cheese
1 c sugar
5 large eggs, room temperature
1 c heavy cream
1/2 c sour cream
1 Tbsp vanilla extract
1 tsp almond emulsion or extract
3 Tbsp cornstarch
TOPPING
1 1/2 c sour cream
1/4 c sugar
1 tsp vanilla extract
GARNISH
cherries, strawberries, blueberries, or any fresh fruit or fruit topping you choose.

Steps:

  • 1. Preheat oven to 325 degrees. Melt white chocolate chips in microwave for 45 sec - 1 min stirring frequently until melted. Set aside to cool. Prepare a 10 inch springform pan. Butter insides and completely wrap outsides of pan with a double layer of heavy duty foil so water from water bath doesn't seep in and make your cheesecake soggy.
  • 2. In food processor, put crust ingredients and pulse until almonds are finely chopped. Press into bottom and part way up the sides of springform pan. Chill crust in freezer while making cheesecake batter.
  • 3. If you have a large enough food processor bowl, you can make the batter in it. Otherwise use a mixer. Beat creamed cheese until smooth, beat in sugar and eggs 1 at a time. Mix in heavy cream,melted white chocolate, sour cream, cornstarch and flavorings. Pour batter into chilled crust.
  • 4. Make a water bath with a pan at least 2 inches bigger than cheesecake pan. Put the larger pan on center oven rack. Place cheesecake in middle and pour hot water in the large pan to 1/2 way up the cheesecake pan.
  • 5. Bake cheesecake for 1 hour. While cheesecake is baking, stir together topping ingredients. Since all ovens vary, bake 10-15 minutes longer if after 1 hour it seems too jiggly to spread on the sour cream topping. Spread topping on top of cheesecake carefully and evenly. Bake an additional 15 minutes. Turn off oven and let it sit in oven undisturbed for 1 hour.
  • 6. Carefully remove cheesecake from water bath and chill. Refrigerate for at least 6 hours or overnight before serving.
  • 7. I love to just put a bag of frozen bing cherries spread over the top. As they thaw they drip juice down into the cheesecake. Yummy. Or you can top this delicious cheesecake with your choice of fresh fruit or fruit topping or just serve plain. Enjoy!

22 chocolate sandwich cookies (such as Oreo®)
3 tablespoons butter, melted
3 (8 ounce) packages cream cheese, softened
1 cup white sugar
4 ounces white chocolate-flavored almond bark, melted
1 ½ tablespoons all-purpose flour
1 ½ tablespoons heavy whipping cream
2 teaspoons peppermint extract
¼ teaspoon salt
3 eggs
¾ cup creme de menthe baking chips (such as Andes®)
½ cup peppermint crunch baking chips (such as Andes®)
½ (8 ounce) package cream cheese, softened
2 ounces white chocolate-flavored almond bark, melted
½ cup frozen whipped topping (such as Cool Whip®), thawed
1 ½ tablespoons white sugar
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9-inch springform pan with 2 sheets of aluminum foil.
  • Crush chocolate cookies into fine crumbs using a food processor. Add melted butter and stir until well combined. Transfer crumb mixture into the prepared pan. Press down crumbs to create an even crust, completely covering the bottom of the pan.
  • Bake in the preheated oven until just set, 8 to 10 minutes.
  • Reduce the oven temperature to 325 degrees F (165 degrees C).
  • Beat cream cheese in a large bowl or the bowl of a stand mixer with an electric mixer until smooth. Add sugar and mix well. Mix in melted almond bark, flour, heavy cream, peppermint extract, and salt, scraping the bowl prior to each new addition; mix well. Add 1 egg at a time on medium-low speed. Mix until smooth. Fold in creme de menthe and peppermint crunch baking chips.
  • Transfer the springform pan with the cooked crust to a large roasting pan. Pour filling into the crust. Add enough hot water to the roasting pan to reach halfway up the sides of the springform pan.
  • Bake in the center of the preheated oven until set, about 1 hour. Turn off the oven. Leave cake in the oven, keeping the door shut, for an additional 45 minutes. Remove and allow to sit for at least 1 hour before chilling.
  • Chill for 4 hours, to overnight.
  • Beat softened cream cheese, white chocolate, whipped topping, sugar, and vanilla extract for mousse together in a medium bowl with an electric mixer until smooth and slightly thickened. Add mousse to the top of the cheesecake. Chill for at least 4 more hours.
  • Remove the sides of the springform pan. Cut into slices and enjoy.

CRUST:

1-1/4 cups heavy whipping cream

  • In a small saucepan, mix raspberries and cornstarch until blended. Bring to a boil; cook and stir 1-2 minutes or until thickened. Press through a fine-mesh strainer into a bowl; discard seeds. Steps:

  • Special equipment: a 9-inch springform pan
  • Preheat the oven to 350 degrees F.
  • For the crust: Add the chocolate graham crackers and the almonds to a food processor. Process until finely chopped. Add the butter and salt and process to the consistency of wet sand. Press the crust into the bottom of a 9-inch springform pan. Refrigerate until ready to use.

1/2 cup almonds, toasted
1 tablespoon unsalted butter, melted
8 ounces white chocolate
3 (8 ounce) packages cream cheese, room temperature

3 tablespoons Amaretto
4 large eggs

Steps:

  • FOR THE CRUST:.
  • Position rack in the center of the oven and preheat ot 350°F.
  • Butter 9-inch springform pan with 2 3/4 inch sides.
  • Grind shortbreads and almonds in a food processor. Add butter and process until clumps form. Press the dough into the pan bottom. Bake until golden brown - about 8 minutes. Cool crust completely. But maintain oven temperature.
  • FOR THE FILLING:.
  • In top of double boiler set over barely simmering water, stir white chocolate until it is melted. Remove pan from water.
  • Using a mixer, beat cream cheese and sugar in a large bowl until completely blended and smooth. Add sour cream and Amaretto and beat until well-blended. Beat 1 egg at a time, then beat in melted chocolate.
  • Pour filling into crust and bake until golden and puffed. Center will be set in just about 1 hour to 1 hour and 20 minutes. Cool pan on rack and refrigerate until cold.
  • Before serving, run a knife around the sides of the spring-form pan to loosen the cake. Remove the pan sides and smooth the sides of the cake with a knife or spatula. Transfer the caker to a platter, garnish with additional chopped, toasted almonds and serve.

This almond and cherry baked cheesecake is a heavenly marriage of two amazing desserts

200g/7oz almond biscuits
100g toasted flaked almond
½ tsp almond extract
100g butter , melted
3 x 300g packs full-fat soft cheese
250g caster sugar
4 tbsp plain flour
1 tsp vanilla extract
3 large eggs
200ml tub soured cream
just over half a 300g jar cherry jam
icing sugar and cream , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line the base and sides of a 23cm springform tin with baking parchment. Bash the biscuits and 75g of the flaked almonds to crumbs - try double-bagging in food bags and crushing with a rolling pin. Mix with the almond extract and melted butter, then press into the base of the prepared tin and bake for 10 mins. Set aside to cool while you make the filling.
  • In your largest bowl, whisk the cheese with an electric whisk until creamy. Add the sugar and whisk to combine. Whisk in the flour, then the vanilla, the eggs, one at a time, and finally the soured cream.
  • Dollop spoonfuls of mixture into the tin, dotting in tbsps of jam as you go. Smooth the top as gently as you can.
  • Carefully place tin on the middle shelf of the oven and bake for 10 mins. Scatter with remaining almonds. Decrease oven to 110C/90C fan/gas ¼ and bake for a further 35 mins. Turn off the oven, keep the door closed and leave cheesecake to cool for 1 hr. Open oven door and leave it ajar for another hour (you can use your oven gloves to wedge it open). Cool for a third hour at room temp, then cover and chill overnight.
  • Remove from the tin and carefully peel off the parchment. Dust with icing sugar and serve with cream.

1 (8 ounce) container sour cream

1/2 teaspoon vanilla extract
2 1/2 pints raspberries or 1 pint strawberry
1/2 cup seedless raspberry jam

Steps:

  • For crust------------.
  • Preheat oven to 350F degrees.
  • Place large piece of foil on heavy large baking sheet.
  • Set 8x2-inch bottomless heart-shaped cake pan atop foil.
  • Wrap foil around outside and 1 inch up sides of pan.
  • Butter foil and pan.
  • Finely grind cookies and almonds in processor.
  • Add butter and blend until mixture forms very moist crumbs.
  • Using plastic wrap as aid, press crumbs firmly onto bottom and 2 inches up sides of pan.
  • Bake until golden, about 10 minutes.
  • Cool.
  • Maintain oven temperature.
  • For Filling--------------.
  • Melt white chocolate in top of double boiler over simmering water until smooth, stirring often.
  • Remove from over water.
  • Using electric mixer, beat cream cheese, sugar, vanilla and peel in large bowl until smooth.

300g digestive biscuits
150g unsalted butter, melted, plus extra to grease
400g white chocolate, broken into pieces
300g full-fat cream cheese (we used Philadelphia)
250g mascarpone
300ml double cream
200g strawberries or raspberries, to serve

Steps:

  • Crush the biscuits in a food processor until completely ground. Add butter and whizz again until you have the desired crumbly consistency.
  • Grease and line the base of a 23cm deep, loose-bottomed cake tin. Add the biscuit mixture to the cake tin and pat it flat. Leave to set in the fridge for approximately 30 mins.
  • Begin melting the chocolate in a heatproof glass bowl over a small pan of hot water on a low heat. Stir occasionally to prevent sticking. Remove from the heat and leave to cool for 10 mins until barely warm but still liquid.
  • Meanwhile whisk the cream cheese and mascarpone together. Add double cream and keep whisking until the mixture is just holding its own shape. Finally, add the melted chocolate and whisk until just combined.
  • Spoon the mixture over the cooled and set biscuit base, then smooth the top. Return to the fridge to cool for at least 6 hrs until the topping is set. Finally, decorate with fruit.

My idea was to make a cheesecake taste like my favorite candy bar, which has chocolate, coconut and almonds. This cheesecake also works in bite size. 1-1/4 cups graham cracker crumbs
1/3 cup sweetened shredded coconut
1/3 cup finely chopped almonds
1/3 cup butter, melted
FILLING:
3 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
1 tablespoon coconut extract
3 large eggs, room temperature, lightly beaten
1 cup sweetened shredded coconut
GLAZE:
1 cup semisweet chocolate chips
3/4 cup heavy whipping cream
1-1/2 teaspoons vanilla extract
Optional: Toasted coconut flakes and chopped almonds

Steps:

  • Preheat oven to 350°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Top with toasted coconut and almonds if desired.

1 1/2 cups graham cracker crumbs
7 tablespoons butter or 7 tablespoons margarine, melted
1/4 cup chopped almonds
3 tablespoons sugar
2 tablespoons cocoa
1/2 teaspoon Amaretto
6 ounces white chocolate, chopped
3/4 cup whipping cream, divided
2 (8 ounce) packages cream cheese, softened
3/4 cup sugar, plus
2 tablespoons sugar
3 large eggs, separated
1 teaspoon vanilla extract
2 egg whites
1 1/2 cups sour cream
1/4 cup sugar
1 teaspoon vanilla extract

Steps:

  • Combine first 6 ingredients; stir well.
  • Firmly press crumb mixture on bottom and 2 inches up sides of a 9 inch springform pan.
  • Bake at 350 degrees for 8 minutes; cool in pan on a wire rack.
  • Combine white chocolate and 1/2 cup whipping cream in top of a double boiler; bring water to a boil.
  • Reduce heat to low; cook until white chocolate melts, stirring occasionally.
  • Let cool.
  • Beat cream chees at medium speed of an electric mixer until fluffy; gradually add 3/4 cup plus 2 tablespoons sugaar, beating well.
  • Add remaining 1/4 cup whipping cream, beating well.
  • Add egg yolks, one at a time, beating after each addition.
  • Stir in white chocolate mixture and 1 teaspoon vanilla.
  • Beat egg whites at high speed until stiff peaks form.
  • Fold into cream cheese mixture.
  • Pour batter into prepared crust.
  • Bake at 350 degrees for 45 minutes.
  • Remove from oven and let cool 15 minutes in pan on a wire rack.
  • Increase oven temperature to 475 degrees.
  • Combine sour cream, 1/4 cup sugar and 1 teaspoon vanilla; stir well.
  • Pour over cheesecake, leaving a 3/4 inch border on edge of cheesecake.
  • Return to oven and bank an additional 7 minutes.
  • Cool to room temperature in pan on a wire rack.
  • Chill at least 8 hours.
  • Garnish with chocolate curls if desired.

Steps:

  • In a bowl, combine the wafer crumbs, almonds and sugar; stir in the butter and mix well. Press into the bottom of a greased 10-in. springform pan; set aside. , In a large bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. Stir in extracts. Pour into crust. Place on a baking sheet., Bake at 350° for 50-55 minutes or until center is almost set. Remove from the oven; let stand for 5 minutes (leave oven on). Combine the sour cream, sugar and vanilla. Spoon around edge of cheesecake; carefully spread over filling. Bake 5 minutes longer. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight., Just before serving, sprinkle with almonds and remove sides of pan. Refrigerate leftovers.
