TURKEY AND CANNELLINI BEAN CHILI
For a leaner take on chili, use ground turkey in place of ground beef, and combine with cannellini beans and green chiles for extra flavor.

- In 4-quart Dutch oven, heat oil over medium-high heat. Cook turkey and cumin in oil 6 to 8 minutes, stirring occasionally, until turkey is no longer pink; drain. Remove turkey; set aside.
- Add onion and poblano chile to Dutch oven; cook over medium heat 5 minutes, stirring occasionally, until tender. Add garlic; cook 30 seconds.
- Mash 1 can of the beans with potato masher; add mashed beans and remaining can of beans to Dutch oven. Stir in turkey, broth, green chiles, salt and pepper. Reduce heat to medium-low; simmer uncovered 15 to 20 minutes or until slightly thickened. Garnish individual servings with sour cream and cilantro.

- Select saute or browning setting on a 6-qt. electric pressure cooker; adjust for medium heat. Cook bacon until crisp, 5-6 minutes; remove bacon and reserve. Brown chicken in bacon drippings in batches until lightly browned, 5-6 minutes. Return bacon to pan; top with corn and next 11 ingredients in the order listed. , Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 15 minutes. Let pressure release naturally for 10 minutes; quick-release any remaining pressure. Stir in shredded cheese until melted. If desired, serve with avocado and jalapeno.

- In a medium saucepan, heat oil over medium heat. Add onion, jalapeno, garlic, oregano, and cumin; season with salt and pepper. Cook, stirring occasionally, until vegetables begin to soften, 3 to 4 minutes.
- Add turkey and cook, breaking up with a spoon, until no longer pink, 2 to 3 minutes. Add beans and 3/4 cup water. Bring to a boil, while mashing some of the beans against side of pan to release starch. Reduce heat to medium and simmer until thickened, 5 to 10 minutes.
- Season with salt and pepper; garnish as desired.

Steps:
- Heat canola oil in a dutch oven or deep skillet over medium high heat.
- Add ground turkey and season with salt and pepper.
- Cook until browned, stirring to break up turkey.
- Add chopped onion and minced jalapeno and cook until soft, about 3 minutes.
- Stir in ground cumin and tomato sauce and cook for 2 more minutes.
- Add the cannellini beans, the broth and the water.
- Bring to a boil.
- Reduce heat and simmer until thicker, about 20 minutes.
- Ladle into bowls and place a dollop of light sour cream and a sprinkling of chopped cilantro on top of each serving.

This chili won a contest at my wife's job. She brought the recipe home for me to make and now It's our favorite chili recipe. The recipe is high yield, but you can divide each ingrediant by 2 to make a smaller portion.

- In a large pot, combine the onion, yellow pepper, garlic and ground turkey and sauté until turkey is well browned. Add the chile peppers, chicken and poultry seasoning, cumin, oregano, cilantro, cayenne pepper to taste, and white pepper to taste and continue to sauté.
- Add the chicken broth and 3 cans of beans to the pot. Take the fourth can of beans and puree them in a blender or food processor. Add this to the pot along with the alfredo sauce and cheese. Stir and continue to simmer allowing the cheese to melt thru.
