Store-bought Alfredo sauce speeds along this flavorful, meatless entree. I use dry pasta, but you can use refrigerated fettuccine to make this recipe even faster. -Jolanthe Erb, Harrisonburg, Virginia

1 package (12 ounces) fettuccine
1 cup sliced fresh mushrooms
1 can (14 ounces) water-packed artichoke hearts, drained and chopped
1-1/2 cups Alfredo sauce
1/4 cup crumbled blue cheese

Steps:

  • Cook fettuccine according to package directions., Meanwhile, place a lightly oiled large nonstick skillet over medium-high heat. Add mushrooms and artichoke hearts; cook and stir until mushrooms are tender. Stir in Alfredo sauce; bring to a boil over medium heat. Reduce heat; simmer, uncovered, 5 minutes, stirring occasionally., Drain fettuccine, reserving 1/3 cup pasta water. Add fettuccine to artichoke mixture; toss to combine, adding reserved pasta water if desired. Sprinkle with blue cheese.

I first made this as a sauce to drizzle over chicken roulade, but there's no reason it can't be used with pasta, or anything else. Measurements are approximations and should be adjusted according to individual taste.

1/2 lb blue cheese
1/2 cup unsalted butter
1 cup heavy cream, at room temperature
1 teaspoon pepper

Steps:

  • Melt the butter over medium low heat.
  • As butter is melting add crumbled bleu cheese, stirring constantly.
  • Once cheese is melted slowly stir in cream.
  • After ingredients are warm & fully combined, remove from heat and add to pasta.

1 tube (13.8 ounces) refrigerated pizza crust
4 thin slices deli ham
1-1/2 cups shredded cooked chicken
6 slices Swiss cheese
1 tablespoon butter, melted
Roasted garlic Alfredo sauce, optional

Steps:

  • Preheat oven to 400°. Unroll pizza dough onto a baking sheet. Layer with ham, chicken and cheese to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal and tuck ends under. Brush with melted butter. , Bake until crust is dark golden brown, 18-22 minutes. Let stand 5 minutes before slicing. If desired, serve with Alfredo sauce for dipping.

Easy to make, you won't be disappointed by this recipe. Make this any time you want a restaurant-quality meal at home. You can even add some grilled chicken to the dish.

4 oz uncooked fettuccine
3 Tbsp butter
1 c heavy whipping cream
1/2 c freshly grated Parmesan cheese
1/2 c freshly grated Romano cheese
2 egg yolks, lightly beaten
1/8 tsp salt
1/8 tsp pepper
1/4 - 1/2 tsp garlic powder (amount depends on your taste)
dash nutmeg

Steps:

  • 1. Cook fettuccine according to package directions. *Make sure to salt the pasta cooking water for flavor.
  • 2. Meanwhile, in a saucepan, melt butter over medium-low heat.
  • 3. Whisk in cream, cheeses, egg yolks, salt, pepper, and nutmeg.
  • 4. Cook and stir over medium-low heat until hot to the touch, but not boiling (thermometer will read 160 degrees).
  • 5. Drain fettuccine.
  • 6. Pour sauce over pasta and grate some Parmesan over the top.

8 slices part-skim mozzarella cheese
8 thin slices deli honey ham
8 turkey breast cutlets
2 cups panko bread crumbs
2 large eggs, lightly beaten
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup canola oil
1 jar (15 ounces) Alfredo sauce, warmed
8 bacon strips, cooked and crumbled
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350°. Place 1 slice mozzarella cheese and ham on each cutlet. Roll up each from a short side and secure with toothpicks., Place bread crumbs and eggs in separate shallow bowls. In another shallow bowl, combine flour, salt and pepper. Dip turkey in flour mixture, eggs, then bread crumbs., In a large skillet, brown turkey in oil in batches. Place in a greased 13x9-in. baking dish. Bake, uncovered, until turkey juices run clear, 20-25 minutes. Discard toothpicks., Spoon Alfredo sauce over turkey. Sprinkle with bacon and Parmesan cheese.
