Buffalo Chicken and Bean Chili image

This is chili with a buffalo chicken twist! So easy to make and SOOOO good - perfect for game watching or any night of the week!

1 lb lean ground chicken (or turkey)
1 medium onion (chopped)
1/2 cup chopped carrots
1/2 cup chopped celery
3 cloves garlic (chopped)
1/2 tablespoon chili powder
1/2 tablespoon ground cumin
1/2 tablespoon ground paprika
kosher salt and pepper to taste
1 15 oz can small white beans, rinsed and drained
1 13.6 oz container fat free refried pinto beans
3/4 cups Swanson's reduced sodium chicken broth
1/2 cup water
6 tablespoons Frank's hot sauce
reduced fat shredded cheddar
chopped scallions
reduced fat sour cream

Steps:

  • Heat a large deep nonstick skillet over medium-high heat.
  • Brown the ground chicken in the skillet and cook, breaking up the meat into small pieces as it cooks, about 8 to 10 minutes, or until cooked through, set aside.
  • Add the onion, carrot, celery, garlic, chili powder, cumin, paprika, a pinch of salt and pepper, and cook stirring until the vegetables soften, about 5 to 6 minutes.
  • Add white beans, refried beans, water and chicken broth, bring to a boil and simmer covered on medium-low about 10 minutes.
  • Stir in the hot sauce and add the chicken, cover and simmer until thickened, 25 to 30 minutes, stirring occasionally until the flavors blend.

This recipe was passed down from a friend, and now it is one of our favorites! It's great to make whenever there is left over chicken or turkey around! We pray for colder weather in California just so we can make this soup! You can substitute additional diced tomatoes for the tomatillos. If you would like the soup to be spicier, you can add some red chili flakes or salsa. Serve with these toppings for people to choose from: limes, cilantro, cheese, avocado, sour cream, and tortilla chips.

2 tablespoons vegetable oil
1 onion, chopped
2 cloves garlic, minced

2 cups chicken broth
2 cups cooked shredded chicken (I used rotisserie chicken)
2 (15 ounce) cans Great Northern beans (rinsed and drained)
2 cups mild salsa Verde
2 teaspoons ground cumin
1 avocado (diced)
2 Tablespoons fresh cilantro (chopped)

Steps:

  • Add chicken broth, cooked chicken, beans, salsa Verde and cumin into a large stock pot on the stove. Stir everything together.
  • Cook over medium high heat until it starts to boil, then reduce heat to low. Simmer for 5 minutes.
  • Ladle soup into bowls and garnish each bowl with chopped avocado and cilantro.

2 tablespoons olive oil
1 large onion, chopped
4 garlic cloves, minced
2 pounds ground chicken
1 teaspoon salt, plus more for seasoning
2 tablespoons ground cumin
1 tablespoon fennel seeds
1 tablespoon dried oregano
2 teaspoons chili powder
3 tablespoons flour
2 (15-ounce cans) cannellini or other white beans, rinsed and drained
1 bunch (about 1 pound) Swiss chard, stems removed, leaves chopped into 1-inch pieces
11/2 cups frozen corn, thawed
4 cups low-sodium chicken stock
1/4 teaspoon crushed red pepper flakes
Freshly ground black pepper for seasoning
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • In a large heavy-bottomed saucepan or Dutch oven, heat the oil over medium-high heat. Add the onion and cook until translucent, about 5 minutes. Add the garlic and cook for 30 seconds. Add the ground chicken, 1 teaspoon salt, cumin, fennel seeds, oregano, and chili powder. Cook, stirring frequently, until the chicken is cooked through, about 8 minutes. Stir the flour into the chicken mixture. Add the beans, Swiss chard, corn, and chicken stock. Bring the mixture to a simmer, scraping up the brown bits that cling to the bottom of the pan with a wooden spoon. Simmer for 55-60 minutes until the liquid has reduced by about half and the chili has thickened. Add the red pepper flakes and simmer for another 10 minutes. Season with salt and pepper, to taste.
  • Ladle the chili into serving bowls. Sprinkle with the Parmesan cheese and chopped parsley.

2 (15.5-oz) cans small Great Northern or navy beans, undrained
2 (4-oz) cans chopped green chile peppers, undrained
4 medium green onions, chopped
⅓ cup chopped fresh cilantro, plus more for topping
3 Tbsp reduced-sodium taco seasoning (from 1 packet)
1½ lb skinless, boneless chicken breast halves (about 3)
sour cream, sliced avocado, shredded pepper jack cheese, cilantro, (for garnish)

Steps:

  • Combine beans and their liquid, ¾ cup water, green chiles and their liquid, green onions, cilantro and taco seasoning in a slow cooker; mix well. Add chicken; cook on HIGH 5-6 hours or on LOW 8-10 hours. (To make in an Instant Pot or other electric pressure cooker, cook 20 minutes on high pressure with quick release.) Remove chicken from cooker. Shred with 2 forks; stir into chili. Serve garnished as desired. Or cool to room temperature and freeze up to 3 months.

2 small onions (chopped)
5 garlic cloves (chopped)
3 pounds 93% lean ground turkey
1 4.5 ounce can diced green chilies
1/2 teaspoon kosher salt
1/2 tablespoon cumin
1/2 tablespoon oregano
2 teaspoons chili powder (to your taste)
1/2 to 2 teaspoons crushed red pepper flakes (to your taste)
1 bay leaf
4 15.5 ounce cans of cannellini or navy beans, rinsed and drained
2 cups chicken broth
1/2 cup reduced-fat sour cream or Greek yogurt
Monterey Jack or Pepper Jack Cheese (shredded)
diced avocado
cilantro
sliced jalapeno
Greek yogurt or sour cream
chopped scallions

Steps:

  • Heat a large heavy pot or Dutch oven over medium flame. When hot, spray with oil.
  • Add onions and garlic, saute until soft, about 4 to 5 minutes.
  • Add the meat and cook, breaking it up until white and cooked through, about 5 minutes.
  • Add diced green chilies, salt, cumin, oregano, chili powder, red pepper flakes and cook for 2 minutes.
  • Pure 1 can of beans in the blender with 1 cup of the broth. Add to the pot with the remaining beans, broth and bay leaf and bring to a boil.
  • Cover and reduce to a simmer, about 30 to 35 minutes mixing occasionally, until thickened and the flavors meld.
  • Stir in sour cream and cook 4 to 5 minutes. Adjust seasoning and salt to taste.
  • To serve, topped with your favorite toppings.
  • Slow Cooker directions: To make in the slow cooker, follow steps 1 to 5, reducing the broth to 1 1/2 cups and transfer to the slow cooker for 8 hours on low.
  • Instant Pot directions: To make in the Instant Pot, you will need an 8 quart IP or halve the recipe. Reduce the broth to 1 1/2 cups, cook high pressure 25 minutes.

3/4 pound boneless skinless chicken breasts, cut into 1-1/4-inch pieces
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil, divided
1 medium onion, chopped
1 jalapeno pepper, seeded and chopped

2 teaspoons dried oregano
1 teaspoon ground cumin
2 cans (15 ounces each) cannellini beans, rinsed and drained, divided

Steps:
