SIMPLE WHOLE WHEAT BREAD

Steps:
- In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.
- Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky - just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.
- Punch down, and divide into 3 loaves. Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.
- Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely.

I'm 12 years old and make this bread with my mother, who got the recipe from her mother. I usually make the dough, and my mom bakes it.

- In a large bowl, dissolve yeast in 3/4 cup warm water. Add the oil, sugar, molasses, salt and remaining water. Combine flours; add 4-5 cups flour to mixture. Beat until smooth. Add enough remaining flour to form a firm dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a loaf. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until doubled, about 30 minutes. , Bake at 350° until golden brown, 40-45 minutes. Remove from pans to cool on wire racks.

Steps:
- Scald milk and cool to lukewarm.
- Add salt and shortening.
- Mix honey and yeast in mixing bowl; let stand until yeast is dissolved.
- Add milk and one half the flour.
- Beat thoroughly.
- Gradually add enough flour to make a soft dough.
- Turn out on floured board and knead until it becomes smooth and elastic.
- This requires about 10 minutes.
- Place in slightly greased bowl and let rise until double in bulk.
- Punch down lightly and let rise again.
- Form into loaves.
- Place in greased pans.
- Allow to rise until double in bulk.
- If baked in individual loaves (one pound), bake 40 minutes at 375°.

WHOLE WHEAT BREAD
This recipe makes 2-1 lb loaves of fresh whole wheat bread. This is better than any store bought bread. Steps:
- 1. In a 1 1/2 - 2 lb bread machine layer all the above ingredients in order listed.
- 2. Set the bread machine to dough cycle. Scrape down the sides of bread machine as needed.
- 3. When you touch the dough after it has kneaded for about 10 minutes it should feel slightly tacky but not to where the dough sticks to your fingers. If it feels too tacky and the dough sticks to your fingers, add 1-2 tbsp of flour, 1 tbsp at a time If it doesn't feel tacky enough add 1-2 tbsp of water, 1 tbsp at a time. If unsure you can leave it as is and it will still turn out. Bread making is learnind as you go. Trial and error. If
- 4. Grease 2 loaf pans.
- 5. When the dough cycle is complete remove the dough and divide in half.
- 6. Shape dough to fit into greased loaf pans, tucking extra dough under to make for a nice loaf.
- 7. Place in oven and allow to rise for about 45 minutes or until doubled.
- 8. Bake at 350' for 35 minutes or until nicely golden.

Steps:
- Dissolve yeast in warm water. Add honey, and stir well. Mix in whole wheat flour, salt, and vegetable oil. Work all-purpose flour in gradually. Turn dough out onto a lightly floured surface, and knead for at least 10 to 15 minutes. When dough is smooth and elastic, place it in a well oiled bowl. Turn it several times in the bowl to coat the surface of the dough, and cover with a damp cloth. Let rise in a warm place until doubled in bulk, about 45 minutes.
- Punch down the dough. Shape into two loaves, and place into two well greased 9 x 5 inch loaf pans. Allow to rise until dough is 1 to 1 1/2 inches above pans.
- Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes.

This is my "when I'm home all day" recipe. I use the dough cycle and bake it in 2 loaf pans but you can just use the whole wheat cycle and bake it in the machine as well. I love this bread.

Steps:
- Add ingredients in the order given to bread machine.
- Set on dough cycle if baking in oven, otherwise set on whole wheat/2 lb.
- After dough cycle is done remove dough from pan and flour a work surface lightly. Flour the top surface of the dough.
- Punch down the dough, rolling it into a length equal to 2 greased loaf pans. This might take some work, the dough holds a lot of air. Squeeze and roll the air bubbles out.
- When you have a roll double the length of of a pan cut it in half and place in the greased pans. Cover with a tea towel and set aside in a warm place to rise until doubled in size.
- Rising usually takes about 45 minutes.
- Preheat oven to 350 degrees.
- Bake loaves for 20 to 25 minutes, until browned. Turn out onto a rack and cool.

For a soft, flavorful crust, rub the top of the warm bread with a stick of butter.
