1/2 cup peanut oil
4 carrots, cut in 1/2-finger size
4 garlic cloves, chopped
2 large potatoes, cubed
2 large sweet potatoes, cubed
1 large onion, diced
2 tablespoons tomato paste
1 tablespoon paprika
1/2 tablespoon cayenne pepper
1/2 tablespoon cumin
2 fresh thyme sprigs
1 (16 ounce) can chickpeas, drained and rinsed
fine salt & freshly ground black pepper
4 cups stock, of your choice or 4 cups water
3/4 cup creamy peanut butter
basmati rice, quinoa or couscous

Steps:

  • In a large pot over medium heat, heat the peanut oil. Add the carrots, garlic, potatoes, sweet potatoes and onions and mix well. Stir in the tomato paste, paprika, cayenne, cumin, thyme sprigs, chickpeas, salt and black pepper and mix well. Add the stock, making sure the level of the stock is above the veggies in the pot. Add additional salt and pepper to taste.
  • Cover and bring to boil. Reduce the heat and simmer until the veggies are tender, 20 to 25 minutes. Turn off the heat but leave the pot on the stove. Stir in the creamy peanut butter, mix well and let sit for 5 minutes before serving.
  • Serve with basmati rice, quinoa, couscous or fufu.

  • Add meat, peanut butter and tomato paste (and bouillon if using water instead of stock) and reduce to a slow boil (med-high heat).
  • Chop onion and place in a mortar with the garlic and crush with a pestle until the juices are released and both the onion and garlic are crushed and softened. Add to sauce. *If you don’t have a mortar and pestle you can use a food processor or simply chop onion finely and crush garlic with a press or chop finely and add to sauce.
  • Peel and roughly chop veggies into large chunks and add to the sauce. Add the whole habanero peppers and stir. Allow veggies to cook until tender (about 15 minutes). Cook rice while waiting for sauce to cook.

  • Blend tomatoes, and 1/2 onion, garlic, and parsley. Add half of the onions to the pan , sauce for about a minute and pour the mixture in the saucepan; add paprika, white pepper and sauté for about 7-10minutes. Stirring frequently to prevent burns, add stock as needed.
  • Then add potatoes, Carrots, peanut butter paste, scotch bonnet pepper and about 3 cups broth. Continue cooking until potatoes tender- about 10 or more depending on vegetables. Throw in the browned beef, Adjust the soup thickness with water if necessary.
