We love Italian food, and these slimming friendly Baked Spicy Meatballs are no exception - a great meal whether you're counting Points or calories!

24 low fat meatballs (we used shop bought low fat ones )
2 cloves garlic (finely crushed)
500 ml tomato passata
1 tbs dried oregano
140 grams light mozzarella
60 grams fresh parmesan (finely grated)
2 red chilli (finely chopped)
low calorie cooking spray

Steps:

  • Pre heat the oven to 160 degrees. Spray a large frying pan with low calorie cooking spray and sear the meatballs until the outsides are brown.
  • Add the garlic and chilli and cook for 2 minutes, being careful not to burn it. Stir in the tomato passata and herbs and put the meatballs and sauce into an ovenproof dish.
  • Top with chunks of the mozzarella and sprinkle over the parmesan. Bake for 35 minutes until the cheese is golden. Serve with spaghetti and green beans.

1 1/2 lbs lean ground turkey
1 cup uncooked quick oats
2 medium egg whites
1 large onion, finely chopped
1 medium garlic clove, chopped
1/4 cup fresh parsley, chopped
1 teaspoon dried oregano
1 1/2 teaspoons beef bouillon granules
1/2 teaspoon black pepper
1 1/4 cups barbecue sauce

Steps:

  • Preheat oven to 350.
  • Combine all ingredinets, except BBQ sauce, in a medium sized bowl.
  • Coat a baking shet with cooking spray.
  • Shape meatball imxture into 60 1" balls and place on baking sheet.
  • Bake at 350 until cooked through, about 25 minutes.
  • Transfer meatballs into a chafing dish or crockpot to keep warm.
  • Meanwhile heat BBQ sauce on stovetop or in microwave until hot.
  • Pour sauce over cooked meatballs, toss gently and serve.
  • Points figured for 2 meatballs per serving.

SPAGHETTI & SPICY MEATBALLS



Spaghetti & Spicy Meatballs image

As spicy or as mild as you like with the best tasting sauce!

Number Of Ingredients 13

500g Lean Minced Beef
1 egg
1 slice of white bread (crusts removed)
2 tbsp Milk
1 tbsp parsley (fresh chopped or dried)
1 tbs olive oil
500ml Passatta
300ml vegetable stock (400ml if you like alot of sauce)
1 tbsp parsley (fresh chopped or dried)
1 tsp white sugar
Salt & Pepper
Spaghetti (or your choice of pasta)
Grated Parmesan (optional)

Steps:

  • Firstly to make the meatballs.
  • Tear the sliced bread into small pieces, put in a bowl and add the milk until the bread soaked it all.
  • Then squeeze as much milk as possible out of the bread and add it to a medium sized mixing bowl.
  • Add the mince, parsley, chilli flakes, egg and a little salt & pepper to the mixing bowl and thouroughly mix and nead until smooth and even.
  • Get out a plate or tray and start to tear small tabletennis sized amounts from the mixture. Roll in the palms of your hands until smooth and place on the tray.
  • Once all oof the mixture is used, put the tray in the fridge and leave for about 20 mins
  • For the sauce, add the passatta, vegetable stock, parsley, chilli, sugar, salt and pepper and stir. Simmer on a low heat until later.
  • After about 20 mins or once the sauce is made, get the meatballs from the fridge, add a little light olive oil (1-2 tbsp) to a frying pan and cook in batches of about 5 or 6 until browned but not completley cooked through.
  • Once all of the meatballs are browned, Add all of the meatballs back to the pan for a couple of minutes and then add to your sauce and simmer for about 15 minutes.
  • Now make your spaghetti, once this is ready serve with your meatballs and add a little parmesan and parsley to garnish.
