The holiday season calls for toasts, which, in turn, call for bubbly. Sure, you could pour a glass of sparkling Prosecco, but turning it into a celebratory punch rich with fruity, tart pomegranate juice takes things in an even livelier direction.

Yield Makes about 10 cups

Number Of Ingredients 6

1 qt chilled pomegranate juice
2 Tbsp fresh lime juice
1/4 cup superfine granulated sugar
2 (750ml) bottles chilled Prosecco
2 clementines, thinly sliced crosswise
1 lime, thinly sliced crosswise

Steps:

  • Stir together juices and sugar in a large punch bowl until sugar has dissolved. Stir in Prosecco and serve garnished with fruit.
  • Do Ahead
  • Punch, without Prosecco, can be made 1 day ahead and chilled.

Number Of Ingredients 5

1 bottle (32 ounces) cranberry juice
5 cans (6 ounces each) unsweetened pineapple juice
1/3 cup Red Hots
1 cinnamon stick (3-1/2 inches)
Optional: Sugared cranberries or additional cinnamon sticks

Steps:

  • In a 3-qt. slow cooker, combine juices, Red Hots and cinnamon stick. Cover and cook on low for 2-4 hours or until heated through and candies are dissolved., Discard cinnamon stick before serving. Serve with sugared cranberries and additional cinnamon sticks if desired.

Number Of Ingredients 9

4 pomegranates
Juice of 3 limes
1 tablespoon brown sugar
7 ounces aged rum
10 pieces star anise
2 cinnamon sticks
1 teaspoon mulling spices, or any combination of whole allspice, cloves, cardamom pods and dried or fresh orange peel
4 dried figs, sliced
1 bottle fruity red wine

Steps:

  • Roll the pomegranates on a countertop to soften. Halve them crosswise and hold them, cut side down, over a medium saucepan, hitting the backsides until all the seeds have been released. Add the lime juice, brown sugar, rum, 10 pieces of star anise, cinnamon, mulling spices and 3 of the sliced figs. Bring to a boil and simmer 7 minutes. Add the wine and let it rest, covered, 10 minutes. Serve warm, strained or not, in small mugs garnished with a fig slice and a piece of star anise.

4 cups pomegranate seeds
1/2 cup pomegranate juice
2 1/2 cups water
1 1/2 cups pomegranate juice
1 cup vodka
3/4 cup orange-flavored liqueur, such as Cointreau
1/3 cup fresh lime juice
1 bottle Champagne
Rose petals, for garnish

Steps:

  • For the ice mold:
  • Add the pomegranate seeds, pomegranate juice and water to a silicone Bundt pan. Freeze until solid, 3 to 4 hours or overnight. When ready to serve, run the ring mold under a little hot water, remove from the pan and place in a large punch bowl.
  • For the pomegranate lime punch:
  • Add the pomegranate juice, vodka, orange-flavored liqueur and lime juice to a large punch bowl and stir to combine. Add the ring mold and top with the Champagne just before serving. Garnish with the rose petals.
