Roasted Eggplant Lentil Salad (Aubergine Salad) image

Lentils and roasted eggplant (aubergine) is such a great combination - especially when you infuse the lentils with flavour by cooking them in a seasoned broth, and you try my method of roasting eggplant so they stay plump and juicy inside with great caramelisation on the outside! 1 cup dried green or brown lentils ((or French/puy) (Note 1 for canned))
1 cup vegetable or chicken broth ((or water + 1 bouillon cube, crumbled))
1 1/2 cups water
1 large garlic clove (, smashed, skin removed (Note 2))
Lemon peel ((about 1.5 x 5 cm / 3/4 x 2"))
1 bay leaf (, dry or fresh)
2 sprigs thyme (, or 1/2 tsp dried thyme)
1 rib celery (, broken into 3 or 4 pieces (or just a handful of celery leaves, can skip))
700g / 1.4 lb eggplant / aubergine ((2 medium))
2 1/2 tbsp olive oil
1/4 tsp EACH salt and pepper
2 tbsp lemon juice ((or cider vinegar, white or red wine vinegar))
4 tbsp extra virgin olive oil
1 tsp Dijon mustard
1 garlic clove (, minced using garlic press)
1 tsp thyme leaves (, fresh (or 1/2 ts dried - can omit, or other herbs, Note 3))
1 tsp sugar (, optional)
1/2 tsp EACH salt + black pepper

1 pound long Chinese eggplants
2 teaspoons Italian seasoning, divided
salt to taste
2 tablespoons olive oil, divided
1 medium red bell pepper
2 teaspoons white sugar
½ tablespoon balsamic vinegar
1 large clove garlic, crushed
2 tablespoons cream cheese, softened
1 tablespoon chopped cilantro

Steps:

  • Trim eggplants and cut in half if very long. Cut lengthwise into 1/4-inch slices. Sprinkle a little Italian seasoning and salt on both sides of each slice.
  • Preheat a griddle or heavy pan over high heat. Drizzle 1 tablespoon olive oil over eggplant slices and cook until slightly charred, about 30 seconds per side.
  • Core bell pepper and cut into thin slices. Season with salt. Use the same griddle or pan to cook until slightly charred, about 30 seconds per side.
  • Prepare dressing by mixing remaining olive oil, sugar, balsamic vinegar, and garlic in a small bowl. Stir in remaining Italian seasoning.
  • Layer 1/2 of the eggplant slices on a plate. Dot with cream cheese. Cover with bell peppers and remaining cream cheese. Top with remaining eggplant. Drizzle dressing over the salad. Garnish with cilantro. Serve warm, mixing right before serving.

I ran across this recipe in the Chicago Tribune paper. I was looking for a different type of salad to serve for my Craft Night get-together. We all love eggplant and salads, since most of us are on diets. It turned out wonderful, very tasty salad. I hope you enjoy it.

4 Japanese eggplants
3 tablespoons tahini
3 tablespoons reduced sodium soy sauce
1 tablespoon seasoned rice vinegar
1 1/2 teaspoons seasoned rice vinegar
1 tablespoon mirin (Rice Wine)
1 1/2 teaspoons mirin (Rice Wine)
red leaf lettuce leaf
2 green onions, thinly sliced
1 tablespoon of fresh mint, chopped
1 tablespoon basil

Steps:

  • Remove eggplant stems.
  • Cut eggplants lengthwise into 1/2" thick slices.
  • Cut each slice into 1/4" wide strips.
  • Transfer to a shallow microwave-safe baking dish;.
  • Add 1 tbls water. Cover with plastic wrap vented at one corner.
  • Cook in microwave on high (100% power) stirring once or twice until tender, about 3 minutes.
  • Let stand covered a few minutes.
  • Transfer to a colander; press out the excess water with a flat spatula.
  • For the dressing, mix tahini, soy sauce, rice vinegar and mirin in a large bowl until smooth; add the warm eggplant.
  • Toss gently to coat well.
  • Arrange lettuce leaves on individual serving plates; top each with a portion of eggplant mixture.
  • Sprinkle with onions and herbs.
  • Note: Japanese eggplants, tahini, seasoned rice vinegar and mirin are available fresh in Japanese markets.

Scant teaspoon cumin seeds
1 pound firm eggplant
1 small red onion, chopped (1/4 cup)
2 teaspoons red-wine vinegar
1 teaspoon sugar
2 tablespoons extra-virgin olive oil, divided
2 tablespoons chopped flat-leaf parsley, divided
Equipment:
an electric coffee/spice grinder
Accompaniment:
toasted pita

Steps:

  • Toast cumin in a dry 10-inch heavy skillet (preferably cast-iron) over medium heat, stirring occasionally, until fragrant and dark brown (be careful not to burn). Cool, then grind to a powder in grinder.
  • Pan-roast whole eggplant in skillet over medium heat, turning frequently with tongs, until blackened and tender, 20 to 30 minutes.
  • Transfer to a cutting board and cut off and discard stem. Scrape flesh from skin and coarsely chop. Toss with onion, vinegar, sugar, 1 tablespoon oil, 1 tablespoon parsley, 1/2 teaspoon toasted cumin, and 1/2 teaspoon salt.
  • Serve in a shallow bowl drizzled with remaining tablespoon oil and sprinkled with remaining tablespoon parsley and toasted cumin.

This was my first time boiling eggplant and it turned out very good! Boiling it with the garlic makes it extra special...we were eating it plain as it was cooling. I found this recipe to be very simple and tasty. We ate it with white rice.

1 large eggplant, unpeeled and cut into 1-inch cubes
3 garlic cloves, minced
5 cups water
salt, to taste
1 teaspoon ground cumin
1 teaspoon paprika (I used hot Hungarian)
1 -2 tablespoon fresh lemon juice
2 teaspoons olive oil

Steps:

  • Place eggplant, garlic, water and salt in a pot and bring to a boil.
  • Cover and cook over medium heat for 8-10 minutes, or until eggplant cubes are cooked but still firm.
  • Drain in a strainer and allow to cool.
  • Place cooled eggplant in a bowl and toss gently with the remaining ingredients.
  • Very nice served at room temperature.

1 large eggplant
2 -3 ripe-but-firm ripe avocados
2 garlic cloves, chopped finely
1/2 red onion, chopped finely
3 lemons, juice of
4 tablespoons extra virgin olive oil
dulse flakes
pepper
2 teaspoons honey (optional)

Steps:

  • Pare and dice eggplant.
  • Place in a deep bowl and immediately cover with cold water and juice of 1 lemon.
  • Whisk together oil, garlic, dulse flakes, pepper and juice of 1 lemon.
  • Set aside.
  • Peel and dice avocados.
  • Place in bowl and toss immediately with juice of 1 lemon.
  • Drain eggplant and combine with avocados.
  • Add chopped onion.
  • Whisk dressing again and add to mixture.
  • Toss gently.
  • Set aside for about 15 minutes.
  • Chill if desired.
  • Before serving, toss gently again and sprinkle with honey.

1 large eggplant, peeled (aubergine)
2 teaspoons sea salt
1 tablespoon finely sliced spring onion (scallions)
1 tablespoon roasted sesame
1 pinch white pepper
1/4 cup malt vinegar
2 tablespoons shaoxing wine or 2 tablespoons dry sherry
3 garlic cloves, finely diced
1 tablespoon brown sugar
1 tablespoon light soy sauce
1/2 teaspoon sesame oil

Steps:

  • Cut eggplant lengthwise into 1.5 cm (3/4 in) slices, then cut each slice into 1.5 cm (3/4 in) strips.
  • Place eggplant in a colander and rinse well under cold running water. Drain and pat dry with kitchen paper.
  • Arrange eggplant in one layer on a heatproof plate that will fit inside a steamer basket.
  • Place plate inside steamer and position over a deep saucepan or wok of boiling water and steam, covered, for 6 minutes or until eggplant is just tender when pierced with a knife.
  • Carefully remove plate from steamer and allow eggplant to cool slightly.
  • To serve, arrange eggplant on a platter and spoon over reserved dressing.
  • Sprinkle with spring onions, roasted sesame and pepper.
  • Sprinkle eggplant with salt on both sides and lay on a tray in one layer. Set aside for 10 minutes.
  • Dressing.
  • Meanwhile, To make the dressing, place all ingredients in a small heavy-based saucepan and bring to the boil.
  • Reduce heat and simmer, uncovered, for 2 minutes or until slightly reduced, then set aside.

EGGPLANT (AUBERGINE) SALAD/CAVIAR

This is a very easy and healthy addition to any meal. Makes a great side dish or as a dip. Also known as Baklazhanovaya Ikra in Russian. You will need a larger non-stick skillet (at least 12 inches wide and 3 inches tall). Also two hand-fulls of cherry tomatoes can be substituted for the two medium tomatoes.

1 large eggplant
2 medium tomatoes (on the vine or hothouse)
1 green bell pepper
1 large yellow onion
1 (14 1/2 ounce) can diced tomatoes (unsalted, with basil, garlic, and oregano)
1/4 teaspoon red pepper flakes
1 1/2 teaspoons salt
5 fresh garlic cloves

Steps:

  • Chop and caramelize the onions on a skillet (with a little bit of olive oil) over medium heat until they are golden but not burnt.
  • While the onions are cooking, without peeling the eggplant, cut it into about 1/2 inch cubes. And place in a large bowl.
  • Chop the bell pepper and add to bowl.
  • Cut the tomatoes and add to bowl.
  • Take the cooked onions, finely chop them, and add to bowl.
  • Add the red pepper flakes, salt, and finely chopped garlic to the bowl.
  • Mix all the ingredients in the bowl and transfer to a 12 inch non-stick skillet.
  • Pour the contents of the tomato can on top of what's in the skillet and mix it a little bit.
  • Cover with a lid and cook on low/medium heat. Keep mixing the contents every 10-15 minutes to cook things evenly and prevent burning. If you notice sticking to pan, reduce heat.
  • The dish is ready when most of the liquid has evaporated and all the ingredients are soft and fully cooked. Approximately 45 minutes.
  • Place in fridge to cool the salad since it's best served chilled.

This colourful Lebanese salad of roasted aubergine, peppers, pomegranate and a sweet and spicy dressing makes a mouth-watering treat for two

1 medium aubergine
1-2 spring onions , chopped
4 cherry tomatoes , cut into quarters
½ small red pepper , deseeded and finely diced
½ small green pepper , deseeded and finely diced
1 tbsp mint , chopped
seeds from 0.5 pomegranate , to serve
juice 0.5 lemon
½ small red chilli (deseeded if you don't like it too hot), finely chopped (optional)
½ tbsp pomegranate molasses
1 small garlic clove , crushed
1 ½ tbsp extra virgin olive oil , plus extra to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a baking tray with foil. Prick the aubergine with a sharp knife to prevent it from exploding, then put it on the prepared tray and roast for 45-55 mins until the skin is wrinkled and it is very soft.
  • While the aubergine is roasting, make the dressing. Mix together the lemon juice, chilli, if using, the pomegranate molasses, garlic and olive oil in a bowl. Season and set aside.
  • When the aubergine is cool enough to handle, peel and place it in a colander. Press down on it very gently over a bowl to allow the juices to run out, then transfer the aubergine to a serving plate and cut into large pieces. Dress quickly with half of the dressing, then add the spring onions, cherry tomatoes and peppers to the plate. Pour over the remaining dressing and mix with your hands or a spoon to coat. Serve scattered with mint, pomegranate seeds and more olive oil drizzled over.

1 tablespoon olive oil
1 tablespoon lemon juice
1 garlic clove, minced
1 cup plain yogurt

Steps:

  • With a fork, pierce skin of eggplant. Bake eggplant in a rimmed pan in a 400 degrees oven for 1 hour or until very soft; cool.
