Original Pralines made with Pecans are traditional from the South. I grabbed a bag of nuts one day and did this recipe with Walnuts. Wow, turned out a little lighter and less sweet taste. Great! Number Of Ingredients 8

1 cup brown sugar
1 cup white sugar
1 cup walnuts
1/2 cup evaporated milk
2 tablespoons butter
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon honey

Steps:

  • Combine sugars and milk in saucepan over medium heat. Stirring, with a wood spoon, do not scorch milk.
  • Spray baking non-stick spray on cookie sheet or aluminium foil laid on top of thick towels.
  • Once mixture boils, stir in butter, walnuts, spices and honey. Continue to heat, without stirring, until between 235 to 240 degrees F. (113 to 116 degrees C) Recommended you purchase a digital thermometer-great investment!
  • Once temperature has been reached, remove from heat and let cool 5 minutes.
  • Beat until thickened until liquid poured from wooden spoon starts to pour slowly.
  • Immediately drop by one spoonfull onto sprayed cookie sheet or foil.
  • Let cool and freeze in small bags of 3 to 4 per bag. THESE ARE SOO GOOD YOU WILL NOT BE ABLE TO EAT JUST ONE!

1 pound red or green grapes
1/4 cup dark brown sugar
4 teaspoons butter
2 teaspoons light corn syrup
2 ounces chopped walnuts
1 small wheel of Brie (8 ounces)

Steps:

  • Wash and divide grapes into clusters. Make praline: Place sugar, butter, corn syrup, and 1 teaspoon water in a small saucepan. Simmer for 3 minutes. Stir in walnuts. Cut Brie into wedges; arrange on round serving tray. Spoon 1 teaspoon praline mixture over each wedge. Garnish with grapes.

Great combination of flavors. (The firm rind of Brie or Camembert is edible, so scoop it up aloing with the warm, melted cheese and chopped pecans).

1 (13 -15 ounce) brie round or 1 (13 -15 ounce) camembert cheese
1/2 cup orange marmalade
2 tablespoons brown sugar
1/3 cup chopped pecans
toasted baguette, slices (or both) or assorted plain cracker (or both)

Steps:

  • Preheat oven to 350.
  • Place the round of cheese in a shallow oven proof serving dish or pie plate.
  • In a small bowl stir together orange marmalade and brown sugar.
  • Spread over top of cheese.
  • Sprinkle with pecans.
  • Bake about 15 minutes for smaller round (about 20 minutes for larger round) or until cheese is slightly softened and topping is bubbly.
  • Serve with baguette slices and/or crackers.
