2 pounds (2 bags) frozen meatballs*
2 1/4 cup apricot preserves
12 ounces (1 bottle) chili sauce
hot chili flakes, optional

Steps:

  • Spray slow cooker with cooking spray; turn to low.
  • In small bowl, mix apricot preserves and chili sauce until well blended.
  • Pour meatballs into slow cooker.
  • Pour sauce over meatballs; stir until well coated.
  • Cover; cook on low for 4 hours.
  • Keep warm in slow cooker.

Found in the Cooking Pleasures magazine. I am always on the look out for vegetarian foods since my daughter started eating no meat. These actually look good. I am posting here for her. I have not tried this recipe. But I am planning this as a meal when she comes home for a visit.

3/4 cup apricot preserves
1/2 cup apple cider vinegar (or lemon juice)
1/2 cup ketchup
1/4 cup vegetable oil
2 tablespoons brown sugar, packed
2 tablespoons onions, grated
1/2 teaspoon salt
1/2 teaspoon oregano, fresh finely chopped
1 dash hot pepper sauce (like tobasco)
4 cups rice, cooked (white or brown)
4 eggs
1 1/4 cups soda crackers, crushed about 36 crackers
3/4 cup cheddar cheese, shredded
3/4 cup walnuts, ground
1 small onion, finely chopped
2 garlic cloves, minced
3 tablespoons parsley, fresh minced
1 1/2 teaspoons sage, ground
1/2 teaspoon salt

Steps:

  • Heat oven to 350 degrees.
  • Bring all sauce ingredients to a boil in a medium sauce pan. Cool.
  • Lightly spray a 13x9 inch glass baking dish with cooking spray.
  • Gently combine all meatball ingredients by hand in a large bowl.
  • Shape into 24 (1 1/2 inch) meatballs and place in prepared baking dish.
  • Pour sauce over meatballs.
  • Bake 30 minutes or until meatballs are firm and sauce is bubbling all over and slightly thickened.
  • If you want to serve over rice, you will need to double the sauce ingredients.

These are so yummy! And vegan too. Got this from Cooking Entrees with the Micheff Sisters cookbook. Enjoy! I enjoy with brown rice.

Number Of Ingredients 17

4 tablespoons water
1 medium onion
2 tablespoons fresh parsley, minced
2 teaspoons chicken style seasoning (Chicken Style Seasoning)
2 garlic cloves, finely minced
1 1/2 cups crushed saltine crackers (I used whole wheat Ritz crackers)
1 cup finely chopped walnuts
1 cup oats
1 (12 ounce) package extra firm tofu
1 1/2 cups apricot jam
1 cup ketchup
1/2 cup lemon juice
4 tablespoons raw sugar (or brown sugar)
4 tablespoons finely minced onions (I used green onion)
1 tablespoon olive oil (or canola or veg. oil)
1 teaspoon salt
1/2 teaspoon dried oregano

Steps:

  • In a food processor, puree the water and onion until smooth. Pour into a large mixing bowl. Add remaining ingredients except apricot sauce. Mix until mixture holds together.
  • Coat your handxds with nonstick cooking spray. Shape the mixture into 1 inch balls. Place the balls on a baking sheet and bake for 30 minutes at 375*F. Remove from the oven and place in a medium baking dish. Pour apricot sauce over the meatballs and bake an additional 30 minutes. Serve hot!
  • Apricot Sauce:.
  • In a small pan, combine all the sauce ingredients. Bring to a boil.
  • These can be made ahead of time and frozen. Pour the sauce on them when you are ready to bake and serve. You can use the meatballs with spaghetti and tomato sauce too. Try making the balls a little smaller for an appetizer. For a cripier texture, instead of baking them, fry them in a little oil until crispy and golden. They are good this way without the sauce.

1 egg
1 cup soft bread crumbs
1/4 cup chopped onion
1 teaspoon salt
1 pound ground beef
1/2 cup apricot preserves
1/4 cup barbecue sauce

Steps:

  • In a bowl, combine the first four ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. In a skillet, brown meatballs in several batches; drain. Transfer to a greased 2-qt. baking dish. Combine preserves and barbecue sauce; pour over meatballs. Cover and bake at 350° for 30 minutes or until the meat is no longer pink.

1 can (5 ounces) evaporated milk
1 cup quick-cooking oats
1/2 cup finely chopped onion

1/4 teaspoon garlic powder
1/4 teaspoon pepper
1-1/2 pounds ground beef
SAUCE:
1 cup ketchup
3/4 cup packed brown sugar
1/4 cup chopped onion
1/2 teaspoon Liquid Smoke, optional
1/4 teaspoon garlic powder

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 350° for 18-20 minutes or until meat is no longer pink; drain. , Meanwhile, combine the sauce ingredients in a saucepan. Bring to a boil. Reduce heat and simmer for 2 minutes, stirring frequently. Pour over meatballs. Bake 10-12 minutes longer.

3/4 cup apricot spreadable fruit
1/2 cup ketchup
1/4 cup lemon juice
2 tablespoons brown sugar
2 tablespoons finely chopped onion
1 tablespoon canola oil
1/2 teaspoon salt
1/2 teaspoon dried oregano

Steps:

  • In a large bowl, combine the first 7 ingredients. Stir in the crackers, walnuts and cheese. Coat hands with cooking spray; shape mixture into 1-in. balls. Place in a 13x9-in. baking dish coated with cooking spray., In a small saucepan, combine sauce ingredients. Bring to a boil. Pour over walnut balls. Bake, uncovered, at 350° for 25 minutes or until a thermometer reads 160°.

  • Preheat oven to 350°F and line 2 baking sheets with parchment paper. Combine all meatball ingredients with your hands until very well combined. Roll meatballs into roughly 1 tbsp sized balls (it helps to oil or wet your hands when the mixture is sticking).
  • Line meatballs up on the baking sheets and bake for 18-20 minutes (you can bake both trays at the same time– place them parallel on the middle rack).
  • While the meatballs are baking, make the sauce. In a small saucepan, heat the bbq sauce and apricot spread over medium low heat. Continuously stir to until the apricot spread melts and a smooth sauce forms. Allow sauce to come to a boil for 1 minute, then turn off heat.
  • When meatballs are done baking, toss in a large pot with the sauce until meatballs are well coated. Allow to simmer stovetop for 10-15 minutes. Serve. *If making ahead of time, gently reheat on the stove until sauce is melted and meatballs are heated through.
