BUTTERMILK NUT BREAD
Brown sugar and buttermilk give pleasing flavor to this no-fuss quick bread from Sue Ross of Casa Grande, Arizona. Nuts provide the tasty crunch.

- In a bowl, beat the egg. Gradually beat in brown sugar and shortening. Combine flour, baking powder, baking soda and salt; add to egg mixture alternately with buttermilk. Beat just until moistened. Stir in nuts. Pour into a greased 9x5-in. loaf pan. Bake at 350° for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack.

- Preheat oven to 350 degrees F.
- In a large bowl cream together the sugar and the butter; add eggs one at a time, beating after each addition.
- Beat in mashed bananas and vanilla and continue beating until mixture is smooth.
- In a large measuring cup stir baking soda into the buttermilk and add it to the banana mixture along with the flour and chopped nuts.
- Stir the batter until it is just combined.
- Pour batter into a greased and floured 9x5 inch loaf pan and bake for one hour or until tooth pick inserted in the center comes out clean.
- Transfer the bread to a rack and let it cool in the pan for 10 minutes.
- Turn it out onto a rack and let it cool completely.

- Coarsely chop 1/2 cup walnuts. Reserve remaining walnut halves.
- Preheat oven to 350°F
- Lightly coat a 5-by-9-inch loaf pan with non-stick cooking spray.
- In a large bowl, with mixer on medium-high speed, beat to blend egg, buttermilk, and butter. Add chopped walnuts, flour, brown sugar, baking soda and powder, salt and vanilla; stir just until evenly moistened.
- Pour into loaf pan and arrange remaining walnut halves evenly on top of batter.
- Bake 45 to 50 minutes, until bread begins to pull away from side of pan. Let bread cool in pan on wire rack for 10 minutes. Run a knife between bread and pan sides, then turn out onto wire rack. Let cool 10 minutes.
- Slice and serve.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
- Sift flour, baking soda, and cinnamon together in a bowl.
- Beat sugar and shortening together in a separate large bowl with an electric mixer until light and fluffy; add 1 egg at a time, thoroughly beating the first into the sugar mixture before adding the second. Beat banana and vanilla into the wet mixture together. Stream buttermilk into wet mixture while continually beating until smooth; add flour mixture and continue to beat until you have a smooth batter. Pour batter into the prepared loaf pan.

- Grease two 8 x 4" loaf pans very well and preheat oven to 325°F.
- Beat eggs; add sugar and mix well.

OAT AND WALNUT BUTTERMILK BRAID
Steps:
- Stir warm water and honey in large bowl to blend. Sprinkle yeast over. Let stand until foamy, about 8 minutes. Heat buttermilk in small saucepan to lukewarm (about 100°F.). Stir into yeast mixture. Add 2 cups bread flour, 2 cups oats, wheat flour, oil and salt and stir until smooth. Gradually mix in enough remaining bread flour to form dough. Cover and let dough rest 15 minutes.
- Turn out dough onto floured surface. Knead until smooth and elastic, Adding more bread flour if sticky, about 10 minutes. Knead in nuts. Oil large bowl. Add dough; turn to coat. Cover bowl with clean towel; let rise in warm area until doubled, about 50 minutes.
- Oil large baking sheet. Punch down dough. Turn out onto oiled surface; knead briefly. Divide dough into 3 pieces. Roll each piece into 16-inch-long rope. Braid ropes together; tuck ends under and pinch to seal. Transfer to prepared sheet. Cover with clean towel. Let rise in warm area until almost doubled, about 45 minutes.
- Preheat oven to 375°F. Whisk egg and milk in bowl. Brush loaf generously with some of egg mixture. Sprinkle with additional oats. Bake until golden and tester inserted into center comes out clean, about 50 minutes. Transfer to rack; cool. (Can be made 1 day ahead. Wrap tightly; store at room temperature.)
