Number Of Ingredients 8

3 cups bread flour
1/2 cup whole wheat flour
1 tablespoon chopped fresh oregano leaves
1 teaspoon salt
1 1/2 teaspoons active dry yeast
1/2 cup finely chopped leek
1/3 cup chopped walnuts
cornmeal

Steps:

  • Add bread flour, whole-wheat flour, 1 1/2 cups water, oregano leaves, salt, and yeast to bread machine according to manufacturer's directions.
  • Select dough cycle. At end of cycle, scrape dough onto a lightly floured board. Knead in leeks and walnuts.
  • Scrape dough onto a well-floured board and knead briefly to expel air. With lightly floured hands, gather into a ball, then stretch and tuck edges under to shape into a smooth oval with slightly tapered ends (about 8 inches long and 4 inches wide in the center).
  • Place loaf on a well-floured surface, dust lightly with flour, cover loosely with plastic wrap, and let rise at room temperature until it's slightly puffy and holds the imprint of a finger when lightly pressed, about 1 1/2 hours.
  • Sprinkle a 13- by 17-inch baking sheet generously with cornmeal. Transfer loaf to sheet.
  • With a sharp knife, make three diagonal slashes 1 inch deep and 1 to 2 inches apart across loaf top. Place sheet on rack in lower third of a 450° regular or convection oven.
  • Or, if using a baking stone, gently slide edge of cornmeal-covered baking sheet under loaf and lift it onto end of sheet. Slash as directed above, then gently slide loaf onto one side of stone in oven.
  • Spray 3 to 4 squirts of water on floor or sides of oven, taking care not to spray near heating element or lightbulb, then quickly close door.
  • Bake bread, spraying twice more at 5-minute intervals during the first 10 minutes of baking, until crust is well browned, 35 to 45 minutes total.
  • Transfer loaf to a rack to cool for at least 1 hour. Store in a paper bag at room temperature up to 2 days. To recrisp the crust, place loaf directly on a rack in a 400° oven and bake for about 5 minutes.

3/4 cup unsweetened applesauce
3/8 cup apple juice
3 tablespoons butter or 3 tablespoons margarine
1 large egg
1 teaspoon salt
4 cups bread flour
1/4 cup packed brown sugar
1 1/4 teaspoons cinnamon
1/2 teaspoon baking soda
2 teaspoons active dry yeast
1/2 cup chopped walnuts

Steps:

  • All ingredients should be at room temperature.
  • Place ingredients into your bread machine as the instructions that came with it direct. Mine are the following:.
  • Add liquid ingredients to the bread pan.
  • Add all dry ingredients, except yeast, to the pan.
  • Form a well in dry ingredients and carefully pour in the yeast.
  • Bake on "Sweet" Bread setting and choose your crust color, if applicable.
  • Press start!
  • (Note: The directions don't indicate to add the walnuts at the "beep", where you'd normally add fruit or nuts. Of course, you may hold them out and add them at the beep if you prefer.).

Based on a recipe from my Cuisinart's Convection Bread Maker Recipe Booklet. This is for the large (2 pound) loaf. Measurements for the medium (1 ½ pound) loaf are in parentheses. Cook time is all bread machine cook time.

1 1/2 cups low-fat milk (at 80=90 F, 1 cup plus 1 tablespoon for 1 1/2 lb. loaf)
2 tablespoons unsalted butter, cut into 1/2-inch pieces at room temperature (1 1/2)
2 tablespoons honey (1 1/2)
2 large eggs, at room temperature (gently and safely warm cold eggs by placing hole eggs in a bowl and covering with moderately hot tap)
3/4 teaspoon cider vinegar (3/4)
1 1/2 teaspoons salt (1)
1 1/2 cups brown rice flour (1 cup plus 1 tablespoon)
3/4 cup potato starch (1/2)
1/3 cup tapioca flour (1/4)
2 tablespoons quinoa flour (1 1/2 tablespoons)
2 tablespoons garfava flour (1 1/2 tablespoons)
1/3 cup cheddar cheese, shredded (1/4)
1/3 cup dried apple, chopped (1/4)
1/3 cup walnuts, chopped (1/4)
2 teaspoons xanthan gum (1 1/2)
1/2 teaspoon gelatin (1/2)
2 1/4 teaspoons instant yeast (2 1/4) or 2 1/4 teaspoons bread machine yeast (2 1/4)

Steps:

  • Fit the bread pan with the kneading paddle.
  • Add milk, butter, honey, eggs and cider vinegar to the bread pan.
  • Add all remaining ingredients, except yeast, to medium-sized bowl and stir together. Add to bread pan.
  • Add yeast to bread pan and place in the Cuisinart Convection Bread Maker.
  • Press Menu and select Gluten Free.
  • Select Medium crust (or to taste).
  • Select dough size.
  • Press start to mix, knead, rise, and bake.
  • Tip: For best results, while dough is kneading, scrape the sides of the bread pan with a rubber spatula to fully incorporate ingredients.
  • When cycle is completed, remove bread from machine and transfer to wire rack to cool. Bread is easier to slice when cool.

MAPLE AND WALNUT BEER BREAD

Ok, this is a specific recipe ... but is also a method. The flour beer and sugar are consistent ... everything else is extra. Here are some of my favorites and you can really do what you like. Dried vs fresh herbs are best, not too many "wet" ingredients; such as olives, onions, sundried tomatoes, etc., and if you add cheese, no more than 1 cup. - Chile beer at any specialty liquor store, monterey jack cheese and cilantro - Pumpkin beer, yes in the fall, pecans, rosemary, and swiss cheese - Any good dark like Amberbock, apples, dried cranberries and gruyere - Honey wheat, caramelized onion, cheddar, and thyme - Light beer, green chilies, jalapeno jack and cilantro - Red berry or any berry beer, walnuts and provolone with cinnimon - Any dark beer, raisins, cranberries, cinnimon and brown sugar vs white - Bock beer, sundried tomatoes, olives and oregano - Maple or pumpkin beer, cinnimon, raisins, pecans and dried apples I have used bacon bits and cheddar; all herbs; or just cheese. Endless combinations. But this is a favorite for breakfast or even a late night snack with cream cheese. Many of these are available year round at most larger liquor stores any many of the beers are available during seasons, like the Pumpkin and Maple available during the Fall and Winter months. A hearth Bock for some brewers is available in winter and it is good with Mediterranean flavors. Now this is the basic recipe ... 12 oz beer (I use a standard bottle with is 12 oz) 3 cups flour self rising, sifted (sifted is important), if not using self rising, use all purpose, but add 1 tablespoon baking powder and 1 teaspoon salt 1/4 cup sugar (flavorings) However below is my updated recipe for the maple walnut.

12 ounces beer (maple flavored)
3 cups flour, sifted (self rising)
1/4 cup brown sugar
1/2 cup walnuts, toasted
1/4 teaspoon allspice
1 tablespoon butter, melted

Steps:

  • The batter -- Sift the flour and add to a large bowl. Add the sugar, beer and seasoning and mix. I do like the beer to set for a few minutes so it isn't ice cold. Pour all in a loaf pan and cook for 50-60 minutes at 375. Half way through brush the melted butter on the top of the loaf for a golden color. For the sweater breads I usually top it with melted butter.
  • Have fun with it and try a variety of flavors. Just stick to the basic recipe and it is virtually full proof. I have probably made 50+ varieties by now.

SOURDOUGH RAISIN WALNUT BREAD (ABM)

About a month ago, my landlord told me about a bread that he and his wife love, made by a local bakery, Ace Bakery. I thought I would try to mimic the recipe and make some for them, so I had a peek on their website to see what ingredients are in it, only to find it contained sourdough, which I'd just become interested in making. Fast forward to a month later, I have a healthy starter, and gave this a try with excellent results! Many thanks to chef #2586, whose recipe #31998 gave me the basic tools to create this one from. Cooking time does not include time for bread machine to process.

2 cups proofed sourdough starter
2 tablespoons butter, melted
1/2 cup milk
1 teaspoon salt
1/4 cup honey
1 cup whole wheat flour
2 cups white bread flour
1 cup raisins
1 cup walnuts
cornmeal, for dusting baking sheet

Steps:

  • Place all ingredients, except raisins and walnuts, into bread machine pan, in order that they are listed. Process on dough setting. When the machine beeps for additions, add the raisins and walnuts (or around 3-5 minutes before the end of the kneading cycle.).
  • When cycle is complete, remove dough to lightly floured surface and shape into 2 round loaves (or one large loaf, your choice.).
  • Place round loaves on cornmeal coated cookie sheet, cover and let rise until bread has doubled in size. Be patient, sourdough without the addition of commercial yeast can take up to several hours to rise - mine typically takes three hours.
  • Bake at 375 degrees F for 25 to 30 minutes (30-40 if making one loaf.) Cool on wire rack.
  • NOTE: To proof your starter, feed it with equal parts of flour and lukewarm water, then let it sit overnight or up to 12 hours, covered. This is what develops the characteristic sour flavor and the longer the proof, the sourer it will be. If you start with 1 cup of starter and feed it 1 cup each of water and flour, you should have enough to make your bread and save the rest to start your next batch.

QUICK WALNUT BREAD

This savory quick bread is easy to make and versatile. Try it lightly toasted for breakfast or tea, or drizzled with a little honey. You may also slice it thin and serve it with cheese.

1 cup whole wheat flour
3/4 cup unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda

4 eggs
1/2 cup buttermilk or plain yogurt
3 tablespoons olive oil
3 tablespoons walnut oil
1 cup (3 ounces) chopped walnuts

Steps:

  • Preheat the oven to 375 degrees. Move the rack to the center of the oven. Butter or oil a loaf pan. Sift together the flour, baking powder, baking soda and salt.
  • Beat the eggs in a large bowl. Whisk in the buttermilk or yogurt and the oils. Quickly whisk in the flour, and fold in the walnuts. Scrape into the bread pan.
  • Bake 50 minutes to one hour, until nicely browned and a tester comes out clean. Remove from the heat, allow to cool for 10 minutes in the pan. Then reverse onto a rack and allow to cool.
