1 pound boneless skinless chicken breasts, chopped
1 medium onion, chopped
1 tablespoon olive oil
2 garlic cloves, minced
2 cans (14 ounces each) chicken broth
1 can (4 ounces) chopped green chiles
2 teaspoons ground cumin
2 teaspoons dried oregano
1-1/2 teaspoons cayenne pepper
3 cans (14-1/2 ounces each) great northern beans, drained, divided
1 cup shredded Monterey Jack cheese
Sliced jalapeno pepper, optional

Steps:

  • In a Dutch oven over medium heat, cook chicken and onion in oil until lightly browned. Add garlic; cook 1 minute longer. Stir in the broth, chiles, cumin, oregano and cayenne; bring to a boil., Reduce heat to low. With a potato masher, mash one can of beans until smooth. Add to saucepan. Add remaining beans to saucepan. Simmer for 20-30 minutes or until chicken is no longer pink and onion is tender., Top each serving with cheese and, if desired, jalapeno pepper.Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth or water if necessary.

1 cup cooked shredded chicken
1 (15 ounce) can cannellini beans, drained & rinsed
1 (4 ounce) can chopped green chilies
2 -3 teaspoons taco seasoning
shredded cheddar cheese, for garnish
sour cream, for garnish
taco chips, for garnish

Steps:

  • In a small saucepan, heat cooking sauce, chicken, beans, chiles and taco seasoning to boiling, stirring occasionally. Reduce heat to low and simmer for 10 minutes to blend flavors, stirring occasionally.
  • Top each serving with cheese, sour cream and tortilla chips, if desired.

1 jar salsa
1 (48 ounce) jar great northern beans

1/2 medium onion (diced)
3 (14 ounce) cans great northern beans
3/4 teaspoon garlic (chopped)
1 teaspoon cumin
3/4 teaspoon oregano
1/4 teaspoon cayenne pepper (more or less depending on what you like)
salt and pepper
2 cups diced cooked chicken (Canned Chicken also works very well)
2 cups chicken broth
1 (4 ounce) can green chilies
12 ounces sour cream

Steps:

  • Drain and Rinse Beans.
  • Mix all ingredients, except Sour Cream, in a large stew pot or a crock pot if you prefer.
  • Simmer for an hour, stirring occasionally.
  • Add sour cream just before serving!
  • Enjoy!

1 medium green peppers, chopped or 5/8 cup green pepper
1 (10 3/4 ounce) can regular condensed cream of chicken soup or 1 (10 3/4 ounce) can 98% fat-free cream of chicken soup
3/4 cup water
1 1/2 cups frozen whole kernel corn
2 (15 ounce) cans cannellini beans, rinsed
2 tablespoons cheddar cheese, shredded

Steps:

  • Heat the oil in a 4-quart saucepan over medium-high heat. Add the chicken, chili powder, cumin, onion and pepper and cook until the chicken is cooked through and the vegetables are tender, stirrring often.

1 tablespoon extra virgin olive oil
1 large onion, chopped
4 boneless chicken breast halves, cut into one inch chunks
2 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons salt
1 teaspoon pepper
3 (15 ounce) cans cannellini beans, drained (save 1/2 cup draining liquid)
2 cups chicken broth, divided
1 teaspoon chipotle pepper, seeded and minced
1/2 cup heavy cream
shredded monterey jack cheese
chopped fresh cilantro leaves

Steps:

  • Warm oil in large saucepan or Dutch oven over medium-low heat. Add onion; cook 4 minutes, stirring. Push onion mixture to one side; add chicken to skillet; sprinkle mixture with chili powder, cumin, salt, and pepper. Cook 5 minutes, stirring.
  • Increase heat to medium-high. Add 2 cans of the beans and draining liquid, 1 ¼ cups broth, and chipotle; bring to a simmer. Cook 10 minutes, until chicken is cooked through.
  • Meanwhile, combine remaining 1 can beans and ¾ cup broth in bowl of food processor. Puree until smooth. Add to soup in pot, along with half-and-half. Simmer a few minutes, stirring, until warmed through and flavors incorporated. Serve hot; garnish with cheese and cilantro.

2 (9 3/4 ounce) cans white meat chicken
1 (14 ounce) can chicken stock
1 cup salsa
1/2 cup carrot (diced)
1/2 cup celery (diced)
1 (1 1/4 ounce) package taco seasoning
1 tablespoon masa harina flour (can use corn starch)
1/2 teaspoon salt (to taste)
1 cup colby-monterey jack cheese (shredded)

Steps:

  • Drain and rinse the beans. Drain the chicken.
  • Dump the first seven ingredients into a crockpot. Set to High and cook for two hours, stirring occasionally.
  • Add masa and stir - turn off crock and let set for five minutes.
  • Stir again and salt to taste.
  • Stir in cheese.
  • I like to serve in bowls topped with fresh diced onion, crushed tortilla chips, jalapeños, and some hot sauce.

1 cup dry white wine or 1 cup chicken broth
2 cans great northern beans, rinsed and drained
1 teaspoon mustard powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/8 teaspoon ground black pepper
4 cups baked corn tortilla chips (optional)
1/2 cup shredded reduced-fat sharp cheddar cheese
sour cream (optional)

Steps:

  • Heat oil in large skillet over medium-high heat.
  • Add chicken and cook until no longer pink.
  • Remove chicken and set aside.
  • Add onion and garlic to skillet and cook until tender.
  • Place chicken, onion, and garlic in crockpot.
  • Add wine, beans, mustard powder, cumin, salt and pepper.
  • Cook on low 5 to 6 hours.
  • Place servings into bowl (If using tortilla chips put them in bowl first).
  • Sprinkle with cheese and add sour cream.

1 lb great northern bean
6 cups chicken broth
2 minced garlic cloves
2 medium onions, chopped (divided)
1 tablespoon oil
2 (4 ounce) cans green chilies (chopped)
2 teaspoons ground cumin
1 1/2 teaspoons dried oregano
1/4 teaspoon ground cloves
1/4 teaspoon cayenne pepper
2 lbs chicken breasts, cooked and chopped (about 4 cups)

Steps:

  • Soak beans overnight or at least 4 hours prior to cooking.
  • Combine beans, chicken broth, garlic and half of the onions in a large soup pot and bring to a boil. Reduce heat and simmer until beans are very soft, 3 hours or more.
  • Add more chicken broth if necessary. In a skillet, sauté remaining onions in oil until tender. Add chilies and seasonings and mix thoroughly. Add to bean mixture. Add the cooked chicken and continue to simmer 1 hour.
  • Serve topped with the cheese, tomatoes, guacamole, tortilla chips, etc -- .
