ALMOND FLOUR WAFFLES

Quick and easy! And so yummmy! I always put yogurt and fruit on mine!

1 cup almond flour
1 pinch salt
1 teaspoon baking soda
4 eggs
¼ cup honey
1 teaspoon vanilla extract
cooking spray

Steps:

  • Preheat waffle iron.
  • Combine almond flour, salt, and baking soda in a large bowl. In a separate bowl, whisk together the eggs, honey, and vanilla. Stir the flour mixture into the egg mixture. Grease preheated waffle iron with cooking spray.
  • Spoon batter onto hot waffle iron. Cook until golden; serve hot.

Steps:

  • 1. Combine dry ingredients in large bowl.
  • 2. In a separate bowl, beat wet ingredients and then add to dry, stirring just until moistened.
  • 3. Cook on pre-heated waffle iron until waffles are browned and test done. I like to set a timer so I don't have to keep checking, or risk forgetting to take the waffles out on time!

3 eggs
1 1/2 cups 1% low-fat milk
3 tablespoons melted butter
2 1/4 cups whole wheat flour (freshly ground from 1.8 cups soft white wheat berries)
4 1/2 teaspoons baking powder
3 teaspoons sugar
3/4 teaspoon salt

Steps:

  • Preheat waffle iron. Great in a Belgian waffle iron!
  • Beat eggs.
  • Mix wet ingredients in one bowl.
  • Mix dry ingredients in second bowl.
  • Gently mix wet and dry til just moistened. Do not over mix.
  • Bake in hot waffle iron til lightly browned and crisp (about 4-5 minutes in mine).

1 cup all-purpose flour, spooned and leveled
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
2 large eggs
4 tablespoons (1/2 stick) unsalted butter, melted
Maple syrup and butter, as desired, for serving

Steps:

  • Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
  • In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
  • Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.

2 cups whole wheat flour (made from 1.6 cups soft white wheat berries)
4 teaspoons baking powder
4 tablespoons sugar
1 teaspoon salt
1 1/4 cups 1% low-fat milk
2 large eggs
3 tablespoons melted butter
1 tablespoon vanilla

Steps:

  • Grind wheat berries to fine flour. I use a Vitamix blender for 1 minute on high.
  • Mix all dry ingredients.
  • Mix all wet ingredients seperately.
  • Combine wet and dry with a fork or whisk just till moistened. Do not over mix. Let it sit 5-10 minutes if possible.
  • Cook on 300 degree griddle til lightly browned on each side.
