ULTIMATE FLU-BUSTING CHICKEN SOUP
This chicken soup is good for your soul and your health. Made from scratch, it's packed with ingredients to boost your immune system and ward off the illness. What it's not packed with is fat and empty calories. Reasearchers at the University of Nebraska found that homemade Chicken soup really does make you feel better when your sick. It reduces congestion and inflammation by limiting the movement of white blood cells that produce infection-related mucus. The result? Fewer sniffles. This version also harnesses the healthy power of tomatoes, potatoes, and garlic. Published in our local paper.

Steps:
- Put chicken, celery, 2 cloves garlic, 1 cup carrots, the oregano sprig and half the onion into a large pot. Fill pot with cold water, 2 inches above ingredients; put over high heat. When water boils, cover and reduce heat to medium. Simmer 1 hour.
- Set aside chicken to cool and discard all veggies and herbs. Strain broth into a large bowl, skim fat from top, and set aside.
- Put oil, jalapeno, the chopped oregano leaves, 2 remaining garlic cloves (minced) and the remaining half onion (chopped) into a large pot. Cook at medium heat until vegetables are just soft, about 5 minutes. Turn heat to high; add broth, potatoes and remaining carrots. When broth boils, reduce heat to medium. Cook until potatoes and carrots are tender, about 15 minutes.
- Remove skin and bones from chicken. Shred meat into bite-sized pieces. Add chicken, tomatoes, salt and pepper to soup. Cook until warm.

VIRUS KILLING SOUP

It really isn't when the soup is done and it smells fantastic while it cooks. Don't worry about the cayenne pepper either. It provides warmth that will clear your sinuses, but it's not spicy at all.

Steps:
- Put the chicken, garlic, salt, thyme, rosemary, cayenne and black pepper in a big pot.
- Pour a couple boxes or cans of chicken broth over the top, then top it off with water so that the chicken is completely covered. You can also use only water if you like. Cook it on the stove top until the chicken starts to fall apart. Then remove the chicken and strain the broth a bit, getting out the long stems from the spices and all the chicken bones. Set the chicken aside to cool a bit.
- Chop the veggies and saute them in oil until tender. Add 1/2 cup of good white wine and some salt and pepper. Add the veggies into the pot of broth and simmer for a while. I added about 6 cups of water to the broth at this point. It had really cooked down and was very rich.
- Take the chicken off the bones and chop it up. Add it back into the soup. Add in a can or two of diced tomatoes. You can also add frozen green beans, peas, zucchini, flat leaf parsley.

This is not something to prepare for your guests. This is a tender comforting soup to make for yourself or your family when you are sick, can't swallow anything, your taste-buds are numb, and most of all you feel sorry for yourself.

Steps:
- Put beef bones in a big saucepan.
- Add all other ingredients, except noodles, putting the leaves at the top.
- Add water to cover everything by several inches.
- Bring to boil, then simmer on low heat, not entirely covered for as long as you can (I try to give it at least 3-4 hours for all the tastes to extract).
- Remove tied coriander sprigs.
- This step is optional but I greatly recommend it if you are not starving: the bones discharge a lot of fat. Therefore, I let the soup get cold, and then put it in the fridge for 1-2 hours. Then, before eating, I skim the fat off the top, only then I heat the soup again.
- Adjust seasoning.
- Prepare noodles according to directions on the package to serve with the soup.
- Get Well!
