VIRGINIA'S REFRESHING GERANIUM TEA COOLER
A refreshing & delicious herbal and tea blend to sip on a warm day, or just while visiting with your special friend. This recipe was passed along from my friend Virginia Murphy of the Orange County Herb Society. Virginia is a lovely lady who also runs The Herboretum Herb Farm here in the Temecula Valley Wine Country. She grows and sells a nice selection of herbs, scented-geraniums, and other herbaceous plants. A great place to visit if you are in the area!

Steps:
- Pour 1/2 pint of boiling water over all ingredients; cover and infuse for five minutes.
- Sweeten to taste, perhaps with honey.
- Strain, cool and chill; serve over crushed ice with a leaf in each glass.
CHAMOMILE COOLER
Chamomile and lemon-flavored herbs create a delicate, delightful tea. We used lemon verbena, which lends a pleasantly sweet flavor for a refreshing and light tea.

Steps:
- In a large pot bring 6 cups of water to a boil over high heat. Remove pot from heat and stir in the chamomile and lemon verbena. Cover and steep for 10 minutes.
- Meanwhile, place a large strainer lined with cheesecloth or a damp paper towel over another pot or heat-proof bowl. Strain tea, pressing on the herbs to extract all liquid. Stir in honey until it dissolves, and let the tea cool completely, about 1 hour. Fill four tall glasses with ice. Pour tea over ice and serve immediately.
PINEAPPLE BLACK TEA COOLER
Simple and refreshing... I like to garnish the glasses with big chunks of fresh pineapple and some cherries. I guess you could fancy it up adding some vodka and limoncello... Cooking time is chilling time!

- Steep the tea in the boiling water for 10 minutes, with the sugar.
- Remove bags.
- Put in a pitcher.
- Add the remaining ingredients.
- Let chill in the fridge until cold.
- Serve in frosted glasses!
