1 cup chopped celery
1/3 cup mayonnaise
2 tablespoons lemon juice
1/2 teaspoon dill weed
5 cups cubed cooked lobster meat (about 4 small lobsters)
8 hoagie rolls, split and toasted

Steps:

  • In a large bowl, combine the celery, mayonnaise, lemon juice and dill weed. Gently stir in lobster. Serve on rolls.

I grew up in Nova Scotia where seafood was cheap. My Mom and grandmothers had some pretty inventive ways of making lobster 'not-boring!' Now, lobster is a treat and costs a fortune. I've paid over ten dollars for one of these lobster rolls in Cape Cod and it wasn't half as good or half as big as the ones my Mom taught me to make. This is a wonderful summer (or winter) treat and makes a fancy luncheon to impress your friends. (And no, I don't eat the green stuff in the lobster!)

1 tablespoon butter, softened
4 roll (blank)s hot dog buns or kaiser rolls, split
4 large leaf (blank)s lettuce leaves
1 ½ pounds cooked and cubed lobster meat
2 tablespoons mayonnaise
1 teaspoon fresh lime juice
1 dash hot pepper sauce (e.g. Tabasco™)
2 medium (4-1/8" long)s green onions, chopped
1 stalk celery, finely chopped
1 pinch salt and pepper to taste
1 pinch dried basil, parsley or tarragon

Steps:

  • Lightly butter the insides of the buns or rolls and line with lettuce leaves. Set aside.
  • In a medium bowl, stir together the mayonnaise, lime juice, hot pepper sauce, salt and pepper until well blended. Mix in the green onion and celery, then lightly mix in the lobster so it just gets coated without falling apart.
  • Stuff the lobster filling into the buns and sprinkle parsley, basil or tarragon lightly over the filling.

2 lemons, halved
Sea salt
3 1 1/4-to-1 1/2-pound live lobsters
1/3 cup mayonnaise
7 tablespoons unsalted butter, melted
6 top-split hot dog buns
1/4 cup roughly chopped celery leaves
1/4 teaspoon celery salt

Steps:

  • Fill a large steamer or pot with about 2 inches of water. Squeeze the juice of 1 lemon into the water, then add the lemon halves and 1 tablespoon sea salt to the pot. Bring to a boil over medium heat.
  • Place the lobsters in the steamer basket or directly in the pot; cover and steam until the shells turn bright red, 8 to 10 minutes. Remove from the pot with tongs and rinse under cold water to cool slightly.
  • Remove the meat from the lobster shells: Twist off the claws, then break off the tail. Pull off the flippers. Insert your thumb into the flipper end of the tail and force out the meat. Crack the claws with the flat side of a knife or a lobster cracker; remove the meat. Roughly chop the lobster meat. Transfer to a bowl and chill 15 minutes.
  • Meanwhile, whisk the mayonnaise, 4 tablespoons melted butter and the juice of the remaining lemon in a large bowl. Add the lobster meat and toss to coat. Season with salt.
  • Heat a grill pan or skillet over medium heat. Brush the outside of the hot dog buns with 2 tablespoons melted butter. Toast the buns until slightly golden, about 1 minute per side. Divide the lobster salad among the buns. Drizzle with the remaining 1 tablespoon melted butter and sprinkle with the celery leaves and celery salt.

1 1/2 pounds cooked, shelled lobster meat (about four 1 1/2-pound lobsters), chopped into 1/2-inch pieces
2 tablespoons mayonnaise
1/2 teaspoon finely chopped fresh chives (optional)
1/2 teaspoon finely chopped fresh tarragon or chervil (optional)
1 teaspoon fresh lemon juice (or to taste)
Coarse or sea salt
Freshly ground pepper
8 top-split hot-dog buns
1 1/2 tablespoons unsalted butter, melted, for rolls

Steps:

  • Stir together lobster and mayonnaise. Stir in chives and tarragon (if desired), and lemon juice; season with salt and pepper. Refrigerate, covered, while preparing rolls, or up to 2 hours.
  • Heat a large heavy skillet or griddle over medium heat until hot. Lightly brush outside of buns with butter; transfer to skillet. Cook, turning once, until golden brown, about 1 1/2 minutes per side.
  • Spoon about 1/2 cup lobster mixture into each bun. Serve immediately.

1 lb cooked lobster meat or 2 packages (8 oz each) refrigerated imitation lobster chunks, cut into bite-size pieces
6 tablespoons mayonnaise
1/2 teaspoon seafood seasoning (from 6-oz container)
1/2 teaspoon dried tarragon leaves
Salt and pepper to taste
1 tablespoon butter, softened
4 hot dog buns, split
4 leaves Bibb or butter lettuce

Steps:

  • In medium bowl, stir together lobster, mayonnaise, seafood seasoning, tarragon, salt and pepper just until combined. Set aside.
  • Heat 10-inch skillet over medium-high heat. Spread butter on cut sides of buns. Place cut sides down in skillet; cook about 2 minutes or until toasted.
  • Place buns on plates; fill with lettuce and lobster mixture. Serve immediately.

Kosher salt
1 1/2 lemons
1 head garlic, split horizontally
1 thyme bundle
2 dried bay leaves
2 (1 1/2-pound) lobsters
1/2 to 3/4 cup mayonnaise
1 celery rib, cut into 1/4 inch dice
1/2 bunch of chives, finely chopped
Juice of 1/2 lemon
Celery salt
4 tablespoons (1/2 stick) of unsalted butter
1 clove garlic, smashed
4 top split hot dog rolls

Steps:

  • To cook the lobsters:
  • Fill a large pot with water and season it generously with salt. Squeeze the lemons into the water and drop them in and toss in the garlic, thyme bundle and bay leaves. Bring the water to a boil and drop the lobsters in. Cover and cook for 11 minutes. Remove the lobsters from the pot and let cool.
  • Remove the lobster claws, knuckles and tails from the shells and coarsely chop.
  • In a large mixing bowl combine the chopped lobster, 1/2 cup of mayo, celery, chives and lemon juice. Mix together and season with celery salt. Add remaining 1/4 cup of mayo if you like the mix a little creamier (this is traditionally a very low mayo type deal). Taste to make sure the lobster is delicious and reserve.
  • Toss the butter and garlic into a large saute pan and melt the butter. When the butter is melted, bubbly and very garlicky smelling, remove the garlic clove and discard it. Add the hot dog rolls to the pan and cook in the garlic butter on both sides until the butter is absorbed and the rolls and crispy on both sides.
  • Divide the reserved lobster between the 4 buttered rolls and serve immediately.

3 x 500g cooked whole lobsters fresh or frozen (defrosted if frozen)
3-4 tbsp mayonnaise
1 small lemon, juiced
1 celery stalk, finely chopped
¼ bunch of chives, finely sliced
pinch of cayenne pepper, plus an extra pinch to serve
6 brioche hot dog buns or 8 small brioche rolls
1-2 tbsp butter
ready salted crisps, to serve (optional)

Steps:

  • Crack the lobsters open using the back of a chef's knife or a lobster cracker. Do this carefully so the shells don't break into a lot of small pieces. Or, ask your fishmonger to remove the shells. Pull out the lobster meat and discard the shells. Roughly chop the meat into 2cm pieces, then put in a bowl, cover and chill until needed.
  • Mix the mayonnaise, lemon juice, celery, most of the chives and cayenne together in a small bowl. Taste for seasoning, adding more lemon juice if needed. Toss the lobster with the dressing.
  • Slice a thin piece off the sides of each bun, then split them open, being careful not to cut all the way through. Melt the butter in a frying pan and fry the buns for 1-2 mins on the cut sides until golden and toasted. Pile the lobster filling into rolls, then sprinkle with another pinch of cayenne and the reserved chives. Eat alongside some ready salted crisps, if you like.

Fill hot dog buns or brioche with a luxurious lobster and lemon mayonnaise filling for this New England street-food staple

500g cooked lobster
5 tbsp mayonnaise
1 tbsp lemon juice
2 celery sticks, stringed and diced
small pinch of cayenne , plus extra to serve
1 tbsp melted butter
6 good-quality hot dog buns (brioche if you can get them)
snipped chives (optional)
good-quality potato crisps , to serve
gherkins , to serve

Steps:

  • Crack the lobster, remove all the meat, cut it into large chunks and set aside. (Lobster shells can be kept to make a delicious soup.)
  • Mix the mayonnaise with the lemon juice, celery, cayenne and a small pinch of salt, then fold the lobster through to combine. Taste and adjust the seasoning. If eating straight away, leave at room temperature - or chill for up to 1 day in advance.
  • To serve, split the rolls and lightly butter on all sides, including the outside. Heat a griddle pan and griddle the rolls in batches on all sides. Divide the lobster mix between the rolls, scatter with chives (if using) and serve on a platter with napkins, a bowl of crisps and some gherkins.
