BEST PICKLED SHRIMP

Best Pickled Shrimp image

These pickled shrimp are the best--a perfect light appetizer that can be made ahead of time and enjoyed as-is with a cold glass of white wine. You'll love the contrast between the bright lemon acidity and the pungent peppers, onions, and capers.

Provided by NicoleMcmom

Time 8h20m

Yield 8

Number Of Ingredients 13

1 cup apple cider vinegar
½ cup olive oil
¼ cup lemon juice
1 small red onion, thinly sliced
1 medium lemon, thinly sliced
1 medium Fresno chile, thinly sliced
3 cloves garlic, smashed
3 leaf (blank)s bay leaves, crushed
2 tablespoons capers, roughly chopped
1 teaspoon celery seed
1 teaspoon lemon zest
2 tablespoons seafood seasoning (such as Old Bay®)
2 pounds large shrimp - peeled, deveined, and tails left on

Steps:

  • Combine vinegar, olive oil, lemon juice, onion, lemon slices, Fresno chile, garlic, crushed bay leaves, capers, celery seed, and lemon zest in a large bowl; stir until well combined. Place in the refrigerator while you prepare the shrimp.

1 cup white wine vinegar
2 cloves garlic, chopped
1/2 Spanish onion, chopped
1 tablespoon pickling spice
2 dried chiles de arbol or 1/4 teaspoon red chile flakes

  • Add the mayonnaise to the mashed yolks; mix until well combined. Fold in the mustard, cornichons, dill, chives, 1/4 teaspoon salt and 1/8 teaspoon pepper.
  • Fill the egg whites with the yolk mixture. Top each deviled egg with a pickled shrimp and garnish with a parsley leaf. Sprinkle the shrimp with a pinch of smoked paprika.

VINEGAR PICKLED SHRIMP

Vinegar Pickled Shrimp image

got this from my close friend and she told me to post it here so we can both find it easily! Super yummy and easy. You can use any amount of shrimp up to 5 lb, i usually use 3. I don't reduce the rest of the ingredients though. I also use peeled and deveined, but you can use shell on if you prefer that. You can also use frozen or thaw, just adjust the cooking time.

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 5

5 lbs thawed shrimp
2 cups white vinegar
4 cups water
5 teaspoons salt
5 -7 tablespoons cayenne, i only use 2 and its spicy

Steps:

  • bring all ingredients except shrimp to boil, once boiling add shrimp and cook until done. It will all depend on the amount you are boiling and if it is thawed or frozen. For my 3 lbs from the frozen state took about 8-10 minutes.

VERACRUZANA VINEGAR-BATHED SHRIMP

Veracruzana Vinegar-Bathed Shrimp image

Provided by Martha Rose Shulman

Categories     dinner, lunch, vegetables, appetizer, main course

Time 45m

Yield Serves 8

Number Of Ingredients 15

2 pounds medium shrimp
3 cups water
3 tablespoons extra-virgin olive oil
1 large white or red onion, thinly sliced
2 large carrots, thinly sliced
Salt to taste
4 to 6 garlic cloves, minced or puréed
2 fresh or pickled serrano or jalapeño chiles, or chipotle chiles in adobo sauce, minced
2 large or 4 small bay leaves
1/3 cup seasoned rice vinegar
1/4 teaspoon freshly ground pepper
1/2 teaspoon ground cloves (more to taste)
1 teaspoon dried Mexican oregano or 1 tablespoon chopped fresh mint
1/3 cup chopped cilantro
Lettuce leaves for serving (optional)

Steps:

  • Peel and devein shrimp, saving the shells.
  • Bring water to a boil in a medium saucepan and add shrimp shells. Simmer 30 minutes. Line a strainer with cheesecloth and set over a bowl. Strain broth into bowl and discard shells. You will need only 1/2 cup of the broth; the rest can be frozen, or used to cook rice if you choose it to accompany the shrimp.
  • Heat 2 tablespoons olive oil over medium heat in a large, heavy skillet and add onion, carrots and a generous pinch of salt. Cook, stirring often, until tender, 5 to 8 minutes. Add garlic and shrimp and cook, stirring, until shrimp begins to turn pink, about 3 minutes.
  • Add chiles, bay leaves, vinegar, pepper, ground cloves, salt to taste and 1/2 cup shrimp stock and bring to a simmer. Reduce heat to low and simmer for 5 minutes or until the shrimp is cooked through, stirring occasionally. Remove from heat and transfer mix to a bowl. Refrigerate for 30 minutes or longer.
  • Stir in remaining tablespoon of olive oil, the oregano or mint and cilantro. Taste and adjust seasonings. If desired, line a platter or plates with lettuce leaves and spoon shrimp mix over the lettuce.

Yield Makes 6 to 8 servings as an appetizer

Number Of Ingredients 17

1 medium carrot, cut into thin rounds
1 medium bulb fennel, thinly sliced
1 medium zucchini, cut into half moons
3 teaspoons kosher salt, divided, plus more for blanching
1 red onion, julienned
1 red bell pepper, julienned
5 cloves garlic, thinly sliced
2 teaspoons whole coriander
2 teaspoons cumin seeds
1 teaspoon caraway seed
1 teaspoon fennel seed
1 cup olive oil, divided
1 cup white wine
1 cup white wine vinegar
2 tablespoons thyme leaves
2 pounds shrimp, peeled, deveined, tails removed
2 tablespoons flat-leaf parsley, chopped

Steps:

  • Blanch vegetables: In a large pot of boiling, salted water, blanch carrots, fennel and zucchini until firm-tender, 1 minute. Use a slotted spoon to remove vegetables and plunge directly into an ice-water bath. Remove and dry on paper towels. In a medium bowl, toss blanched vegetables with 1 teaspoon salt. Chill in refrigerator until you are ready to assemble dish.
  • Make pickled vegetables: In a sauté pan over medium-low heat, heat 1/2 olive oil and sweat the onion, pepper, garlic, spices and 1 teaspoon salt until soft, about 10 minutes. Stir in wine, vinegar and thyme. Remove from heat and let stand 15 minutes.
  • Meanwhile, bring salted water to a boil in a large pot, then turn off heat. Stir in shrimp and let cook until firm but still slightly translucent in the center, 1-2 minutes depending on size of shrimp. Place cooked shrimp in a nonreactive dish and sprinkle with remaining 1 teaspoon salt. Then pour pickled vegetable mixture over shrimp.
  • Cover with plastic wrap and refrigerate at least 4 hours or overnight. Before serving, stir in blanched vegetables and remaining 1/2 cup olive oil. Adjust seasoning, adding more salt and vinegar if needed. Garnish with parsley.
