Homemade Chili Garlic Sauce (Huy Fong Brand Copycat) image

This homemade chili garlic sauce recipe is just like the famed Huy Fong brand, giving you authentically garlicky and spicy results that are rich and well balanced. Use it to create your own favorite Asian recipes! {Vegan, Gluten-Free}

8 oz (225 g) red jalapeno peppers
2 heads garlic
1 teaspoon salt
1 teaspoon sugar
1/3 cup white distilled vinegar
1 tablespoon water ((plus 1 teaspoon water to make the cornstarch slurry))
1 teaspoon cornstarch

Steps:

  • Combine the peppers, garlic, salt, sugar, vinegar, and water in a blender. Blend on medium until chunky. Remove 1/4 of the blended mixture.
  • Turn the blender to high and liquify the remaining contents of the blender.
  • Strain the liquified mixture so that you are left with just the juices.
  • Add the strained juice and reserved chunky bits to a pot.
  • Meanwhile, add the cornstarch to a small bowl with 1 teaspoon water, stir to mix well to make a slurry.
  • Heat the pot over medium-high heat. Once warm, add the cornstarch slurry and bring to a boil.
  • After reaching a boil, remove from heat and allow to cool completely. The chili garlic sauce is ready to serve.
  • To store, transfer the chili garlic sauce to a clean mason jar and seal it. Store in the fridge for up to 1 month.

This sauce can be used for dipping veggies, meats, or egg rolls. It's also great spooned over a bowl of steaming hot pho or other rice noodle soup. For me this sauce IS the flavor of Vietnamese cooking. Enjoy! This can be stored in the fridge for up to two weeks.

3 ½ fluid ounces water
6 spicy red chile peppers, seeded and minced
6 cloves garlic, minced
¼ cup fish sauce
¼ cup rice vinegar
¼ cup white sugar
¼ cup lemon juice

Steps:

  • Stir water, chile peppers, garlic, fish sauce, rice vinegar, and sugar together in a saucepan over medium-low heat until sugar dissolves into the liquid; remove from heat and set aside to cool completely, about 1 hour.
  • Stir lemon juice into the cooled liquid.

Nuoc Cham (Vietnamese Dipping Sauce) image

My personal take on a traditional dipping sauce. A little bit sweet, but mostly savory with a nice bit of heat. I make this a minimum of 24 hours before I use it to let the flavors mingle. Leftover sauce can be kept for three to four weeks in a sealed container in the refrigerator. If this isn't to your taste as written, experiment! Everyone's tastes are different! Some like their nuoc cham really sweet and mild, some like it tangy with heat. Mine tends to be more towards the tangy heat side. So, before you add the garlic, onion, and vinegar, sample it and adjust the ingredient amounts to suit your liking. Keep in mind that this recipe is LOUD when you first make it. The flavors mingle and mature a bit after the first 24 hours. I hope you enjoy!

I almost always double the recipe just to make sure there's enough. I've kept it for long periods of time but unless you freeze it, it's past it's prime after a few days. This is a basic chili sauce used for a dip for chicken or whatever.

2 dried red chilies
2 garlic cloves
1/2 teaspoon sugar
2 tablespoons fish sauce
1 tablespoon vinegar
1 tablespoon lemon juice

Steps:

  • Mince chilies and garlic finely and place in a mortar.
  • Mash with the heel of a cleaver or pestle. Add sugar and stir until it dissolves.
  • Add fish sauce, vinegar and lemon juice, stirring between each addition.
  • Variations of this are found in Cambodia, Thailand and other Southeast Asian countries.
  • You can fiddle with it endlessly.
  • This is a good starting point. The proportions shown here produce what I consider a mildly warm dip.
  • I generally use two to six times as many chilies, depending on their strength and how hot I want it.
  • Variations: use green serrano chilies instead of dried red ones, lime juice instead of the lemon juice or palm sugar instead of granulated.
  • If you make it in a food processor, don't over process. It should have small chunks of each ingredient rather than being a homogeneous liquid.
  • The taste is sour and hot, very puckery. It's great with poached or steamed chicken, duck or game hens. Much better with basically bland dishes rather than something like curry which has it's own blend of spices.
