TOMATO AND VIDALIA ONION SALAD WITH STEAK SAUCE DRESSING

- In a small saucepan over moderate heat combine vinegar, sugar, Worcestershire and pepper. Allow sugar to dissolve in vinegar and liquids to come to a bubble. Remove sauce from heat and whisk in tomato sauce, then extra-virgin olive oil. Let dressing stand.
- Arrange sliced tomatoes and onions on a serving platter. Season tomatoes and onions with salt, to taste Pour dressing over the tomatoes and onions and garnish with chopped parsley.

- Season the onions with salt and pepper, wrap them individually in foil, and bake them in the middle of a preheated 350°F. oven for 45 minutes to 1 hour, or until they are tender. Let the onions cool in the foil and discard the foil. Chop the onions coarse, discarding the root ends, and in a bowl toss them with the tomatoes, the bacon, and the basil. In a small bowl whisk together the garlic paste, the vinegars, and salt and pepper to taste, add the oil in a stream, whisking, and whisk dressing until it is emulsified. Pour the dressing over the salad, toss the salad well, and serve it, chilled or room temperature, with grilled chicken or beef.

- Prepare charcoal or gas grill for direct grilling over high heat, or preheat indoor electric grill. Oil the grill rack.
- Put bell peppers, onion rounds, and tomatoes in a bowl and coat them with oil.
- Grill peppers directly over high heat, turning to char and blister them on all sides, 5-7 minutes.
- Transfer to a paper bag, close the bag, and let cool for 10 minutes.
- Meanwhile, grill onion rounds, turning once, until grill marked and partly tender, 2-3 mins per side. Transfer to a cutting board.
- Grill tomatoes, turning often, until grill marked, 3-4 minutes. Dont overcook. Transfer to a cutting board.
- Peel peppers and cut open to remove seeds and stems. Chop peppers coarsely and mound on a platter. Coarsely chop onions; then core and chop the tomatoes and add them to the platter.
- Scatter basil leaves on top of the vegetables.
- To make vinaigrette, combine garlic and vinegar in a small bowl. Gradually whisk in olive oil. Pour dressing over vegetables and toss well.
- Season with salt and pepper and serve.

- Chop/shred crab into small pieces. You can chop with a knife or use a food processor and pulse in batches. Try to shred it apart a little for better coating with the dressing. P.S. Imitation crab meat is made of white fish. I've loved this stuff since I was a kid and I can't get over it (don't judge me). - Chop 2 medium tomatoes and drained them of any excess juice. It wouldn't be a bad plan to seed them to keep the salad from getting too juicy the next day. Make small dice out of the cucumber. In a large bowl , combine chopped tomatoes, diced cucumbers, shredded crab and 1/4 cup diced green onion.
- In a small bowl, combine 1/2 cup mayo and 3 pressed cloves of garlic. Add the dressing to the crab salad to taste. You can add more mayo if you like a juicier salad. Refrigerate until ready to serve.
