CLASSIC VICHYSSOISE



Classic Vichyssoise image

Very simple recipe that tastes great. What could be better? Serve cold or warm.

Number Of Ingredients 10

1 tablespoon butter
3 leeks, bulb only, sliced into rings
1 onion, sliced
5 potatoes, peeled and thinly sliced
salt and pepper to taste
¼ teaspoon dried thyme
½ teaspoon dried marjoram
1 bay leaf
5 cups chicken broth
¼ cup heavy whipping cream

Steps:

  • In a large stock pot melt butter over low heat. Add leeks and onion, cover, and cook for 10 minutes.
  • Add potatoes and season with salt and pepper. Add thyme, marjoram, bay leaf and stir well. Cover pot and continue to cook for 12 minutes.
  • Add chicken stock and bring to a boil, reduce heat and cook, partially covered for 30 minutes.
  • Puree soup in blender or food processor and cool.
  • Prior to serving add cream. If you are serving this soup warm you need to reheat the soup slowly so that the cream does not change consistency.

1/2 cup apple cider vinegar
3 cloves garlic, minced
1/3 cup chopped red onion
1/3 cup chopped celery
1/2 teaspoon black pepper
3 to 4 shakes hot red pepper sauce
Two 15.8-ounce cans black eyed peas, drained and rinsed well

Steps:

  • Combine all ingredients except peas. Pour mixture over the peas and toss gently. Refrigerate overnight. Toss before serving. Can be held for up to a week.

1 pound frozen purple hull peas
1 pound frozen baby lima beans
3/4 cup shoepeg corn kernels
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 red onion, diced
1 small jalapeño, seeded and finely diced
1/3 cup loosely packed finely chopped fresh cilantro
Dressing, recipe follows
1/3 cup olive oil
2 tablespoons red wine vinegar
2 tablespoons lime juice
1 teaspoon sugar
1 teaspoon garlic salt
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper

Steps:

  • Boil the purple hull peas in salted water until tender, then drain and cool. Meanwhile, boil the lima beans in salted water until tender, then drain and cool.
  • Combine the corn, purple hull peas, lima beans, red bell peppers, green bell peppers, red onion, jalapeño and cilantro in a large bowl. Add the Dressing and toss together. Taste and adjust the seasoning as necessary. If time allows, marinate the caviar in the fridge for an hour.
  • Whisk together the olive oil, red wine vinegar, lime juice, sugar, garlic salt, oregano, olive oil and salt and pepper to taste in a bowl.

1/2 cup vinegar
1/2 cup oil
3 cans black-eyed peas, drained and rinsed
1 can niblet corn, such as Green Giant Mexicorn, drained and rinsed
2 green bell peppers, chopped
1 medium onion, chopped
1 red bell pepper, chopped

Steps:

  • In a small pot, heat the sugar and vinegar. Once the sugar dissolves, remove from the heat and add the oil. Mix well.
  • In a bowl, mix the black-eyed peas, corn, green bell peppers, onions and red bell peppers and toss with the dressing. Place in the fridge until ready to eat.

1/3 cup red wine vinegar
1 teaspoon black pepper

Steps:

  • Mix all ingredients thoroughly in a large bowl. Chill in the refrigerator for 24 hours, stirring occasionally. Stir again before serving.

Watercress Vichyssoise image

1/2 onion, diced
1 large all-purpose potato, like long whites, diced
4 tablespoons butter
1 bunch watercress, chopped
2 1/2 cups chicken stock
Salt and freshly ground black pepper
Heavy or sour cream
4 tablespoons chopped chives

Steps:

  • Lightly saute the onion and potato in the butter. Add the watercress, chicken stock and salt and pepper, to taste. Bring to a boil and simmer until the potatoes are cooked through, about 15 minutes. Puree mixture in blender until smooth.
  • Bring to room temperature and then refrigerate. Serve chilled. Before serving, lightly stir in cream or sour cream and garnish with chopped chives.
