1 tablespoon olive oil
½ medium onion, chopped
2 bay leaves
1 teaspoon ground cumin
2 tablespoons dried oregano
1 tablespoon salt
2 stalks celery, chopped
2 green bell peppers, chopped
2 jalapeno peppers, chopped
3 cloves garlic, chopped
2 (4 ounce) cans chopped green chile peppers, drained
2 (12 ounce) packages vegetarian burger crumbles
3 (28 ounce) cans whole peeled tomatoes, crushed
¼ cup chili powder
1 tablespoon ground black pepper
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can garbanzo beans, drained
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn

Steps:

  • Heat the olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers. When vegetables are heated through, mix in the vegetarian burger crumbles. Reduce heat to low, cover pot, and simmer 5 minutes.
  • Mix the tomatoes into the pot. Season chili with chili powder and pepper. Stir in the kidney beans, garbanzo beans, and black beans. Bring to a boil, reduce heat to low, and simmer 45 minutes. Stir in the corn, and continue cooking 5 minutes before serving.

1 onion, chopped
2 garlic cloves, crushed
1/2 red chile, deseeded and chopped
300 ml vegetable stock
1 tablespoon paprika
1 tablespoon tomato puree
1 potato, peeled and cubed
2 carrots, chopped
1 courgette, chopped
115 g green beans, sliced (optional)
1 red pepper
1 green pepper, deseeded and chopped
400 g whole canned tomatoes, chopped
400 g canned red kidney beans
black pepper
chopped fresh coriander (to garnish)

Steps:

  • Saute the onion, garlic and chilli in a little of the stock for about 5 minutes Stir in the paprika and tomato puree.
  • Stir in the vegetables and add the chopped tomatoes and the rest of the stock. Bring to the boil, reduce the heat and simmer for about 15 minutes.
  • Add the beans and simmer for a further 10 minutes.
  • Season with black pepper. Garnish with fresh coriander and serve with fresh-made tomato salsa!

  • Heat the oil in a large pot over medium heat. Cook and stir the garlic, onion, and carrots in the pot until tender. Mix in the green bell pepper and red bell pepper. Season with chili powder. Continue cooking 5 minutes, or until peppers are tender.
  • Mix the mushrooms into the pot. Stir in the tomatoes with liquid, black beans with liquid, kidney beans with liquid, pinto beans with liquid, and corn. Season with cumin, oregano, basil, and garlic powder. Bring to a boil. Reduce heat to medium, cover, and cook 20 minutes, stirring occasionally.
