Time 1h

Yield 6 to 9 servings

Number Of Ingredients 14

2 tablespoons unsalted butter, melted, plus additional for buttering the baking dish
5 cups mixed berries, such as raspberries, blackberries and blueberries
3/4 cup granulated sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1 tablespoon unsalted butter, melted
1 large egg, lightly beaten
Whipped cream, for serving

Steps:

  • For the filling: Preheat the oven to 375 degrees F. Lightly grease an 8-inch square baking dish or 9-inch cast-iron skillet with butter.
  • Put the berries in a large bowl, then add the granulated sugar, flour, cinnamon, vanilla, salt and butter and toss together until well coated. Pour into the baking dish. Set aside.
  • For the batter: Whisk together the flour, granulated sugar, baking powder, salt, butter and egg in a bowl to form a stiff batter. Drop the batter by the spoonful over the prepared berries, then bake until golden and bubbling at the edges, about 35 minutes. Let cool slightly before serving. Serve with whipped cream.

VERY BERRY VERY SIMPLE COBBLER

Very Berry Very Simple Cobbler image

This berry cobbler is so simple, yet taste like you've spent hours on it. Recipes don't have to be complicated to taste great. It's a quick dessert for the middle of the week, especially when it's cold outside.

Categories     Fruit Desserts

Number Of Ingredients 5

1 cup(s) flour (plain)
1 cup(s) sugar
1 large egg
4 cup(s) frozen blackberries or blueberries (or a mix of the two)
6 tablespoon(s) melted butter

Steps:

  • Mix 1 cup flour and 1 cup sugar until well blended.
  • Beat 1 eggs and add to flour and sugar mixture. Using a fork, work the egg into the flour and sugar until it resembles course meal.
  • Put the frozen berries in a 8 x 11 casserole dish. You can spray the disk with a non-stick spray but I find it unnecessary when using a glass casserole dish.
  • Sprinkle the flour crumb mixture over the berries, covering well.
  • Drizzle the melted butter over the crumb mixture and put into a pre-heated 350 degree oven for 40 minutes or until top is golden.
  • Serve warm with a scoop of your favorite vanilla ice cream.

Time 50m

Yield 6

Number Of Ingredients 13

2 ½ cups fresh or frozen blueberries
1 teaspoon vanilla extract
½ lemon, juiced
1 cup white sugar, or to taste
½ teaspoon all-purpose flour
1 tablespoon butter, melted
1 ¾ cups all-purpose flour
4 teaspoons baking powder
6 tablespoons white sugar
5 tablespoons butter
1 cup milk
2 teaspoons sugar
1 pinch ground cinnamon

Steps:

  • Lightly grease an 8 inch square baking dish. Place the blueberries into the baking dish, and mix with vanilla and lemon juice. Sprinkle with 1 cup of sugar and 1/2 teaspoon of flour, then stir in the tablespoon of melted butter. Set aside.
  • In a medium bowl, stir together 1 3/4 cups of flour, baking powder, and 6 tablespoons sugar. Rub in the 5 tablespoons butter using your fingers, or cut in with a pastry blender until it is in small pieces. Make a well in the center, and quickly stir in the milk. Mix just until moistened. You should have a very thick batter, or very wet dough. You may need to add a splash more milk. Cover, and let batter rest for 10 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Spoon the batter over the blueberries, leaving only a few small holes for the berries to peek through. Mix together the cinnamon and 2 teaspoons sugar; sprinkle over the top.
  • Bake for 20 to 25 minutes in the preheated oven, or until the top is golden brown. A knife inserted into the topping should come out clean - of course there will be blueberry syrup on the knife. Let cool until just warm before serving. This can store in the refrigerator for 2 days.
