I first made this recipe when my husband and I had to start watching our diet. Since then, I've been asked to make my turkey meat loaf many times. -Ruby Rath, New Haven, Indiana

Number Of Ingredients 12

1 cup quick-cooking oats
1 medium onion, chopped
1/2 cup shredded carrot
1/2 cup fat-free milk
1/4 cup egg substitute
2 tablespoons ketchup
1 teaspoon garlic powder
1/4 teaspoon pepper
2 pounds lean ground turkey
TOPPING:
1/4 cup ketchup
1/4 cup quick-cooking oats

Steps:

  • Preheat oven to 350°. Combine first 8 ingredients. Add turkey; mix lightly but thoroughly., Transfer to a 9x5-in. loaf pan coated with cooking spray. Mix topping ingredients; spread over loaf. Bake until a thermometer reads 165°, 60-65 minutes. Let stand 10 minutes before slicing.

We have been using ground turkey in place of ground beef for a while now, and I am always on the lookout for new recipes. I found this in the 2012 "Taste of Home" cookbook (if you don't own it, BUY IT NOW!) and decided to give it a try. It is a thick, dense meatloaf that is loaded with hidden veggies. Even my husband made a comment that he couldn't tell they were in there. The sauce on top also gives is a sweet tanginess that adds to the appeal. It is New England comfort food at it's best! Number Of Ingredients 9

2/3 cup chopped onion
2/3 cup chopped fresh mushrooms
2/3 cup chopped carrot
2/3 cup dry breadcrumbs
1/2 teaspoon salt
1/2 teaspoon pepper
1 lb lean ground turkey
2 tablespoons maple syrup
2 teaspoons Dijon mustard

Steps:

  • In a large skillet coated with cooking spray, saute the onion, mushrooms and carrot until tender.
  • Remove from heat and cool slightly.
  • In a large bowl, combine the vegetables, bread crumbs, salt and pepper.
  • Crumble turkey over mixture and mix well.
  • Pat into a greased 9x5 inch loaf pan.
  • Bake, uncovered, at 375 for 35 minutes.
  • Combine syrup and mustard; pour half over the turkey loaf.
  • Bake 5-10 minutes longer or until a meat thermometer reads 165 and juices run clear.
  • Serve with remaining syrup mixture.

2 tablespoons olive oil
2 small onions, 1 finely chopped and 1 cut into half-moon slices
3 tablespoons fresh parsley, chopped
1 1/2 pounds dark meat ground turkey
3/4 cup plus 3 tablespoons seasoned breadcrumbs
1 large egg
1/4 cup plus 3 tablespoons ketchup
1 teaspoon kosher salt, plus more for sprinkling
1 teaspoon freshly ground black pepper, plus more for sprinkling

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat 1 tablespoon oil in a small skillet over medium-low heat until hot but not smoking. Add the chopped onion and saute until softened and brown, about 6 minutes. Add the parsley and cook for another minute. Set aside.
  • In a large mixing bowl, combine the turkey with the breadcrumbs, egg, 1/4 cup of the ketchup, cooked onion mixture, salt and pepper. Mix until fully combined. Form into a loaf and transfer to a 9-by-5-inch loaf pan. Using a pastry brush or the back of a spoon, brush the remaining 3 tablespoons of ketchup over the loaf.
  • Evenly scatter the sliced onions over the loaf, drizzle with the remaining tablespoon of oil and sprinkle with salt and pepper. Bake until the meatloaf is cooked through, 55 to 60 minutes.

A slightly lighter version of the all-American classic, this satisfying meatloaf uses chicken broth and soaked panko to stay moist, and a mix of fresh herbs for flavor. It's the best turkey meatloaf you'll find!

1/4 cup olive oil
1 large onion, chopped
2 teaspoons fresh thyme leaves
1 teaspoon minced fresh sage
Kosher salt and freshly ground black pepper
2 cloves garlic, grated
1 tablespoon tomato paste
3 tablespoons Worcestershire sauce
3/4 cup panko breadcrumbs
1/2 cup chicken broth
3 pounds ground turkey
2 large eggs
1/2 cup ketchup

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
  • Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined. Form the mixture into a 10-by-5-inch loaf on the foil-lined baking sheet. Coat the top and sides with the ketchup.
  • Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.

3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
  • Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

1 egg, lightly beaten
1 onion, chopped
1 ½ cups bread crumbs, or as needed
2 teaspoons salt
ground black pepper to taste
1 tablespoon poultry seasoning

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix the turkey, egg, onion, and bread crumbs. Adjust the amount of bread crumbs as needed to make a stiff mixture. Season with salt and pepper. Transfer the mixture to a 9x5 inch loaf pan, and sprinkle with poultry seasoning.
  • Bake 1 1/2 hour in the preheated oven, or until meat is cooked through and the internal temperature is at least 170 degrees F (70 degrees C) when taken with a meat thermometer.

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

1 ½ pounds ground turkey
¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped
1 egg
1 ½ teaspoons salt
2 cloves garlic, minced

1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
