COZZE AL FORNO

1/4 cup plus 2 tablespoons olive oil
1/4 cup diced prosciutto, about half of a thick slice
2 cloves garlic, peeled and chopped
3/4 cup bread crumbs
1/4 cup fresh Italian parsley, chopped
1/2 cup freshly grated Parmesan, divided
2 tablespoons olive oil
1 clove garlic, smashed and peeled
1 pound mussels, cleaned
1/2 cup dry white wine
Lemon wedges, for serving

Steps:

  • For the filling: Heat a small skillet over medium heat. Add 1/4 cup olive oil and the prosciutto and cook, stirring often, until the prosciutto is crispy, about 3 minutes. Add the garlic and stir. Remove the skillet from the heat and cool slightly, about 5 minutes. Add the bread crumbs and toss in the oil to coat. Stir in the parsley and 1/4 cup of Parmesan.
  • Meanwhile, for the mussels: Heat a large Dutch oven over medium-high heat. Add the olive oil and garlic and cook, stirring often, until the garlic is lightly browned, about 2 minutes. Add the mussels and white wine. Cover and give the pot a shake. Cook, shaking occasionally, until the mussels have just opened, 2 to 3 minutes. Discard any unopened mussels.
  • Position a rack in the top third of the oven. Preheat the broiler to high.
  • Discard the top shells of the mussels and loosen the mussel meat from the bottom shell. Leave the meat in the shell and arrange on a rimmed baking sheet. Using a small spoon, pack the filling in each of the mussel shells. Drizzle with remaining 2 tablespoons olive oil and top with the remaining 1/4 cup Parmesan. Broil until the filling is golden and the cheese is melted, 1 to 2 minutes. Serve with lemon wedges if desired.

Extra-virgin olive oil, for cooking
1 to 2 cloves garlic, minced
One to two 28-ounce cans marinara sauce
1 bunch fresh basil
Salt and pepper
4 cups all-purpose flour, or more as needed
6 eggs
1 pound ground beef
1 pound ground pork
1 pound ground veal
1/2 cup panko, or more as needed
1 tablespoon grated Parmesan
3 pinches kosher salt
3 pinches ground black pepper
2 eggs
Canola oil, for frying
2 cups fresh ricotta
2 cups shredded mozzarella
Kosher salt

Steps:

  • For the sauce: Cover the bottom of a medium saucepan with oil and garlic and cook over medium heat until garlic browns. Add sauce, basil, salt and pepper. Cook on medium heat for 15 minutes.
  • For the pappardelle pasta: Make a bed of all-purpose flour, then make a well and add eggs. Fold all together, adding in more flour if needed, and knead until a dough ball is formed, then set aside and cover for 30 minutes.
  • Run dough through a pasta sheeter to form pappardelle pasta (broad flat noodles).
  • For the meatballs: Combine the beef, pork, veal, panko, Parmesan, salt, pepper and eggs in a bowl. Mixture should be on the drier side. If need be, add more panko. Form quarter-size meatballs. Heat a medium frying pan with oil and fry each meatball to a golden brown color.
  • For the pasta al forno: Preheat the oven to 350 degrees F.
  • Add sauce to a 9-by-13-inch baking dish, along with the ricotta. Stir together, then add mozzarella and the meatballs. Let the cheese melt down.
  • Meanwhile, drop the pasta into boiling salted water for about 7 minutes. Strain and add to the baking dish. Mix around, then bake in oven for 10 minutes.

CAPELLINI AL FORNO

6 tablespoons unsalted butter, diced, at room temperature, plus extra for greasing pan
1 pound capellini (angel hair) pasta
1 cup plus 1/2 cup grated Parmesan
3 eggs, at room temperature, beaten
3/4 cup chopped fresh flat-leaf parsley
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 cup plain breadcrumbs
1 pound prosciutto, sliced 1/8-inch thick and coarsely chopped
2 cups (8 ounces) shredded smoked mozzarella
3 tablespoons olive oil
1 (25-ounce) jar marinara or tomato-basil sauce, warmed

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-inch diameter nonstick spring form pan. Set aside.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 4 to 5 minutes. Drain well and place in a large bowl. Add 4 tablespoons butter, 1 cup Parmesan, eggs, parsley, salt and pepper. Toss well until coated.
  • Sprinkle 1/4 cup breadcrumbs in the bottom of the prepared pan. Spread 1/3 of the seasoned pasta on top. Arrange half of the prosciutto in a single layer on top. Sprinkle half of the mozzarella on top. Add 1/3 of the pasta and push down lightly to form an even layer. Repeat the layers with 1/4 cup breadcrumbs, the remaining pasta, prosciutto, and mozzarella. In a small bowl, mix the remaining 1/2 cup breadcrumbs and Parmesan together. Sprinkle over the layers and dot with the remaining 2 tablespoons butter. Drizzle with olive oil and bake until light golden on top, 45 to 50 minutes. Cool for 10 minutes.
  • Remove the sides of the pan and cut the pasta into wedges. Serve with warm marinara sauce.

2 tablespoons extra-virgin olive oil
2 cloves garlic, smashed
1/2 teaspoon chili flakes
Freshly ground black pepper
Salt
1 pound penne lisce pasta (smooth-sided penne)
1 red onion, minced
8 ounces organic ground sirloin
4 cups San Marzano tomatoes, hand crushed
1/4 cup fresh parsley leaves, minced
1/2 teaspoon dried oregano
1/2 teaspoon raw sugar
1 bay leaf
1/2 teaspoon sea salt
1 tablespoon unsalted butter
1 cup grated mozzarella
1/2 cup grated Parmigianno

Steps:

  • For the bolognese: Heat the oil in large saucepan over medium heat. Add the garlic and chili flakes, and fry until golden, about 1 minute. Add the onions and saute until the edges are crispy, 8 to 10 minutes. Throw in the sirloin and saute for 5 minutes until the beef is crumbled. Add the San Marzano tomatoes, fresh parsley, oregano, raw sugar, bay leaf, sea salt and some pepper. Stir and simmer for 20 minutes.
  • For the pasta: Bring salted water to a boil. Throw in the pasta and cook until almost al dente, 8 to 9 minutes. Drain. To assemble: Preheat the oven to 350 degrees F. Grease a 15-by-10-inch baking dish, 2-to-3-inches deep, with the butter. In a bowl, mix the pasta with half the bolognese sauce. Lay down a thin layer of pasta, 1/4 cup sauce, 1/3 cup mozzarella and 1 tablespoon Parmigianno. Repeat until all the pasta is used. Top off with mozzarella. Place in the oven and bake until the edges are golden and bubbling, about 30 minutes.

2 teaspoons extra-virgin olive oil
5 medium zucchini (about 1 1/2 pounds total), cut crosswise into 1-inch-thick slices
1/2 teaspoon salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
1 cup heavy cream
1 cup grated mozzarella cheese
1 cup grated fontina cheese
6 tablespoons grated Pecorino Romano cheese
1 cup plain dried bread crumbs

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with foil. Coat the bottom of an 8-inch square baking dish with the oil. Arrange enough of the zucchini slices over the bottom of the dish in a single layer to cover. Sprinkle with one third of the salt and pepper. Pour 1/3 cup of the heavy cream over the zucchini and sprinkle with 1/3 cup each of mozzarella cheese and fontina cheese.
  • Sprinkle with 2 tablespoons of Pecorino Romano cheese, then with 1/3 cup of bread crumbs. Repeat layering the ingredients two more times. (The vegetables can be assembled 8 hours ahead. Cover and refrigerate. Bring to room temperature before proceeding.) Place the baking dish on the baking sheet and bake uncovered until golden brown on top and the sauce bubbles, about 40 minutes. Serve immediately.

2 tablespoons extra virgin olive oil
5 medium zucchini, sliced lengthwise 1/4-inch thick (about 1 1/2 lbs)
1 cup heavy cream
1 cup shredded mozzarella cheese
1 cup shredded Fontina cheese
1/4 cup grated romano cheese (pregrated)
1 cup plain dried breadcrumbs
4 tablespoons unsalted butter

Steps:

  • Preheat oven to 375 degrees.
  • Coat bottom of 9X13" baking dish with EVOO. Arrange zucchini slices on the bottom of the dish and season with salt and freshly ground black pepper. Okay if zucchini slices overlap.
  • Evenly pour 1/3 cup heavy cream and sprinkle with 1/3 cup mozzarella, 1/3 cup Fontina, and 2 tablespoons of Romano. Sprinkle with 1/3 cup of bread crumbs. Repeat layers.
  • My own variation: Giada dotted bread crumb topping with cold butter. I suggest: Melt 4 tablespoons butter and blend with last 1/3 cup of bread crumbs to sprinkle over top of gratine. I don't like plain dry bread crumb toppings and I think the top will brown and crisp up much better this way.
  • Line baking sheet with aluminum foil. Place gratine on top and place in oven. Bake for 40 minutes or until bubbling and top is golden brown.

LASAGNE VERDI AL FORNO

A recipe from my home in Emilia-Romagna, Italy; this lasagna made with spinach pasta cannot be beat. It's excellent if you want to impress some guests, or even yourself. It may be a bit time consuming, but it's well worth the TLC you put into it.

5 ounces spinach - rinsed, stemmed, and dried
2 eggs
⅝ cup semolina flour
1 teaspoon salt
1 ½ cups all-purpose flour
2 tablespoons butter
2 slices bacon, diced
1 carrot, diced
1 stalk celery, diced
1 onion, diced
3 ½ ounces lean ground pork
3 ½ ounces lean ground beef
3 ½ ounces minced ham
2 tablespoons tomato paste
1 teaspoon dried oregano
1 cup beef stock
salt and pepper to taste
3 ½ ounces chicken livers, trimmed and chopped
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups warm milk
1 pinch salt
1 pinch ground nutmeg
1 ⅔ cups grated Parmesan cheese
1 pint ricotta cheese
3 tablespoons butter

Steps:

  • For the pasta dough: Steam the spinach in a steamer or over boiling water until bright green, 2 minutes. Squeeze to remove excess moisture and process in a food processor to make a paste. Combine spinach with eggs, semolina, and salt and process until smooth. Stir in enough of the flour to make a smooth dough. Knead briefly, cover and set aside.
  • For the ragu: In a large skillet, melt butter over medium-high heat. Saute bacon, carrot, celery and onion until onion is translucent. Stir in ground pork, ground beef and minced ham, and cook until browned. Stir in tomato paste, oregano and beef stock. (Reserve the chicken livers for later.) Season with salt and pepper, reduce heat to low, cover and simmer 20 minutes.
  • For the bechamel: While the ragu is simmering, combine 2 tablespoons butter and 2 tablespoons flour in a medium saucepan over medium-low heat. Whisk to make a roux. Remove from heat, let rest one minute, then whisk in warm milk. Return to heat, simmer 10 minutes, stirring constantly, until thickened. Season with salt and nutmeg. Remove from heat.
  • To cook pasta: Bring a large pot of lightly salted water to a boil. On a floured surface, divide pasta dough into three portions. Roll each portion out to a thin sheet. Have ready an ice water bath. Cook each sheet 3 minutes in the boiling water; remove from the boiling water and dip in the ice water; drain and dry on a clean, dry cloth.
  • To finish the ragu: Stir the chicken livers into the simmering sauce. Cook 1 minute, remove from heat and set aside.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 baking dish.
  • To assemble lasagna: Place one pasta sheet in bottom of prepared baking dish. Spread one-third of the ragu, one-quarter of the bechamel, one-third of the ricotta, and one-quarter of the parmesan over the pasta. Repeat layers twice. Top with remaining bechamel and parmesan and dot with butter.
  • Bake in preheated oven 30 minutes, until top is golden brown.

6 medium zucchini (about 1 lb.)
coarse salt
1 lb spinach, washed
1 medium onion, chopped
5 tablespoons olive oil (and a little more for the baking dish)
3 garlic cloves, minced
1/2 cup grated parmesan cheese
2 tablespoons grated parmesan cheese
2 eggs, lightly beaten
2 tablespoons chopped fresh parsley or 2 tablespoons fresh basil
1 cup cooked garbanzo beans
freshly ground pepper

Steps:

  • Cut the zucchini into 1/2-inch dice; place in a colander; salt, and drain for 20 minutes.
  • Cut off any long stems from the spinach.
  • Cook spinach with water that clings to the leaves in a pot, along with a little salt just until the spinach wilts; drain and let cool.
  • Squeeze out the excess water and coarsely chop.
  • Gently saute the onion in 3 tablespoons of olive oil in a skillet over low heat for 20 minutes or until the onion is soft and pale gold.
  • Meanwhile, pat the zucchini dry with paper towels; add to the onions, and saute for 10 minutes.
  • Add the spinach and garlic and saute for an additional 2-3 minutes.
  • Turn into a bowl and let cool.
  • Combine the vegetables with 1/2 cup Parmesan, eggs, parsley, garbanzo beans, salt, and pepper.
  • Lightly oil a shallow, round baking dish; fill dish with the spinach mixture.
  • Sprinkle the top with 2 tablespoons Parmesan and drizzle with 2 tablespoons olive oil.
  • Bake in a preheated 375° oven for 45 minutes to 1 hour or until a golden crust has formed.
  • Let cool; serve at room temperature.

5 medium zucchini, sliced 1/4 inch thick lengthwise (or yellow squash)
1 tablespoon salt
1 tablespoon pepper
1 cup heavy cream
1 cup grated mozzarella cheese
1 cup grated fontina
1/4 cup grated romano cheese
1 cup plain breadcrumbs
4 tablespoons unsalted butter

Steps:

  • Preheat oven to 375 degrees.
  • Using the 2 T. extra virgin olive oil coat the bottom of a 9 X 13 inch baking dish.
  • Arrange 1/3 of the zucchini slices on the bottom of the dish and season with a little salt and pepper (most likely you will NOT use the full 1 T of each).
  • Evenly pour 1/3 of the heavy cream.
  • Sprinkle with 1/3 of the mozzarella.
  • Sprinkle with 1/3 of the fontina.
  • Sprinkle with 2 T of the romano.
  • Repeat layers.
  • Top with the bread crumbs. (use fine dried).
  • Dot the bread crumbs with the unsalted butter.
  • To prevent spillage/smoke line a baking sheet with heavy duty foil and place prepared dish on this.
  • Bake for 40 minutes until bubbling and top golden brown.
  • Allow to stand for 5 minutes before cutting into it.

  • Wash and clean the vegetables, cut them in the format you prefer, I have cut the zucchini in half and then lengthwise, making slices almost half inch (1cm) thick.
