Green Tomato Relish image

This delicious, tangy relish of green tomatoes, onions, bell peppers, and spices, is perfect with sandwiches, potatoes, cheese, and lots of other entrees. A jar of this makes a great gift, too!

24 large green tomatoes
3 red bell peppers, halved and seeded
3 green bell peppers, halved and seeded
12 large onions
3 tablespoons celery seed
3 tablespoons mustard seed
1 tablespoon salt
5 cups white sugar
2 cups cider vinegar

Steps:

  • In a grinder or food processor, coarsely grind tomatoes, red bell peppers, green bell peppers, and onions. (You may need to do this in batches.) Line a large colander with cheesecloth, place in sink or in a large bowl, and pour in tomato mixture to drain for 1 hour.
  • In a large, non-aluminum stockpot, combine tomato mixture, celery seed, mustard seed, salt, sugar, and vinegar. Bring to a boil and simmer over low heat 5 minutes, stirring frequently.
  • Sterilize enough jars and lids to hold relish (12 one-pint jars, or 6 one-quart jars). Pack relish into sterilized jars, making sure there are no spaces or air pockets. Fill jars all the way to top. Screw on lids.
  • Place a rack in the bottom of a large stockpot and fill halfway with boiling water. Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Pour in more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
  • Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid does not move up or down at all). Relish can be stored for up to a year.

This is a very easy relish that my mom always makes. Now that I have my own garden I make it myself. This goes well with fried catfish, beans, or any other southern dish. My wife likes it straight from the jar with crackers.

Number Of Ingredients 6

1 gallon chopped green tomato
3 cups sugar
3 lbs chopped onions
1/2 lb chopped hot green pepper
1 1/2 quarts vinegar
1/3 cup salt

Steps:

  • Wash tomatoes, cut into chunks. Place tomatoes, sugar, onion, peppers,vinegar and salt into large cooking pot. Mix well and simmer over medium heat, stirring until tomatoes turn from green to brownish and steam begins to form. Do not over cook. Do not Boil.
  • Pack into hot canning jar and seal, in a hot water canner. Bath in hot water bath for about 20 minutes. Take out and allow to cool for about 8-10 hours. Check for proper sealing, if some have not sealed put in fridge and enjoy when cold.

VERA'S GREEN TOMATO RELISH

This is easily the best relish recipe I have ever tried. We enjoy it so much that last year we used the first of the year tomatoes in it, instead of waiting for the end of the season. The recipe was passed down to me by my husband's grandma Vera. I remember this making 4-quart jars, but it may make more. I do a lot of canning all at once, and I didn't pay attention to how many jars it made per batch. I know it will keep for 1 year, but we have never had a batch last longer than that--we eat this stuff on everything. Time includes soaking time.

4 quarts green tomatoes, cored and chopped
2 quarts cabbage, chopped
2 cups red bell peppers, chopped
1 cup onion, chopped
1/2 cup salt
1 1/2 cups brown sugar, packed
2 tablespoons mustard seeds
1 tablespoon celery seed
4 1/2 cups vinegar, I prefer cider

Steps:

  • Sprinkle salt over vegetables, mix well and let stand for 3 to 4 hours.
  • Drain liquid from the veggies, pressing to remove any excess.
  • Simmer sugar, spices and vinegar for 15 minutes.
  • Add veggies and heat to boiling.
  • Pack in cans and seal by your method of choice.

4 cups red peppers or 4 cups green peppers, chopped
2 cups onions, chopped
3 cups vinegar
6 cups sugar
1 tablespoon mustard seeds
1 tablespoon celery seed
4 tablespoons pickling salt (not iodized)

Steps:

  • Mix tomatoes, onion, pepper and salt, let stand 1 hour.
  • Drain well and add remaining ingredients (tie spices in cheesecloth).
  • Bring to a boil and simmer 20 minutes.
  • Pour into sterilized jars and seal.
  • Process in boiling water bath 20 minutes.
