FARMERS MARKET VEGGIE QUESADILLA

Farmer's Market Veggie Quesadillas loaded up with fresh seasonal veggies, black beans, Mexican spices and herbs. Vegan-adaptable!

2 tablespoons olive oil
1/2 an onion, diced (1 cup)
4 garlic cloves, rough chopped
4 cups finely chopped veggies: bell pepper, zucchini, summer squash, mushrooms, broccoli, sweet potato, corn, etc. ( Chop the veggies small, so they cook faster!)
1/2 teaspoon salt
1 teaspoon dried oregano
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon chili powder
1-2 cups chopped greens- beet greens, turnip greens, spinach, chard, etc.
1 cup black beans (cooked or canned)
2 tablespoons water
1/4 cup cilantro, chopped- optional
1 teaspoon lime zest- optional
1/4 cup sour cream (or yogurt)
2-3 tablespoons hot sauce (fermented hot sauce is great here)

Steps:

  • Preheat the oven to 400F (or preheat grill to medium)
  • Heat oil in an extra-large skillet over medium-high heat. Add the onion and garlic, saute 3-4 minutes until fragrant. Lower heat to medium, and add the chopped veggies and salt. Stir occasionally until the veggies soften (check) and release their liquid, about 10 minutes (lower heat if need be). Add the oregano, cumin, coriander, chili powder and give a good stir. Add the chopped greens and black beans and a couple of tablespoons of water, and stir until the greens wilt 1-2 minutes. Turn heat off. Stir in optional cilantro and lime zest.
  • Scatter 1/2 cup cheese over the whole tortilla. Add one cup of veggie filling over half of the tortilla. Fold the Tortilla in half so the filling is encased with cheese (see photo). Brush the outer side of the tortilla with oil, and place in a hot oven for 15 minutes. You can place the greased quesadilla directly on the oven grates, or on a parchment-lined sheet pan, flipping halfway through. Bake until tortilla is crispy and cheese is melty.
  • Cut each into 4 pieces and serve with the Spicy Sour Cream and Pico De Gallo
  • To make the spicy sour cream- simply mix a few tablespoons of hot sauce with the sour cream in a little bowl.

Making the most of simple, fresh ingredients found at your local Farmer's Market, these quesadillas make great appetizers or a quick and healthy meal. Serve while hot with your favorite salsa, sour cream, and guacamole.

½ cup chopped red bell pepper
½ cup chopped zucchini
½ cup chopped yellow squash
½ cup chopped red onion
½ cup chopped mushrooms
1 tablespoon olive oil
cooking spray
6 (9 inch) whole wheat tortillas
1 ¼ cups shredded reduced-fat sharp Cheddar cheese

Steps:

  • In a large nonstick pan, cook red pepper, zucchini, yellow squash, onion, and mushrooms in olive oil over medium to medium-high heat for about 7 minutes, or until just tender. Remove vegetables from pan.
  • Coat the same pan with cooking spray, and place one tortilla in pan. Sprinkle 1/4 cup of cheese evenly over tortilla, and layer 3/4 cup of the vegetable mixture over the cheese. Sprinkle another 1/8 cup of cheese on the vegetables, and top with a second tortilla. Cook until golden on both sides, for approximately 2 to 3 minutes per side. Remove quesadilla from pan, and repeat with remaining ingredients. Cut each quesadilla into 8 triangles with a pizza cutter. Serve hot.

This was inspired by a Bush's recipe I picked up in the grocery, which I adapted to our tastes :) Use your favorite barbecue sauce!

1 plum tomato, chopped
1/2 cup corn kernel (thawed, if using frozen)
1 (15 ounce) can black beans, rinsed and drained
1 small onion, chopped
1/3 cup barbecue sauce
1 1/2 cups reduced-fat cheddar cheese, shredded
8 (8 inch) tortillas
2 tablespoons cilantro, chopped (optional)

Steps:

  • Combine tomato, corn, black beans, onion, barbecue sauce, and cheese, mixing well.
  • Spread equal amounts of mixture onto half of each tortilla. Fold over and press gently to close.
  • Place two quesadillas in a nonstick pan heated over medium heat and cook until the tortilla is crisp, about 4 minutes, and then flip and cook the other side until crisp, about 4 minutes. Repeat with all quesadillas, adding a little oil or cooking spray, if necessary.
  • Cut quesadillas into triangles and garnish with cilantro before serving.
  • Serve with guacamole, salsa, or sour cream!

1/2 cup salsa
1/2 cup cheddar cheese (or monterey jack cheese)
1/4 cup monterey jack pepper cheese
2 veggie burgers (i used morning star slicy black bean burgers)
2 tablespoons southwest seasoning (i used taco seasoning) or 2 tablespoons Mexican seasoning (i used taco seasoning)
10 tortillas (for more authentic flavor, i used a jalapano cheddar tortilla)
2 tablespoons red bell peppers (finely chopped) or 2 tablespoons green bell peppers (finely chopped)
2 1/2 cups lettuce leaves (oprional)
1 tablespoon butter (melted for basting tortillas)
toothpick (for pinning tortillas together)

Steps:

  • Preheat oven to 375 degrees.
  • break uncooked burgers into small bite size pieces.
  • in a medium bowl toss together burger bits, salsa, cheddar cheese, pepper jack cheese and seasoning.
  • take tortillas and cut them into 6 pieces (as if cutting it like a pizza or pie).
  • place about 2 tablespoons of burger mixture into the center of tortilla slices.
  • fold corners of the tortilla so that they overlap one another and pin closed with a tooth pick.
  • place triangle onto baking sheet with toothpick side up.
  • take the melted butter and brush over each individual triangle.
  • bake at 375 degrees for 9 - 12 minutes, or until golden bown on top.
  • arrange triangles over lettuce and sprinkle bel peppers and cheese on top for looks.
  • serve and enjoy!
  • **Note: to thaw, place in microwave and cook for 30 seconds.

  • Heat 1 tablespoon olive oil over medium-high heat in a large non-stick sauté pan. Add sweet potato and sauté for 5-6 minutes, stirring occasionally, until cooked through. Transfer to a separate plate and set aside.
  • Add the remaining 1 tablespoon oil to the pan. Add the veggies and jalapeño, and sauté for 4-5 minutes. Stir in the cooked sweet potato, black beans, cumin, chili powder, a generous pinch of salt and black pepper, and sauté for 2 more minutes. Taste and add more salt, pepper and/or cumin if needed. Transfer the mixture to a large bowl and set aside. Rinse (or just wipe off) the sauté pan until it is clean.
  • Return the sauté pan to the stove, and reduce heat to medium. Place a tortilla* in the center of the pan and immediately sprinkle your desired amount of cheese evenly over the surface of the tortilla. Add a few large spoonfuls (about 1 cup) of the veggie mixture on one half of the tortilla, then sprinkle on some cilantro. Fold the other side of the tortilla over to create a half moon. Continue cooking for another 30 seconds or so, or until the bottom of the tortilla is crisp and golden. (Just lift it up and take a peek to see when it’s ready to go.) Then carefully flip the tortilla over and cook it for an additional 30-60 seconds on the second side.

  • Preheat broiler. Put tortillas in single layer on baking sheet. Brush with oil. Broil until toasted, about 3 minutes. Turn; set aside.

Transfer black bean tortilla to plate; sprinkle 1/4 cup chopped cilantro over. Top with cheese tortilla, squash tortilla, then plain tortilla. Cut into 4 wedges. Garnish with sour cream, salsa, and cilantro sprigs.
