EASY VEGGIE BURGERS



Easy Veggie Burgers image

These burgers have been tested and approved by my DD. The original recipe is from Chatelaine. The original name of this recipe is "Amazing Veggie Burgers".

19 ounces black beans
1/3 cup onion, coarsely chopped
1 garlic clove, minced
1 egg
3 tablespoons barbecue sauce or 3 tablespoons ketchup
1 tablespoon soya sauce or 1 1/2 teaspoons HP steak sauce
1 teaspoon canola oil
1/2 teaspoon salt
1/2 teaspoon pepper, freshly ground
1/3 cup all-purpose flour
1/2 cup dry breadcrumbs (must be store bought to work) or 1/2 cup cracker crumb, ground in processor until very fine (must be store bought to work)
1/2 cup old cheddar cheese, shredded
6 crusty bread rolls

Steps:

  • Drain and rinse beans with cold water.
  • Drain again and pat dry with paper towels.
  • Add beans, onions, garlic, egg, 2 tbsp barbecue sauce, Worcestershire sauce, oil, salt and pepper to food processor.
  • Pulse until beans are the size of peas.
  • Place pulsed mixture into a large bowl.
  • Add flour and stir until evenly mixed.
  • Add bread crumbs and mix well.
  • Add cheese and mix with your hands (mixture is thick).
  • Divide mixture into six portions.
  • Flour your hands and shape into 1/2-inch thick burgers (if you don't flour your hands the mixture will stick to them).
  • The burgers may be refrigerated in a sealed container for 1 day or frozen until ready to grill.
  • Oil your grill and preheat grill to medium-high.
  • Place burgers on grill.
  • Brush with remaining barbecue sauce.
  • Barbecue with lid down until hot, turning once, for 8 to 10 minutes.
  • Serve on buns with desired toppings i.e. pickles, onions, tomatoes, salsa.
  • For vegetarian make sure you use either a vegetarian Worcestershire sauce or the soy sauce.

2 tablespoons bulgur wheat
1 lb mushroom, quartered (4 cups steamed)
1 cup diced onion (1/2 cup steamed)
1/2 cup rolled oats
2/3 cup cooked brown rice
1/2 cup shredded lowfat mozzarella cheese
2 tablespoons shredded low-fat cheddar cheese
2 tablespoons low fat cottage cheese
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 dash pepper
2 tablespoons cornstarch
olive oil flavored cooking spray

Steps:

  • Add 1/4 cup boiling water to the bulgur wheat in a small bowl and let it sit for about 1 hour it should bulk out to about double in size.
  • Steam the mushrooms for 10 minutes or until tender.
  • Separately steam the onions for about 10 minutes, or until translucent, do not combine with the mushrooms.
  • Add 1/2 cup of water to the oats and let them soak for about 10 minutes, until soft.
  • Drain any excess water from the bulgur wheat and oats then combine them with the steamed mushrooms, rice, cheeses, and spices in a food processor and pulse quickly 4 or 5 times until ingredients are chopped fine, but not pureed.
  • You want a coarse texture with some identifiable chunks of grain, mushroom, and cheese.
  • Pour the mixture into a bowl with the steamed onion and cornstarch, and mix well.
  • Preheat the oven to 300 degrees and set a large skillet over medium/low heat.
  • Spray the skillet with a light coating of olive oil cooking spray.
  • Measure 1/2 cup at a time of the patty mixture into the pan and shape with a spoon into a patty.
  • Cook the patties for 2 to 4 minutes per side, or until light brown on the surface.
  • Arrange the patties on a lightly sprayed baking sheet and bake for 20 to 25 minutes in the oven.
  • Be sure to turn them over halfway through the cooking time.
  • You can serve the patties immediately or freeze them once they have cooled Frozen patties can be reheated by cooking in a lightly sprayed pan over medium heat, or a grill over low flame.
  • You can also microwave for 30 seconds per side, however the pan or grill is best.

3/4 ounce provolone cheese (1 slice)
1 tablespoon reduced-fat mayonnaise or mayonnaise
1/8 teaspoon curry powder
1 slice tomato
1 slice red onion
2 rings green bell peppers
1 whole wheat hamburger bun, split

Steps:

  • 1. Cook Veggie Burger according to package directions. Top hot burger with cheese slice. Let stand for 1 minute or until cheese melts.2. Meanwhile, in small bowl stir together mayonnaise and curry powder. Spread on bun bottom. Top with burger, tomato slice, red onion, bell pepper and bun top.

3 pounds ground beef chuck (20% fat), or vegetarian alternative such as Lightlife® Plant-Based Burgers
Kosher salt, freshly ground pepper
8 slices American cheese (optional)
8 potato rolls, split and grilled
Burger toppings

Steps:

  • Form beef (if not using pre-formed vegetarian patties) into eight 4"-diameter, 3/4"-thick patties (don't pack too tightly). Using your thumb, make a small indentation in centers to help keep patties flat as they cook.
  • Prepare grill for medium-high heat. Season patties with salt and pepper and grill until lightly charred on bottom, about 4 minutes. (Resist the temptation to press down on patties.) Flip and top with cheese, if using. Grill patties to desired doneness, about 4 minutes longer for medium. Serve patties on rolls with desired toppings.
