MEDITERRANEAN PIZZA RECIPE
Mediterranean pizza is the ultimate fresh family dinner, ready in 30 minutes and everyone loves it. This is a delicious homemade pizza recipe with tasty Mediterranean toppings that will knock your socks off!

Steps:
- Preheat the oven to 450°F. IF you're using a pizza stone, place it in the oven.
- On a baking sheet or a pizza peel, roll out the pizza dough to 12 inches.
- Spread olive oil on the dough and sprinkle salt, thyme, black pepper and dried basil on the pizza dough.
- Top the pizza dough with artichoke hearts, sun-dried tomatoes, olives, red onion and fresh mozzarella.
- Transfer the pizza onto the pizza stone (if using) and bake in the oven for about 12 to 15 minutes until cheese is melted and bubbly and the dough is crispy on the edges.
- Top with fresh tomatoes and chopped parsley.
- Serve immediately.

VEGETARIAN MEDITERRANEAN PIZZA
This is a wonderful pizza! I got this recipe from the Alive magazine that I pick up at the health food store. Use whatever kind of crust you like. I make my own out of 1/2 whole wheat and 1/2 white flour. That gives you the goodness of whole wheat....but a lighter crust than using all whole wheat. I have added fresh spinach to the recipe...and it works wonderfully. For the best flavour, slightly blacken the grilled eggplant. My pic is not very good....but will post another when I make again. Enjoy!

- Preheat oven to 450 degrees.
- Shape and stretch dough into a 12" circle.
- Sprinkle the counter with cornmeal. Place circle of dough on top of cornmeal; press down lightly; transfer to pizza pan.
- Spread bruschetta evenly over top. Sprinkle with basil and oregano.
- Evenly scatter spinach, artichoke hearts, sun-dried tomatoes, eggplant and both cheeses over top.
- Bake for 12 - 15 minutes.

- Combine 1 cup flour, yeast, sugar and salt in a large bowl. Add water and 3 tablespoons oil and stir for about 1 minute or until well blended. Gradually add enough remaining flour to make a soft dough. Dough should form a ball and will be slightly sticky.
- Knead by hand on a floured surface, adding additional flour as necessary, until smooth and elastic, about 4 minutes. Let dough rest at this point for 10 minutes.
- Roll dough out to about 1/4 inch thickness and transfer to a lightly greased baking sheet. Brush with remaining 3 tablespoons olive oil, sprinkle with dried herbs. Top with artichokes, sun dried tomatoes, onions, and olives.

- Prep the dough: Let dough come to room temperature. Lightly flour a cutting board or flat workstation, gently stretch with your hands and roll out into a 12 inch pizza round. Be patient with the dough, it will want to shrink back (this is because of the gluten) but keep going you’ll get it to stay in place soon enough. Place dough on a good size piece of parchment paper, this is the easiest way to transfer the dough.
- Par-bake dough: Once oven is ready, place dough on baking sheet and bake on the center rack for 7 – 10 minutes.
