KOMBU DASHI
Kombu dashi is one type of vegetarian stock used in Japanese cooking and includes only water and dried kelp. The word kombu means kelp or seaweed.

Steps:
- Wipe the kombu with a clean cloth; kombu doesn't need to be washed. Put water in a deep pot and soak the kombu for about 30 minutes.
- Place pot over low heat. Just before the water comes to a boil, remove the kombu. (You can save the kombu to use in other dishes.) Remove the broth from the heat and either use immediately or store in the refrigerator for later use.

Steps:
- Place kombu in a saucepan with water and bring to a boil. Reduce mixture to a low simmer and allow to simmer for several hours. Add stock. Return mixture to the boil and then remove from heat.
VEGETARIAN KOMBU DASHI
This recipe uses kelp but no bonito flakes. Dashi is a basic soup stock. This recipe can be prepared in advance and stored in the fridge 2-3 days or frozen. Taken from Japanese Cuisine for Everyone by Yukiko Moriyama.

Steps:
- To clean the kombu, wipe it with a damp cloth. If you wsh it, some of the flavor will go away. Since bonito is not being added to this recipe, you want the full flavor of the kombu.
- Soak kombu in the water for 1 hour.
- After the 1 hour soak, bring water to a boil, removing the kombu just before the water starts boiling.

- Gather all the ingredients. Most Japanese recipes would say gently clean the kombu with a damp cloth. However, kombu is pretty clean these days so just make sure it doesn't musty. DO NOT wash or wipe off the white powdery substance (Mannitol), which contributes to the umami flavor in dashi.
- In a medium pot, put the kombu and water. [optional] If you have time, soak for 3 hours or up to a half day ahead of time. Kombu’s flavor comes out naturally from soaking in water.
