My family loves fish and when I plan to serve it, I always fix it in the microwave. It doesn't dry out and is a lot better then frying. This one dish meal is so delicious and will become a favorite of your family as well.-Paula Marchesi, Lenhartsville, Pennsylvania

Number Of Ingredients 8

2 orange roughy fillets (6 ounces each)
2 tablespoons minced chives
2 teaspoons minced fresh thyme
1 medium lime, thinly sliced
3 cups frozen Italian vegetables, thawed
2 teaspoons butter, melted
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place fish fillets in an 8-in. square microwave-safe dish. Sprinkle with chives and thyme. Top with lime and vegetables. Drizzle with butter; sprinkle with salt and pepper. , Cover and microwave on high for 5-7 minutes or until fish flakes easily with a fork and vegetables are heated through.

Baked Fish with Frozen Vegetables image

Quick, simple, and delicious baked fish dish with vegetables. Great for any fish and could be made with things you normally have in your pantry. Serve with wild rice.

1 tablespoon olive oil
3 cups frozen California-blend vegetables (broccoli, carrot, cauliflower)
½ cup water
1 stalk celery, chopped
½ medium onion, diced
1 clove garlic, minced
1 pinch paprika, or to taste
salt and ground black pepper to taste
1 pound cod fillets

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 2-quart baking dish with olive oil.
  • Combine mixed vegetables, water, celery, onion, and garlic in the bottom of the prepared baking dish. Season with paprika, salt, and pepper.
  • Lightly season cod fillets and layer on top of vegetables.
  • Place in the preheated oven and immediately reduce the heat to 350 degrees F (175 degrees C). Bake until fish flakes easily with a fork, about 30 minutes.

1 lb sole fillets or 1 lb cod fish fillet
1 tablespoon oil
1 cup onion, Sliced
3 cups zucchini, Sliced
1 cup green pepper slices
3/4 cup tomatoes, Chopped
3 tablespoons dry sherry (optional)
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon basil
1/4 teaspoon pepper
2 drops hot pepper sauce
1/4 cup parmesan cheese

Steps:

  • Place filets in a layer in oiled 9-inch square baking pan, saute onion, zuchini and green pepper in oil until crisp-tender; spoon over filets.
  • Top with tomatoes.
  • Combine sherry, lemon juice, salt, basil, pepper and pepper sauce; pour over filets.
  • Bake uncovered at 350F for 25-30 minutes.
  • Remove fish and vegetables to heated platter; sprinkle with parmesian cheese. if desired, serve pan juices over bulgar or rice.
