FRIED CHICKEN WITH PUNTARELLE SALAD

Fried Chicken with Puntarelle Salad image

Puntarelle, a bitter green, makes a soft blanket for delicately fried (but not greasy) chicken. The anchovy-and-garlic emulsion is a classic Italian dressing.

Provided by Martha Stewart

Categories     Chicken Breast Recipes

Time 40m

Number Of Ingredients 18

10 cups puntarelle or other bitter greens, such as dandelion greens, arugula, radicchio, or chicory (about 2 pounds), sliced if needed
3/4 cup torn fresh basil
5 scallions, white and pale-green parts only, thinly sliced
2 garlic cloves
Coarse salt
3 oil-packed anchovy fillets
1/4 cup fresh lemon juice (from 2 lemons)
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 cups low-fat buttermilk
2 large eggs
2 teaspoons baking powder
1 teaspoon baking soda
2 cups all-purpose flour
Coarse salt and freshly ground pepper
Vegetable oil, for frying (about 8 cups)
3 chicken breast halves (1 1/2 pounds), cut into 1-by-3-inch strips
Sea salt (preferably Maldon), for sprinkling
Garnish: 1 lemon, cut into wedges

Steps:

  • Make the salad: Toss together puntarelle, basil, and scallions in a large bowl.
  • Mash garlic and a pinch of coarse salt into a paste usinga mortar and pestle or scrape into a paste using the sharp side of a knife. Add anchovies, and mash. Transfer mixture toa small bowl, and stir in lemon juice. Gradually add oil, whisking constantly, until emulsified.
  • Make the chicken: Combine buttermilk, eggs, baking powder, and baking soda in a medium bowl. Whisk together flour, 1 tablespoon coarse salt, and some pepper in another medium bowl.
  • Fill a medium pot halfway with oil. Heat oil over medium heat until it reaches 380 degrees on a deep-fry thermometer. Dip each piece of chicken into buttermilk mixture to coat, shaking off excess. Dredge each piece in flour mixture to coat, patting it onto chicken as you work, making sure each piece is heavily coated.
  • Working in batches, carefully fry chicken until deep golden brown, about 3 minutes. Drain on paper-towel-lined plates. Sprinkle with sea salt.
  • Toss salad with half the dressing. Season with coarse salt and pepper. Divide 3 or 4 fried chicken strips among 6 plates, and top with salad. Garnish with lemon wedges, and serve with remaining dressing on the side.

¼ cup grated Parmesan cheese
2 skinless, boneless chicken breasts
¼ teaspoon Cajun seasoning (such as Tony Chachere's®)

SALTED BUTTERMILK FRIED CHICKEN

Salted Buttermilk Fried Chicken image

The secret to moist fried chicken is maintaining the correct oil temperature throughout the process. If it's too low, the chicken will be greasy and soggy, and if it's too high, the coating will burn before the chicken is cooked through.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Time 1h10m

Number Of Ingredients 10

8 cups safflower oil, plus more as needed, for frying
1 quart low-fat buttermilk
4 large eggs, lightly beaten
4 teaspoons baking powder
2 teaspoons baking soda
4 cups all-purpose flour
4 teaspoons coarse salt
2 teaspoons cayenne pepper
2 whole chickens (3 1/2 to 4 pounds each), cut into 10 pieces each
Flaky sea salt (preferably Maldon), for sprinkling

Steps:

  • Fill a medium heavy-bottomed pot halfway with oil. Heat until a deep-fat thermometer reaches 340 degrees.
  • Meanwhile, stir together buttermilk, eggs, baking powder, and baking soda in a medium bowl. Whisk together flour, coarse salt, and cayenne in another bowl. Working in batches, dip each chicken piece into buttermilk mixture, coating completely (do not shake off any excess). Dredge in flour mixture, patting onto chicken to coat completely. Transfer to a plate.
  • Working in batches (do not crowd pot), carefully place chicken in oil, and fry until deep golden brown, 6 to 7 minutes for wings, 9 to 10 minutes for other pieces. (While chicken is cooking, adjust heat as needed to maintain an oil temperature of 325 degrees. Return oil to 340 degrees before starting each new batch.)
  • Transfer fried chicken to a paper-towel-lined plate using a slotted spoon; sprinkle with flaky salt. Serve warm or at room temperature.

FRIED-CHICKEN PAILLARD

A buttermilk marinade makes this boneless pan Fried-Chicken Paillard features tender and juicy chicken breast; flattening the breast cuts down on the cooking time.

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Breast Recipes

Number Of Ingredients 7

1 1/2 cups nonfat buttermilk
3 teaspoons salt
1 1/2 teaspoons freshly ground black pepper
4 skinless and boneless chicken-breast halves
8 slices white bread, crusts removed
1/4 teaspoon cayenne pepper
1 cup vegetable shortening or vegetable oil

Steps:

  • In an airtight container, combine buttermilk, 1 1/2 teaspoons salt, and 1/2 teaspoon black pepper. Place a chicken breast half between two 12-inch squares of plastic wrap. Using a meat pounder or the bottom of a saucepan, pound chicken until just more than 1/4 inch thick. Repeat with remaining breasts; place in buttermilk marinade. Chill 20 minutes.
  • Place bread, remaining 1 1/2 teaspoons salt, 1 teaspoon black pepper, and cayenne pepper in the bowl of a food processor. Pulse until fine crumbs form, about 10 seconds. Transfer mixture to a shallow bowl.
  • Remove a chicken-breast half from buttermilk mixture, and shake off excess liquid. Dredge both sides of chicken in bread crumbs, and transfer to a plate. Repeat with the remaining chicken breasts.
  • Line a baking sheet with a double thickness of paper towels. Heat shortening in a large nonstick skillet over medium-high heat. When hot, carefully place two chicken-breast halves in pan. Fry until bottoms are golden, about 2 minutes. Turn chicken breasts over, and cook until golden and cooked through, about 2 minutes more. Transfer to prepared pan. Repeat with remaining chicken. Serve.
