Dress up a cookie plate with these old-fashioned spice bars full of raisins, molasses, cinnamon, ginger and nuts. Then dip the chewy treats in coffee or hot cocoa on frosty days. It's said the cookies are called "hermits" because you can hide them out of sight, just like hermits, for days. Number Of Ingredients 12

1/3 cup raisins
1 cup all-purpose flour
1/3 cup packed brown sugar
1/2 teaspoon baking powder
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup molasses
3 tablespoons butter, melted
1 large egg white or 2 tablespoons egg substitute
1 teaspoon vanilla extract
1/3 cup chopped walnuts

Steps:

  • Preheat oven to 375°. Cover raisins with boiling water. Let stand for 5 minutes; drain and set aside. , Whisk together next 6 ingredients. In another bowl, combine molasses, butter, egg white and vanilla; stir into dry ingredients just until moistened. Fold in walnuts and raisins (batter will be wet)., Divide batter in half; spread each half (wetting hands, if necessary) into a 12x2-in. rectangle 2 in. apart on a parchment-lined baking sheet. Bake until edges are lightly browned and set, 10-15 minutes., Transfer rectangles to a cutting board; with a serrated knife, cut diagonally into 1-1/2-in. bars. Remove to wire racks to cool. Store in an airtight container.

I got this recipe from my new cookie cookbook called "Vegan Cookies Invade Your Cookie Jar" and they came out addictive and delicious! The only thing I changed in the recipe is that I used all whole wheat flour instead of all-purpose, but you can use either. They aren't really sweet so not for everyone, but I love the spicy flavor--the only problem is that I eat way too many of them! p.s. the longer you let them sit before baking, the more delicious they get!

Number Of Ingredients 13

1/2 cup canola oil
1/2 cup strong black coffee, cooled to room temp
1/3 cup molasses
2/3 cup sugar, plus additional for sprinkling
2 1/4 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
finely ground black pepper, 1 generous pinch
1/2 teaspoon salt
1 cup dark raisin (be generous)

Steps:

  • In a large bowl, whisk together the oil, coffee, molasses, and sugar until thick.
  • Sift in the flour, baking powder, baking soda, cinnamon, cloves, ginger, black pepper, and salt. Fold in the dry ingredients till almost completely moistened, then fold in the raisins till a soft dough forms.
  • Chill the dough in the refrigerator for 30 minutes.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • After dough is chilled lightly moisten hands and divide dough in half. Make it into two logs about 13 inches long and 3 1/2 inches wide.
  • Sprinkle the tops with sugar.
  • Bake 24 to 26 minutes till edges are lightly browned and the logs feel firm. Its okay if they crack.
  • Cool 15 minutes.
  • Cut the logs into approximately 2 inch slices (or however you like them).
  • Cool on wire racks.

½ cup shortening
1 cup white sugar
½ cup molasses
1 teaspoon baking soda
½ cup warm coffee
1 egg
3 cups all-purpose flour
½ teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening and sugar until smooth. Stir in the molasses and egg. Dissolve the baking soda in warm coffee; stir into the molasses mixture. Combine the flour, salt, cinnamon and cloves; Gradually stir into the batter. Mix in raisins. Form dough into 4 long strips lengthwise on the cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven. Cool for 5 minutes on the cookie sheets then cut each strip into 2 inch bars while still warm.

This is my healthified version of Recipe #459280 from the book "Vegan Cookies Invade Your Cookie Jar" by T.H. Romero and I.C.Moskowitz. These cookies are soft and cake-like, but I really liked that. Plus the flavour is still awesome and you can eat a few more of these without breaking your diet. :)

Number Of Ingredients 15

2 cups oats (regular or quick-cooking)
1 1/2 cups whole wheat flour (I used whole spelt flour)
1/2 cup flour (I used spelt flour)
1/4 teaspoon baking soda
1 1/4 teaspoons baking powder
1/4 teaspoon salt
2/3 cup water
1/4 cup brown sugar (or 1/8 cup splenda brown sugar blend)
1/4 cup Splenda granular
1/2 cup prepared vanilla soy pudding (or use applesauce)
1 tablespoon ground flax seeds
1 teaspoon vanilla extract
1 cup coconut, shredded unsweetened and toasted
1 cup vegan miniature chocolate chip (semi-sweet)
1 cup pecans, chopped and toasted

Steps:

  • In a medium sized bowl combine oats, flours, baking soda, baking powder and salt. Set aside.
  • In a second bowl beat together water, splenda, brown sugar, soy pudding, flax seeds and vanilla using a wire whisk.
  • Fold in half of the flour mixture to moisten, then fold in second half. Just before mixture is completely combined, fold in coconut, chocolate chips and pecans. Mixture will be quite runny, but should be managable using a tbs and your fingers. If its too wet, add a few more oats or more flour.
  • For each cookie drop 1 heaping tbs of dough onto a paper-lined or greased cookie sheet. Leave about 2 inches of space between each cookie and flatten slightly with moistened fingers.
  • Bake in the preheated oven at 350°F/180°C for 14-16 minutes until edges start to brown.
  • Let the cookies rest on the cookie sheet for 5 minutes, then transfer to wire racks to cool completely.

2 cups flour
4 tablespoons butter
1/2 cup sugar
2 eggs

1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon mace
1/2 teaspoon nutmeg

Steps:

  • Preheat oven 350 degrees F.

  • Dust raisins and nuts in 1/4 cup flour.
