1/2 cup + 2 Tbsp. buckwheat flour
1/2 cup + 2 Tbsp. old fashioned oats
1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. cinnamon
1/2 cup unsweetened applesauce
1/4 cup almond milk
1/4 cup brown sugar
1 small flax egg (1/2 Tbsp. flaxseed meal mixed with 1 1/2 Tbsp. water)
1 Tbsp. melted coconut oil (or sub canola oil)
1 tsp. vanilla extract
1/2 tsp. almond extract
1/2 cup frozen blueberries, thawed (or sub fresh)

Steps:

  • Instructions: Preheat oven to 375* and either grease or line a muffin tin with cupcake liners. Prepare flax egg by combining flaxseed and water, letting it set for 3-5 minutes, and then whisking to achieve "eggy" texture. Combine dry ingredients (excluding brown sugar) in a medium bowl. Combine wet ingredients (and brown sugar), then add to dry ingredients. Mix until just combined and then fold in blueberries. Bake for 16-18 minutes.

2 cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup white sugar
2 tablespoons white sugar
½ cup unsweetened applesauce
½ cup vanilla soy yogurt
¼ cup vegetable oil
2 teaspoons vanilla sugar
1 teaspoon vanilla extract
1 ¾ cups fresh blueberries
2 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
  • Combine flour, baking powder, baking soda, and salt in a large bowl. Stir together 1/2 cup plus 2 tablespoons white sugar, unsweetened applesauce, yogurt, oil, vanilla sugar, and vanilla extract in a second bowl. Fold into flour mixture using a spatula, but do not over mix. Fold in blueberries.
  • Spoon batter into the prepared muffin cups, filling each 3/4 full. Sprinkle with brown sugar.
  • Bake in the preheated oven until tops spring back when lightly pressed, 18 to 22 minutes. Cool in the tin for 5 minutes. Transfer to a wire rack to cool completely.

3/4 cup buckwheat flour
2/3 cup spelt flour (or whole wheat flour)
2/3 cup flour (all purpose)
1/4 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs (slightly beaten)
1 cup butternut squash (cooked and mashed)
1/2 skim milk
1/2 teaspoon orange peel (finely shredded)
1/4 orange juice
2 tablespoons canola oil
3/4 cup blueberries (fresh or frozen)
2 tablespoons rolled oats

Steps:

  • Pre - heat oven to 400 degrees F line twelve 2 1/2 inch muffin cups with paper bake cups; coat insides with cooking spray. Combine next eight ingredients. Combine eggs, squash, milk, peel, juice and oil. Add to flour mixture; stir just until moistened {batter should be lumpy}. Fold in blueberries.
  • Spoon into muffin cups, filling each nearly full. Top with oats. Bake for 17 - 20 minutes or until toothpick inserted in centers comes out clean. Cool on wire rack for 5 minnutes. Remove. Serve warm.
