1/3 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
6 to 7 pounds veal shanks, cut into 2-inch-thick slices
1/3 cup canola oil
1 medium onion, chopped
1 small carrot, chopped
1 celery rib, chopped
1 garlic clove, minced
2 tablespoons butter
1 can (14-1/2 ounces) diced tomatoes, undrained
1-3/4 cups chicken broth
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
2 bay leaves
GARNISH (GREMOLATA):
1 tablespoon minced fresh parsley
1 tablespoon grated lemon zest
1 garlic clove, minced

Steps:

  • Preheat oven to 325°. In a large resealable plastic bag, combine flour, salt and pepper. Add veal, a few pieces at a time, and shake to coat. In an ovenproof Dutch oven, brown meat in oil in batches on all sides; drain., In a large skillet, saute the onion, carrot, celery and garlic in butter until tender. Return veal to the Dutch oven; top with vegetable mixture. Add tomatoes, broth, basil, thyme and bay leaves., Cover and bake 2 to 2-1/4 hours or until meat and vegetables are tender. Discard bay leaves. Just before serving, combine garnish ingredients; sprinkle over veal. Freeze option: Place individual portions to cooled meat and cooking juices in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth if necessary.

4 to 6 tablespoons olive oil
6 portions of veal shank (about 6 pounds total), see note
1/4 cup flour
1 cup finely chopped onions
1/2 cup finely chopped carrots
1/2 cup finely chopped celery
1 large clove garlic, minced
1 1/2 cups dry white wine
1 1/2 cups peeled, seeded, chopped fresh tomatoes (canned Italian tomatoes, drained and chopped, may be substituted)
1 1/4 cups well-flavored veal, beef or chicken stock
1/2 teaspoon dried thyme
Salt and freshly ground black pepper
Gremolata (see recipe)

Steps:

  • Melt the oil in a heavy casserole large enough to hold the veal in a single layer. Dust shank pieces with flour and lightly brown on all sides over medium heat. You may find the browning easier if you do not put all the shanks in the pan at once. Do not allow them to become dark or blackened. Remove the shanks from the casserole and lower heat.
  • Preheat oven to 350 degrees.
  • To the casserole, add onions, carrots and celery and saute, stirring until they begin to soften. Add garlic and saute a minute longer. Add wine and cook over medium-high heat, scraping the pan until all the brown bits clinging to it have dissolved. Stir in the tomatoes, stock and thyme.
  • Return the shanks to the casserole, basting with the sauce. Season with salt and pepper, cover and bake in the preheated oven about one and one-half hours until the meat is tender when pierced with a fork. Baste the shanks several times during baking.
  • Remove shanks to a serving dish and keep warm. Taste sauce and season with salt and pepper if necessary. If the sauce is too thin (it should be about the consistency of cream), place the pan on top of the stove and boil down the sauce for several minutes.
  • Pour sauce over the shanks and top with a little of the gremolata. Pass the rest on the side.

1/2 pound bacon, chopped
2 medium carrots, chopped
5 cloves garlic, chopped
1 medium onion, chopped
1 rib celery, chopped
Salt and freshly ground black pepper
3 pounds veal shanks, sliced into 1 1/2-inch-thick disks
1/3 cup cornmeal
4 quarts chicken stock
2 1-quart cans hominy
Raw corn cut from 2 ears
4 ripe avocados, sliced
1 head iceberg lettuce, chopped
1 cup chopped cilantro
4 to 8 jalapeno chilies, thinly sliced
Cayenne pepper to taste

Steps:

  • For the soup, fry the bacon in a large pot over medium heat 3 minutes, then add the carrots, garlic, onion and celery. Cook, stirring until softened, about 5 minutes.
  • Salt and pepper the veal to taste, then dust with cornmeal. With a slotted spoon, remove the vegetables and set them aside. Add the meat and brown on all sides, about 10 minutes.
  • Return the vegetables to the pot along with a quart of water, the stock and hominy, including the liquid from one of the cans. Bring to a boil over high heat. Simmer and reduce for about 2 hours.
  • For the garnish, toast the corn in a dry cast-iron skillet over medium heat for 5 minutes. Mound the corn in a large serving platter surrounded by the avocados, lettuce, cilantro and chilies.
  • When veal is tender, remove it from heat and let cool. Meanwhile, skim the fat from the soup. When meat is cool enough to handle, separate it from the bones; reserve marrow. Chop meat into chunks and return it and marrow to the pot. Adjust seasoning and serve in bowls. Heap each bowl with the garnish.

Osso buco is a Milanese dish of braised veal shanks in a hearty wine- and vegetable-based sauce. A mixture of parsley, lemon zest, and garlic (gremolata) finishes the dish off.

6 (1- to 1 1/2-inch-thick) pieces osso buco (veal shanks) (about 4 pounds; 1.8kg total)
Kosher salt and freshly ground black pepper
1 cup all-purpose flour (5 ounces; 140g)
1/4 cup (60ml) extra-virgin olive oil, plus more if needed
1 tablespoon unsalted butter (1/2 ounce; 15g)
1 large yellow onion, minced (12 ounces; 340g)
2 medium carrots, minced (6 ounces; 170g)
1 celery rib, minced (4 ounces; 120g)
3 medium cloves garlic, minced
1 (28-ounce; 800g) can peeled whole tomatoes, seeded and drained, tomato flesh crushed by hand
1 cup (235ml) dry white wine
3/4 cup (175ml) homemade or store-bought low-sodium chicken stock (see note)
3 fresh thyme sprigs
1 bay leaf
For the Gremolata:
2 tablespoons (about 20g) finely minced flat-leaf parsley leaves and tender stems
Zest of 1 lemon, finely minced
6 medium cloves garlic, finely minced

Steps:

  • Preheat oven to 325°F (163°C). Season veal shanks all over with salt and pepper. If you have butcher's twine, you can tie a length of it tightly around the circumference of each shank; this can help them hold their shape during cooking, but is not absolutely necessary.
  • Add butter to Dutch oven, along with onion, carrot, celery, and garlic. Cook, stirring, over medium-high heat until vegetables are softened and just starting to turn a light golden color, about 6 minutes.
  • Prepare a parchment paper lid following these instructions . Cover shanks with parchment lid and transfer to oven. Cook for 2 hours.
  • Meanwhile, for the Gremolata: In a small bowl, stir together parsley, lemon zest, and garlic. Set aside.
  • Carefully transfer shanks to a platter. (Using a spatula and tongs together can help prevent them from falling apart.) Using a spoon, carefully scrape off any excess fat on surface of braising juices. The liquid should be saucy and thick; you can adjust the consistency by adding either water or stock to thin the sauce, or simmering it on the stovetop until more fully reduced. Discard thyme and bay leaf and season with salt and pepper if necessary.
  • Remove twine from shanks, if used. Serve shanks on plates, spooning braising sauce on top and passing remaining gremolata at the table for diners to sprinkle as a garnish to their own taste; make sure to offer small spoons for scooping out marrow from bones. Osso buco is traditionally served with Risotto alla Milanese .

Braised Veal Shanks With Garlic, Lemon, and Parsley image

Also called Ossobuco alla Milanese, this recipe is from Cook's magazine. It's a nice combination of flavors and can be made 3 days ahead.

1 medium onion
2 medium carrots
1 stalk celery
8 ounces plum tomatoes
6 (12 ounce) veal shanks
1/3 cup flour
6 tablespoons vegetable oil
4 tablespoons butter
1 cup dry white wine
1 cup chicken broth
1/2 teaspoon dried thyme
1 garlic clove
1 small lemon
3/4 cup parsley, firmly packed

Steps:

  • Peel and cut the onion and carrots into 1/2-inch dice. Cut the celery into 1/2-inch dice. Coarsely chop the tomatoes.
  • Adjust the oven rack to the middle position and heat oven to 350ºF. Pat veal shanks dry with paper towels. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Tie the shanks securely. Dredge shanks in the flour.
  • Heat the vegetable oil in a 5-quart dutch oven. Saute the veal shanks over high heat, turning to sear on both sides, about 4 minutes. Transfer browned shanks to a plate. Discard oil and heat the butter. Add the onion, carrots, and celery, and saute, stirring occasionally, until the vegetables soften and color slightly, about 10 minutes. Return the shanks to the dutch oven, placing them on top of the vegetables. Add the wine, chicken stock, tomatoes, and thyme and bring the liquid to a boil. Cover and transfer pan to the oven. Braise, basting every 30 minutes, until the meat is tender, 1 1/2 to 2 hours. (Can cool, cover, and set shanks aside for several hours, or refrigerate in sauce up to 3 days).
  • Serving:.
  • For the gremolada, peel and mince the garlic. Grate 1 tablespoon lemon zest. Mince the parsley. Mix the garlic, lemon zest, and parsley; set aside. If shanks have been refrigerated, warm them over low heat. Transfer the shanks to a platter. Skim the cooking liquid and transfer the braised vegetables and the liquid to the workbowl of a food processor fitted with the metal blade; puree. Adjust the seasoning. Return the meat and sauce to the dutch oven. Sprinkle gremolada over the meat, and simmer for 5 minutes, until the shanks are warmed through. Spoon sauce onto 6 warm dinner plates. Put shanks over the sauce and serve immediately.

6 center-cut veal shanks (each about 1 1/2 to 2 inches thick)
1/2 cup all purpose flour
2 teaspoons dried rubbed sage
4 tablespoons olive oil
3 large onions, sliced
5 garlic cloves, chopped
15 fresh whole sage leaves
1 1/2 cups dry white wine
3 cups canned beef broth
Additional chopped fresh sage

Steps:

  • Sprinkle veal with salt and pepper. Combine flour and dried sage in shallow bowl. Set 3 tablespoons flour mixture aside. Dredge veal in remaining flour mixture to coat; shake off excess. Heat 2 tablespoons oil in heavy large very wide pot over medium-high heat. Working in batches, cook veal until brown, about 7 minutes per side. Transfer veal to bowl.
  • Heat remaining 2 tablespoons oil in same pot. Add onions and sauté until beginning to brown, about 10 minutes. Reduce heat to medium and sauté onions until very deep brown, about 35 minutes longer. Add garlic and sauté 5 minutes. Add whole sage leaves and reserved 3 tablespoons flour mixture; stir 2 minutes. Add wine; bring to boil.
  • Arrange veal in single layer in pot. Add broth. Cover and simmer over medium-low heat until meat is very tender but does not fall off bone, about 1 hour 45 minutes. Uncover; simmer until juices thicken enough to coat spoon, about 30 minutes. Season with salt and pepper.
  • Place 1 veal shank on each plate. Spoon sauce and onion mixture over. Sprinkle with additional fresh sage.

WHOLE BRAISED VEAL SHANKS

5 cloves garlic, 2 smashed and finely chopped, 3 just smashed
1/4 cup finely chopped fresh rosemary
2 whole veal shanks
Kosher salt
Extra virgin olive oil
2 onions, coarsely chopped
2 carrots, coarsely chopped
3 celery ribs, coarsely chopped
2 Granny Smith apples, cored and coarsely chopped
1 cup tomato paste
2 cups dry white wine
2 bay leaves
1 thyme bundle, tied with butcher's twine

Steps:

  • Preheat the oven to 400°F.
  • On a cutting board, use the side of your chef's knife to smash together the chopped garlic and the rosemary to make a coarse paste. Cut several deep holes in the veal shanks with a paring knife-really stab them! Using your index finger, stuff the holes with the rosemary-garlic mixture; this will perfume the shanks with a beautiful aroma while they braise.
  • Season the shanks generously with salt. Coat a large sauté pan with olive oil and bring to high heat. Add the shanks to the pan and brown well on all sides; this may take up to 20 minutes. Don't skimp on this step-this is where the big, rich, brown flavors start to develop, so take your time!
  • While the shanks are browning, put the onions, carrots, celery, apples, and the remaining 3 cloves of smashed garlic in a food processor and purée to a coarse paste; reserve.
  • When the shanks are very brown, transfer them to a roasting pan. Ditch the fat, add a bit of fresh olive oil, and add the puréed veggies and apples to the sauté pan. Season generously with salt and cook until the mixture is very brown and aromatic, 8 to 10 minutes. Again, don't skimp here-you want the veggies to form a crust on the bottom of the pan. This is where more of that lovely brown flavor develops, so take your time.
  • Add the tomato paste and cook, stirring frequently, until it starts to brown, 1 to 2 minutes.
  • Add the wine, bring it to a boil (BTB), and stir frequently until reduced by half, 3 to 4 minutes. Then transfer everything to the roasting pan with the shanks. Add about 1/2 cup water to the sauté pan to help release any of that good crud stuck to the bottom, then add it to the roasting pan.
  • Add 4 to 5 more cups water to the roasting pan and stir to combine; the mix should be pretty soupy. Taste and add more salt if needed, then toss in the bay leaves and the thyme bundle.
  • Put the pan in the oven and cook for 2 1/2 to 3 hours, turning the shanks every 30 minutes, stirring and adding more water if the liquid reduces too much. If the shanks brown too much during the cooking time, tent the pan with aluminum foil. When the shanks are done they should be incredibly tender and flavorful.

VEAL SHANK WITH SHALLOTS AND CHANTERELLES

1 whole veal shank, 4 to 4 1/2 pounds
2 tablespoons unsalted butter
1 pound large shallots, about 12, peeled
3 tablespoons flour
4 large cloves garlic, sliced
12 ounces fresh chanterelles, or other mushrooms, trimmed
1 1/2 cups cider, sweet or hard
1/2 cup veal or beef stock
6 sprigs fresh thyme
1 tablespoon lemon juice
Salt
ground black pepper

Steps:

  • Peel at least one layer of membrane from the veal shank. Heat butter in an ovenproof casserole or Dutch oven large enough to hold the veal. Add shallots and brown over medium-high heat. Remove and reserve. Heat oven to 325 degrees. Dust veal with flour and add to casserole. Lightly brown on all sides. Add garlic, mushrooms, cider, stock and thyme. Bring to a simmer, cover and place in oven for 1 hour.
  • Turn veal, add shallots and continue cooking, covered, until veal is tender, another hour or so. Transfer veal to a deep serving platter. Put casserole on the stove over medium heat and add lemon juice, and salt and pepper to taste. Spoon shallots, mushrooms and sauce around meat. Carve veal, slicing more or less parallel to the bone, and serve with sauce and vegetables.

8 veal shanks, 1 - 1/2 inches thick from the hind legs
flour, for dredging (seasoned with salt and pepper)
1/3 cup olive oil
1 cup onion, chopped
1 cup celery, chopped
1 cup carrot, chopped
salt and pepper, to taste
1 tablespoon garlic, finely chopped
1 cup dry red wine
1 cup meat stock (homemade) or 1 cup beef stock (1/2 cup canned beef stock-plus 1/2 cup water)
2 bay leaves
1/4 cup unsalted butter

Steps:

  • Assembly.
  • Arrange shanks on a serving platter. Heat sauce on stove over high heat. If sauce is runny, reduce for a moment and then add butter, stirring to incorporate. Once butter is melted and fused, adjust seasoning and spoon sauce over shanks. Method.
  • Preheat oven to 350°F Select oven-proof pot with lid large enough to accommodate all the shanks in a single layer. Set aside.
  • Place a large skillet over high heat and add olive oil. Dredge the shanks in the seasoned flour, only as many as the skillet will hold at one time. When oil is hot, sear the shanks on both sides until dark brown. Remove from skillet and set aside.
  • Drain oil from skillet and return to the heat. Add vegetables, seasoning to taste. Cook for 6 - 7 minutes until soft and lightly wilted. Remove and set aside. Add garlic and cook for another 2 - 3 minutes. Deglaze skillet with the red wine, scraping the bottom to loosen any meat particles stuck to the bottom. Add stock and any juices released from the seared shanks, simmering for a couple more minutes.
  • Place half the vegetables on the bottom of the oven-proof pot and arrange shanks on top. Pour remainder of the vegetable wine stock mixture over the shanks. The liquid should come 2/3 way to the top of the shanks. If not, add more stock.
  • Cover pot tightly and place in lower third of oven. Cook for about 2 hours until tender,.
  • Carefully turning the shanks every ½ hour. Prod with a fork to test for doneness.

8 (12- to 14-oz) meaty cross-cut veal shanks (also known as ossobuco; each about 13/4 inches thick)
3/4 cup all-purpose flour
3 1/2 teaspoons salt
1 1/4 teaspoons black pepper
6 tablespoons extra-virgin olive oil
1 large onion, chopped (2 cups)
4 large garlic cloves, finely chopped
5 anchovy fillets, rinsed, patted dry, and finely chopped
2 Turkish bay leaves or 1 California
1 cup dry white wine
1 (28-oz) can whole tomatoes in juice, pulsed (including juice) in food processor until chopped
1 cup water
2 (4- by 1-inch) strips fresh lemon zest
2 (4- by 1-inch) strips fresh orange zest
For gremolata
1/4 cup finely chopped fresh flat-leaf parsley
1 teaspoon finely grated fresh lemon zest
1 teaspoon finely grated fresh orange zest
1 large garlic clove, minced

Steps:

  • Make shanks:
  • Put oven rack in middle position and preheat oven to 350°F.
  • Pat shanks dry. Stir together flour, 2 teaspoons salt, and 1 teaspoon pepper on a sheet of wax paper. Heat 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. While oil heats, dredge 4 shanks in flour mixture, shaking off excess. Brown shanks in oil on all sides, turning with tongs, about 8 to 10 minutes. Transfer to a large (17- by 12- by 2-inch) roasting pan. Add 2 tablespoons oil to skillet and repeat with remaining 4 shanks. Discard remaining flour mixture.
  • Add remaining 2 tablespoons oil to skillet and cook onion, garlic, anchovies, bay leaves, 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper over moderate heat, stirring occasionally, until onion is softened, 6 to 8 minutes. Add wine and boil, scraping up any brown bits, until reduced by half, about 2 minutes. Stir in tomatoes, water, zest strips, and remaining teaspoon salt and bring to a boil, then pour mixture over shanks. Tightly cover pan with foil and braise in oven 1 hour. 4 (1-lb) meaty cross-cut veal shanks (osso buco), each tied with kitchen string
1 teaspoon salt
1/4 teaspoon black pepper
1/4 cup all-purpose flour
1 1/2 tablespoons olive oil
3 tablespoons unsalted butter
2 medium onions, cut into 1/4-inch dice (2 cups)
2 medium carrots, cut into 1/4-inch dice (1 cup)
2 celery ribs, cut into 1/4-inch dice (1 cup)
1 garlic clove, finely chopped
1 1/2 cups dry red wine
1 (28-oz) can whole tomatoes in juice, drained and coarsely chopped
1 Turkish or 1/2 California bay leaf (preferably fresh)
For gremolata
2 teaspoons chopped fresh flat-leaf parsley
1 teaspoon finely grated fresh orange zest

  • Make stew:
  • Put oven rack in middle position and preheat to 350°F.
  • Bring demiglace to a simmer in a 1-quart saucepan over moderate heat. Remove from heat and keep warm, partially covered.
  • Pat shanks dry and sprinkle with salt and pepper. Dredge shanks in flour to coat, shaking off excess. Heat oil in a 5- to 6-quart wide heavy ovenproof pot over moderately high heat until just smoking, then brown shanks on all sides, about 10 minutes total, and transfer with tongs to a plate. Add butter to pot and heat until foam subsides, then sauté onions, carrots, celery, and garlic, stirring occasionally, until onions are softened, about 9 minutes.
  • Add wine, scraping up any brown bits, then add warm demiglace, tomatoes, and bay leaf. Return shanks (with any juices accumulated on plate) to pot and bring liquid to a boil, then cover pot and braise shanks in oven until meat is very tender, about 2 1/2 hours.
  • Carefully transfer shanks with a slotted spoon to a clean plate and keep warm, loosely covered with foil. Skim fat from sauce, then simmer, uncovered, on top of stove, stirring occasionally, until slightly thickened, about 15 minutes. Season sauce with salt and pepper and add shanks, then cook over low heat until heated through. (Discard strings and bay leaf before serving.)
  • Make gremolata:
  • Stir together parsley, zest, rosemary, and thyme and sprinkle over osso buco just before serving.

4 pieces shank of veal, cut crosswise into 2-inch pieces with bone in, about 3 1/2 pounds
Flour for dredging
Salt to taste, if desired
Freshly ground pepper to taste
1/4 cup olive oil
1 cup finely chopped onions
1 teaspoon finely minced garlic
1/4 pound fresh mushrooms, cut into 1/2-inch cubes, about 1 1/4 cups
1/2 cup dry white wine
1 cup fresh or canned chicken broth
2 teaspoons chopped fresh or dried rosemary

Steps:

  • Preheat oven to 375 degrees.
  • Dredge the pieces of shank in flour seasoned with salt and pepper.
  • Heat the oil in a heavy skillet large enough to hold the pieces in one layer and cook the pieces, turning often, until they are thoroughly browned all over.
  • Pour off the fat from the skillet. Scatter the onions, garlic and mushrooms around the meat, and cook, stirring, until the vegetables are wilted.
  • Add the wine, and stir to dissolve the brown particles that cling to the bottom and sides of the skillet. Add the broth and rosemary, and bring to the boil. Cover closely and place in the oven. Bake one hour and 15 minutes.
