EASY 5 LAYER ICE CREAM CAKE
Simple and divine 5-layer ice cream cake sitting on top of an Oreo crust. Cool off and celebrate with this easy recipe!

- In a food processor or blender, pulse the whole Oreos into a fine crumb. Stir the cookie crumbs and melted butter together, then press into a 9×13 pan. (No need to grease the pan prior.) Make sure it is very tightly packed-I use the back of a spatula to firmly press it in. Freeze for 15 minutes.
- During that time, place the softened chocolate ice cream in a bowl and give it a good stir to rid any frozen lumps. You want a nice smooth, soft ice cream. Spread it on top of the frozen crust. Freeze for 15-30 minutes. (Closer to 30 minutes is ideal.)
- During that time, place the 2nd ice cream flavor into a bowl and stir it until it is smooth and very soft. Carefully spread on top of the chocolate ice cream. Freeze for 15-30 minutes. (Closer to 30 minutes is ideal.)
- Make sure the hot fudge is spreadable consistency. You may have to slightly heat it if using store-bought. Spread it on top of the ice cream as best you can. Because it is not as cold as the ice cream layer, the two will slightly mix together as you spread. That's ok. Freeze for 15-30 minutes. (Closer to 30 minutes is ideal.)
- Using a hand mixer or a stand mixer fitted with a whisk attachment, beat the heavy cream, confectioners' sugar, and vanilla on medium-high speed until stiff peaks form, about 4-5 minutes. Spread on top of hot fudge layer, then top with sprinkles. Cover with aluminum foil and freeze for at least 12 hours before serving (and up to a few days).
- Use a very sharp knife to cut, making sure you are cutting into the crust. Keep leftovers in the freezer.
EASY ICE CREAM CAKE RECIPE

- Grease a 9 inch springform pan with cooking spray. Line the inside of the springform with parchment paper so that it extends 2-3 inches above the hight of the pan. Spread the softened chocolate ice cream on the bottom of the pan and freeze for at least 10 minutes.
- Remove lid from the fudge sauce and microwave until it is pourable. Pour one jar of fudge sauce over the chocolate ice cream. Sprinkle on the Oreos and then pour the other jar of fudge sauce over the Oreos. Freeze for at least 30 minutes.
- Spread the vanilla ice cream over the fudge layer and freeze for at least 2 hours. Remove from freezer and let sit at room temperature for 5 minutes before removing the springform. Put back in freezer.
- Prepare the whipped cream: beat the whipped cream and sugar in a chilled bowl until stiff peaks form. Spread a thin layer on the cake and refreeze for 15 minutes. Apply a second thicker layer over the cake. If decorating, apply the sprinkles and other decorations now and freeze to harden.
- Remove from freezer about 10 minutes before serving. Enjoy!

- Line a 9-in. round pan with plastic wrap. Spread ice cream into pan. Freeze 2 hours or until firm., Prepare and bake cake mix according to package directions, using two 9-in. round baking pans. Cool in pans 10 minutes before removing to wire racks to cool completely., Using a serrated knife, trim tops of cakes if domed. Place 1 cake layer on a serving plate. Invert ice cream onto cake layer; remove plastic wrap. Top with remaining cake layer. Spread whipped topping over top and sides of cake. Decorate with sprinkles as desired. Freeze 2 hours longer or until firm.

BOYSENBERRY CAKE
This is like a coffee cake and tastes alot like a cobbler. It is an old recipe from my grandma. If you can't find boysenberries, you can substitute with blackberries. This is delicious served with a scoop of vanilla ice cream.

- In a bowl combine flour salt and baking powder.Cream the shortening and 1 cup of the sugar in a mixing bowl. Add the flour mixture to the shortening mixture alternately with the milk , beat until smooth. Grease a 13x9 pan and spread in the batter. Cover the batter with the 2 cups boysenberries. Cover the berries with the remaining 1 cup sugar and dot with butter. Pour 1 cup hot water over the berries. Bake at 325 degrees for about 1 hour.

BOYSENBERRY COBBLER
My grandparents had what seemed like a mile of boysenberries vines, and I never minded the scratches from picking them 'cause they were so good. One of my favorite memories is the summer my granddaddy wrote Girls'nBerries on each jar we canned. This isn't my grandmother's special recipe I learned as a child, but it's nice since it uses canned berries...fresh boysenberries are so hard to come by anymore. Adapted from a recipe I saw on Mom's Cooking. By the way, I have halved the recipe in a smaller pan and it worked out fine.

- Preheat oven to 425 degrees.
- Whisk together dry ingredients, then add milk and whisk until there are no lumps.
- Melt butter in a large cast iron skillet over medium high heat. Pour batter into pan but don't stir it.
- Add all the juice from the 2 cans of boysenberries and 1 1/2 cans of the berries. Don't stir, but do move the berries slightly out from the center with a spoon.
- Cook for 40 minutes or until done.
- Use remaining berries as a garnish.

- Spread half the vanilla ice cream into the base of 23cm loose bottom cake tin.
- Place in the freezer.
- Place the remaining ice cream back into the freezer.
- Whip the cream and icing sugar together until very thick.
- fold in the Boysenberries and chocolate chips.
- Spread the boysenberries cream over the base of the ice cream in the cake tin.
- Return to the freezer for two hours.
- Spread the remaining tip top vanilla ice cream over the boysenberry cream and return to the freezer for at least six hours and preferable overnight.
- To serve warm a cloth and run around the outside of the cake tin.
- Remove the sides of the cake tin and place the ice cream cake onto a serving plate.
- Dust with cocoa and cut into wedges to serve.
