Unexpected Company Cheese Dip Recipes

CHEDDAR CHEESE DIP

Ingredients

1 pound sharp cheddar cheese, preferably white
1 stick softened sweet butter
2 teaspoonfuls or so of Dijon mustard (or to taste)
Cayenne pepper to taste
1/4 cup or so of dry sherry
1 to 1 1/2 cups chopped toasted pecans
Garnish: finely sliced chives

Steps:

Grate the cheddar cheese while very chilled, but then let the grated cheese get back to room temperature. In the bowl of a food processor, whirl the cheese, butter, mustard, sherry and cayenne pepper until smooth and creamy
Transfer to a mixing bowl, cover and refrigerate until needed. (You can do 2 weeks before serving.) Remove from refrigerator 1 hour before serving; fold in the nuts and repack into four 1 cup ramekins of crocks. Dust with chives for garnish
Serve with crackers, or a crunchy vegetable like celery or fennel or jicama.

8 ounces cream cheese, softened
2 tablespoons seafood cocktail sauce
1/2 cup mayonnaise
1 tablespoon minced onion
1 teaspoon Old Bay Seasoning
2 tablespoons minced celery
1/8 teaspoon dried dill
1/2 lb cooked chopped shrimp
assorted crackers or vegetables

Steps:

Cream together cream cheese and cocktail sauce in a medium bowl until smooth. Add mayonnaise, onion, Old Bay Seasoning, celery and dill.
Drain and rinse shrimp. Stir into cream cheese mixture. Cover and chill (I make it the night before or in the morning so that the flavors blend).

I generally have the ingredients needed to this dip, so it's great to throw together when unexpected company comes around. All I need to do is soften the butter and cream cheese in the trusty microwave. Great with celery and carrot sticks and/or crackers. You can also add herbs of your choice.

16 ounces cream cheese, softened
4 ounces butter, softened
1 (1 ounce) packet ranch dressing mix
1 tablespoon dijon-style mustard
1 teaspoon garlic, minced

Steps:

Use electric mixer to blend all ingredients.
Spoon into serve bowl.
Cover and refrigerate. (Can be kept for up to 4 days).
Remove 30 minutes before serving.
