Number Of Ingredients 13

Hard cheeses: manchego, cheddar, swiss, gouda, gruyere, parmesan etc.
Soft cheese: brie, triple cream, goat cheese, havarti, burrata, cream cheese with pepper jelly on top. Could also you blue cheese or gorgonzola, or anything you like!
Cured Meats like prosciutto, salami, ham, chorizo, capricola, soppressata
Nuts: almonds, candied pecans, pistachio nuts, cashews, walnuts, macadamia nuts.
Briny, pickled or marinated: olives, cocktail onions, cornichons, dill pickles, pepperoncini, olive tapenade or bruschetta.
Savory Dips and spreads: Whole ground mustard, hummus, ranch, balsamic dip.
Cold cut veggies, if desired
Fresh fruit and berries: grapes, apples, pears, oranges, raspberries, blueberries, blackberries, strawberries.
Dried fruit: apricots, cherries, figs, pineapple, mango
Sweet spreads: Fig butter, orange marmalade, blackberry jam or other sweet spreads.
Chocolate: a few pieces of quality dark chocolate or chocolate covered nuts.
Pita crackers, whole grain crackers, croccantini, or your favorite kind of crackers
Toasted baguettes or mini toasts crackers

Steps:

  • Choose your board, depending on your party size. You could always use multiple boards if needed. See my notes in the post for more board ideas and links.
  • Start with the cheese: I start with the cheese because it anchors the board. Work in odd numbers, so, depending on the size of your party, choose 3, 5, or 7 types of cheeses to place around the board.
  • Fold and add the meats: check out my video below for a visual on fun ways to fold cured meats before placing them on the board, like folding them in half and fanning them out like a dec of cards, or folding them in half twice, so they are easy to grab. For thin meat (like prosciutto) fold them in a light and airy ribbon.
  • Add savory and sweet accompaniments. Fill in some of the gaps with savory and sweet. Separate colors in a way that allows the brightest colors to stand out and place foods together that pair well together. For example, mustard, briny foods and nuts near salami and sopresseta, and sharp cheeses like parmesan. Pair sweet accompaniments like fresh fruit, jams, and candied nuts, near the brie cheese or goat cheese. Cheddar cheese pairs well with savory and sweet.
  • Fill in extra space with crackers, and then any extra gaps with nuts or fruit.

COCONUT CHAI TRAYBAKE

This simple traybake is inspired by one of our favourite brews - chai. Spiced with cinnamon, nutmeg and cardamom, this moist coconut sponge is the perfect accompaniment to a cuppa

Yield Cuts into 15 squares

Number Of Ingredients 17

100ml vegetable oil , plus a little for greasing
300ml coconut milk (not low-fat) - if the cream has separated in the can, give it a good mix before measuring
4 large eggs
2 tsp vanilla extract
280g light brown soft sugar
250g self-raising flour
75g desiccated coconut
1 tsp ground ginger
1 tsp ground cinnamon
¼ nutmeg , finely grated
¼ tsp ground cloves
10 cardamom pods , seeds removed and crushed using a pestle and mortar
4 tbsp ginger syrup
3-4 tbsp coconut milk
140g icing sugar
2 balls stem ginger , finely chopped
chopped pistachios and coconut flakes (optional)

Steps:

  • Grease a 20 x 30cm baking tin with a little oil, and line the base and sides with baking parchment. Heat oven to 180C/160C fan/gas 4. Measure the coconut milk and oil into a jug. Crack in the eggs, add the vanilla and whisk with a fork to combine.
  • In a large bowl, mix the sugar, flour, coconut, spices and a pinch of salt. Squeeze any lumps of sugar through your fingers, shaking the bowl a few times so they come to the surface. Pour in the wet ingredients and use a large whisk to mix to a smooth batter. Pour into the tin, scraping every drop of the mixture out of the bowl with a spatula.
  • Bake on the middle shelf of the oven for 25 mins or until a skewer inserted into the middle comes out clean. If there is any wet mixture clinging to it, bake for a further 5 mins, then check again. Leave to cool for 15 mins in the tin, then transfer to a wire rack and drizzle over the ginger syrup.
  • To make the icing, mix the coconut milk with the icing sugar until smooth. Drizzle the icing over the cake in squiggles, then scatter with the chopped ginger, pistachios and coconut flakes, if using. Eat warm or cold. Will keep for 3 days in an airtight container.

A charcuterie board refers to an impressive spread of cured meats, and this festive take adds cheeses with fun accoutrements such as roasted nuts, tangy olives and fresh vegetables, which brighten the meal. It even includes a smooth paté, decadent smoked fish and a homemade whipped ricotta that serves as both a dip and a spread. Whipped ricotta is a cinch to make, transforming the grainy, dense cheese into something light and airy. This type of grand spread is perfect for entertaining and is extremely flexible - simply curate any combination of meats and cheeses with varying textures.

1 1/2 cups (about 12 ounces) whole milk ricotta, drained if needed
3/4 teaspoon kosher salt (Diamond Crystal)
Extra-virgin olive oil or honey, and cracked black pepper, for garnish
8 ounces spreadable paté, such as chicken liver, country, mushroom or vegetable
1 1/2 pounds assorted cured meats, such as prosciutto, salami, bresaola, mortadella, ham, chorizo or soppressata
4 (8-ounce) pieces of soft and firm cheeses, such as Brie, Camembert, Gruyère, Manchego, aged Cheddar or Stilton
8 ounces smoked whitefish, skin and bones discarded
2 bunches radishes, with greens, or trimmed and halved
8 ounces salted, roasted Marcona almonds
8 ounces dried Medjool dates
1 (10-ounce) block quince or guava paste, or fig jam
8 ounces mixed olives, such as Castelvetrano, Cerignola, Kalamata and niçoise
Sliced bread (such as baguette), crackers and Dijon mustard, for serving

Steps:

  • Make the whipped ricotta: In the bowl of a food processor, combine ricotta and salt, and purée until light and fluffy, scraping down the side of the bowl every so often, about 2 minutes. Transfer to a serving bowl, drizzle with olive oil or honey, and garnish with cracked black pepper.
  • Assemble the charcuterie board: On a large cutting board or serving platter, arrange the whipped ricotta and all of the other ingredients. (Place olives in a bowl and set an empty small bowl next to the olives for the pits.) Set out small knives, forks and spoons for slicing and serving. Serve with bread, crackers and mustard.
