BAKED SCALLOPS WITH MUSHROOMS



Baked Scallops With Mushrooms image

A delightful scallop recipe, enhanced with cheese, wine and spices. The mushrooms also give the recipe another different taste.

1/4 cup butter
1 medium green pepper, seeded and diced
1 cup finely chopped onion
1/2 lb fresh button mushroom
2 tablespoons butter
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon lemon pepper
2 1/2 cups half-and-half cream
3 tablespoons grated parmesan cheese (Parmigiano Reggiano cheese preferred)
1/4 teaspoon paprika, Hungarian paprika preferred
1/8 teaspoon ground nutmeg
1 lb fresh scallops, rinsed
2/3 cup dry white wine
1/2 cup fine dry breadcrumb
1/2 teaspoon italian seasoning mix
2 tablespoons butter, melted

Steps:

  • Preheat oven to 450°.
  • In a large heavy bottom frying pan, melt 1/4 cup of butter; add green pepper and onion and sauté over medium heat for 3 minutes.
  • Add sliced mushrooms and cook for 3 minutes.
  • Add 2 tablespoons butter to pan and sprinkle in flour, salt and lemon pepper; mix well and cook on low heat for 3 more minutes, stirring constantly.
  • Remove from heat, add half and half cream, cheese, paprika and nutmeg and stir to mix.
  • Return to heat and on medium-high heat return to boiling, stirring constantly.
  • Reduce heat to low and cook until mixture is thick and smooth stirring frequently.
  • Remove from heat, stir in scallops and wine.
  • Spoon mixture into buttered scallop shells or buttered baking dishes, about 1 cup size.
  • In a small bowl, mix together bread crumbs with Italian seasoning mix and 2 tablespoons of melted butter.
  • Sprinkle bread crumb mixture over scallop mixture in each dish.
  • Bake in preheated 450°F oven for 12 to 15 minutes or until bubbling and lightly browned on top.
  • Serve immediately.
  • If scallops are large, cut into smaller chunks before adding to mixture.

I was out at a cabin when one of my guests brought in some scallops. Since I had some mushrooms, onions, and garlic, I combined the ingredients to create this dish. This recipe is quick and easy to make and requires only one pan to complete. Necessity really is the mother of invention!

2 tablespoons butter
1 (10 ounce) can sliced mushrooms, drained
¼ teaspoon ground cumin
⅛ teaspoon ground black pepper
1 small onion, finely chopped
2 cloves garlic, minced
9 ounces bay scallops

Steps:

  • Melt butter in a medium pan over medium heat. Add mushrooms, cumin, and pepper. Saute until mushrooms are lightly browned, about 5 minutes.
  • Add onion and garlic; saute until translucent, about 5 minutes. Add scallops; cook and stir until opaque, about 3 minutes. Remove from heat.

9 tablespoons unsalted butter
1 one-pound bag frozen pearl onions, thawed and drained
3 pounds assorted mushrooms, such as button, cremini, or shiitake, trimmed and cut in half (large ones should be quartered)
3/4 cup heavy cream
1 cup freshly grated Parmesan cheese (4 ounces)
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
1 cup plain coarse breadcrumbs, preferably homemade

Steps:

  • Preheat oven to 350 degrees. Heat 1 tablespoon butter in a large cast-iron or ovenproof skillet over medium-high heat. Add onions, and cook until soft and just starting to brown, about 5 minutes. Transfer to a large mixing bowl.
  • Working in four batches, melt 2 tablespoons butter in same skillet; add one-quarter of the mushrooms, tossing to coat evenly with butter. Cook until mushrooms have released their juices and most of the juices have evaporated, about 5 minutes. Transfer to bowl with onions. Repeat process with remaining butter and mushrooms.
  • Add heavy cream, 1/2 cup Parmesan, salt, and pepper to bowl; stir until combined. Return the mixture to skillet or transfer to a large baking dish. Sprinkle breadcrumbs and remaining 1/2 cup Parmesan over the top.
  • Bake until bubbling and nicely golden on top, about 25 minutes. Remove from oven. Serve hot.

MUSHROOM-GRUYERE SCALLOPED POTATOES

6 tablespoons butter, divided
1/2 pound each sliced fresh shiitake, baby portobello and button mushrooms
1 tablespoon sherry, optional
5 tablespoons all-purpose flour
3 cups half-and-half cream
3 tablespoons minced fresh rosemary
1-1/2 teaspoons salt
1 teaspoon pepper
2 cups shredded Gruyere cheese
2 pounds red potatoes, thinly sliced
1/2 teaspoon paprika

Steps:

  • Preheat oven to 350°. In a large skillet, heat 1 tablespoon butter over medium-high heat. Add mushrooms; cook and stir until tender. If desired, stir in sherry and cook until evaporated, 1-2 minutes longer . Remove from pan., In same pan, melt remaining butter over medium heat. Stir in flour until smooth; gradually whisk in cream. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Reduce heat to medium-low. Stir in rosemary, salt and pepper. Gradually add cheese, stirring until melted. Remove from heat., Arrange potatoes in an even layer in a greased 13x9-in. baking dish. Top with mushrooms and sauce mixture; sprinkle with paprika., Bake, covered, 40 minutes. Bake, uncovered, until golden brown and bubbly, 20-25 minutes longer. Let stand 15 minutes before serving.

Veal Scallops with Mushrooms and Herbs image

1/4 cup finely chopped shallot
1 garlic clove, minced
1/2 teaspoon dried sage, crumbled
2 1/2 tablespoons olive oil
1/4 pound fresh shiitake mushrooms, stems discarded and the caps sliced
1/4 pound white mushrooms, sliced
3/4 cup dry white wine
1/2 pound veal scallops (each about 1/8 inch thick)
all-purpose flour seasoned with salt and pepper for dredging the veal
2/3 cup chicken broth
1/4 cup heavy cream
2 tablespoons minced fresh parsley leaves (preferably flat-leafed)

Steps:

  • In a heavy skillet cook the shallot, the garlic, and the sage in 1 tablespoon of the oil over moderately low heat, stirring, until the shallot is softened, add the mushrooms and salt and pepper to taste, and cook the mixture over moderate heat, stirring, until the mushrooms are tender and all the liquid they give off is evaporated. Add 1/4 cup of the wine, simmer it until it is evaporated, and transfer the mixture to a bowl. Dredge the veal in the seasoned flour, shaking off the excess. In the skillet, cleaned, heat the remaining 1 1/2 tablespoons oil over moderately high heat until it is hot but not smoking and in it sauté the veal for 1 minute on each side, or until it is golden. Transfer the veal to a platter and keep it warm.
  • Add the remaining 1/2 cup wine to the skillet and deglaze the skillet over moderately high heat, stirring and scraping up the brown bits, until the wine is reduced to glaze. Add the broth, boil the liquid until it is reduced by half, and stir in the cream, the mushroom mixture, and salt and pepper to taste. Simmer the sauce until it is thickened slightly, stir in the parsley, and pour the sauce over the veal.

Stuffed Mushrooms With Scallops image

This recipe is a variation on one that was printed in our local newspaper. They were a big hit at our Christmas Party last year. For those of you who arent't big fans of scallops, they work great on their own with a slice of provolone cheese melted on top instead.

24 large mushrooms, cleaned, stems removed and minced
24 medium scallops
3 tablespoons butter
1/4 cup onion, finely chopped
2 garlic cloves, minced
1/2 cup seasoned dry bread crumb (I use italian)
1 egg, beaten
2 tablespoons white wine
2 tablespoons chopped fresh parsley
1/4 lb butter, melted
toothpick

Steps:

  • Preheat oven to 400 degrees.
  • Melt butter in fry pan and saute onions and garlic until slightly softened.
  • Stir in mushroom stems and saute until the mushroom wilt a bit.
  • Cool mixture.
  • Mix mushroom mixture, bread crumbs, egg, white wine, and parsley in bowl.
  • Spoon mixture evenly into mushroom cap.
  • Top the stuffing with a scallop and secure with a toothpick.
  • Carefully dip mushroom into the melted butter.
  • Place mushroom in oven-proof caserole dish (or baking sheet).
  • (I find it easier to assemble each mushroom entirely, dip in butter, place in dish, and repeat as opposed to more of an assembly line method) Bake for 15 minutes or until scallops are cooked through.

Scrapple or mush has been a hearty breakfast staple in our family for generations. Heavily flavored with herbs, spices, onions and meat, it is a meal unto itself.

1 smoked ham hock
4 quarts water
2 teaspoons chicken soup base
3 cups cornmeal
1 ½ teaspoons dried thyme leaves
2 teaspoons rubbed sage
1 teaspoon ground savory
⅛ teaspoon ground allspice
⅛ teaspoon ground nutmeg
⅛ teaspoon ground clove
1 teaspoon ground black pepper
½ teaspoon ground white pepper
1 pinch cayenne pepper
salt and pepper to taste
2 tablespoons butter
1 onion, diced
2 cups shredded sharp Cheddar cheese

Steps:

  • Bring the ham hocks and water to a boil in a large pot over high heat. Reduce heat to meduim-low, cover, and simmer until the pork is very tender, about 2 hours. When done, remove the ham hocks to a plate to cool to room temperature, then shred the meat, discarding the fat, skin, and bones. Strain the cooking liquid and reserve 2 1/2 quarts.
  • Return the 2 1/2 quarts of broth to a boil in a large pot over high heat, and stir in the chicken soup base until dissolved. Place the cornmeal in a bowl, and stir in the thyme, sage, savory, allspice, nutmeg, clove, black pepper, white pepper, cayenne pepper, salt, and pepper. Slowly whisk the cornmeal into the boiling broth, and reduce heat to medium-low. Simmer 15 minutes, stirring frequently.
  • While the cornmeal is cooking, melt the butter in a large skillet over medium heat. Stir in the onion, and cook until the onion has softened and turned translucent, about 5 minutes. After the cornmeal has cooked for 15 minutes, stir in the onion, shredded ham hock, and Cheddar cheese. Cook and stir an additional 15 minutes; the mixture will be thick enough that a spoon will stand up in it. Season to taste, scrapple must be well-seasoned or it will taste very bland when fried. Oil the bottom and sides of three 9x5 inch loaf pans, and pour in the scrapple. Cover the pans with plastic wrap, and refrigerate overnight.
  • To serve the scrapple, remove from the loaf pans and cut into 1/4 to 1/2 inch thick slices. Fry in melted butter in a skillet over medium-high heat until brown and crispy on both sides, about 10 minutes.

3/4 cup butter, melted
salt and pepper
3 cups soft french breadcrumbs

Steps:

  • Place 1/3 of the Mushrooms in a buttered 2 quart baking dish.
  • Cover with 1/3 of the bread crumbs.
  • Drizzle 1/3 of the butter over crumbs.
  • Sprinkle with salt& pepper.
  • Repeat another layer with another 1/3 of each.
  • For top layer, cover with remaining mushrooms, salt& pepper.
  • Cover and bake at 325° for 35 minutes.
  • Mix remaining butter and crumbs.
  • Spoon over mushrooms.
  • Bake uncovered 10 minutes more.

1/4 cup dry white wine
1 cup cream

Steps:

  • Brown scallops in 3 Tbsp of the butter.
  • Cook 2 minutes.
  • Remove.
  • To skillet, add shallots, mushrooms, tomatoes.
  • Cook 2 minutes.
  • Add wine- cook till reduced by 1/2.
  • Add cream and salt and pepper.
  • Cook 3 minutes.
  • Return scallops and add the 1 Tbsp butter.
  • Heat through.

3 cups fresh french bread crumbs (remove crust and process in Cuisinart)
3/4 cup (1 1/2 sticks) butter, melted
1/2 cup dry white wine
salt and pepper

Steps:

  • In a 2 quart casserole dish put in 1/3 mushrooms, 1/3 bread crumbs, 1/3 melted butter, drizzled over mushrooms and bread crumbs. Season with salt and pepper. Repeat twice more with remaining ingredients. Pour white wine over layers. Cover with foil and bake at 325 degrees for 35 minutes. Remove foil and bake 10 minutes more (or broil until tops golden brown). Another alternative is to just mix ingredients instead of layering, add wine and bake as directed.
