These Frosted Banana Cookies are my new favorite way to put my soft brown bananas to use. They are so easy to make and taste absolutely amazing. If you are in need of a quick and simple snack or dessert recipe, these are perfect.

Number Of Ingredients 15

1 cup sugar
½ cup butter
½ cup shortening
1 teaspoon vanilla
3 bananas (ripened and mashed)
2 eggs
½ cup buttermilk
1½ teaspoons baking soda
½ teaspoon salt
3¼ cups flour
2 Tablespoons butter (melted)
2 bananas (ripened and smashed)
3 cups powdered sugar ((more or less depending on the consistency that you like))
2 Tablespoons milk
1 teaspoon vanilla

Steps:

  • Heat oven to 350 degrees.
  • Cream sugar, butter, shortening, and vanilla until light and fluffy.
  • Add bananas and then mix in the eggs.
  • Blend in buttermilk. Add the dry ingredients until just combined. Do not over-beat. It will be a sticky batter. Drop by tablespoons onto a greased cookie sheet.
  • Bake for 9-10 minutes, until slightly golden.
  • Cool completely.
  • Mix all ingredients together and spread over cooled cookies.

An old recipe of my grandmother's; my mother and grandfather love it on spice cake. Grandma's recipe card says that this frosting is similar to a banana-frosted spice cake A&P used to sell back in the very early 70s.

1 large very ripe banana, mashed
1/2 teaspoon lemon juice
1/4 cup butter, softened
3 -3 1/2 cups powdered sugar, sifted

Steps:

  • Mix the banana and lemon juice together.
  • Cream the butter with 1 cup of the powdered sugar; then add the banana and enough remaining sugar to make the mixture thick and spreadable.

1/3 cup butter (melted)
1 cup brown sugar
1 egg
2 teaspoons vanilla
3 bananas (ripe and mashed)
1/2 cup chopped pecans
1 cup flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup butter (softened)
2 cups powdered sugar
1/3 cup maple syrup
1/2 teaspoon vanilla
1/4 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees. Lightly grease and flour a 9 x 9 inch baking dish. Set aside.
  • In a mixing bowl combine the melted butter, brown sugar, egg, vanilla, bananas, and pecans.
  • Then add in the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Stir until combined. The batter will be thick. Spread into the prepared pan.
  • Bake for about 35 minutes or until a toothpick inserted comes out clean. Cool completely.
  • For the frosting, mix together the softened butter, powdered sugar, syrup, and vanilla. Mix until smooth and creamy. Spread over the cooled blondies. Sprinkle with chopped pecans.
