UNCLE BILL'S CRISPY HALIBUT STEAKS



Uncle Bill's Crispy Halibut Steaks image

A very easy recipe to make and it tastes so good. The halibut steaks can be fried or baked. I find baking is the best.

32 ounces halibut steaks, 3/4 inch thick, 4 steaks
2 large eggs
1 teaspoon Dijon mustard
1/2 teaspoon granulated garlic powder
1 teaspoon dried dill weed
1/3 cup crushed corn flakes
1/4 cup freshly grated parmesan cheese
1 1/2 teaspoons italian seasoning
1 tablespoon extra virgin olive oil
2 tablespoons butter

Steps:

  • Rinse halibut steaks in cold water, then pat dry on paper towels.
  • In a bowl, whisk eggs, add mustard and whisk until blended.
  • In a shallow dish, combine garlic powder, dill weed, crushed cornflakes, parmesan cheese, and Italian seasonings; mix well to blend.
  • Dip halibut steaks in egg mixture.
  • Now place halibut steaks individually in dry mixture and coal both sides well.
  • BAKING.
  • Preheat oven to 450°F.
  • In a 13 x 9 inch oven-proof casserole dish add olive oil and butter.
  • Place dish in heated oven until butter melts.
  • Place coated steaks in casserole dish in a single layer.
  • Bake in preheated 450 F oven for 5 minutes, then turn over and continue to bake for another 5 minutes or until fish flakes when tested with a fork.
  • DO NOT OVERCOOK halibut steaks.
  • FRYING.
  • In a large frying pan, melt butter with olive oil on medium high heat.
  • Add steaks and fry for 5 minutes on each side or until fish flakes when tested with a fork.
  • DO NOT OVERCOOK halibut steaks.
  • Serve with with a nice homemade tartar sauce.

Good way to start the day, I used a nice hot taco sauce to make these but you can vary to taste. Makes enough mix for one large taco shell or two small ones. If you get the eggs to just the right point of cooking so there is still a bit of moisture left it will make the tacos soft on the inside while still crispy on the outside.

1 large taco shell
1 teaspoon butter
2 large eggs
2 tablespoons taco sauce (hot salsa)
1/4 cup ham, diced
1 tablespoon cheddar cheese, grated (optional)
3 slices tomatoes (optional)

Steps:

  • Pre-heat oven to 180C / 350F and pop in the taco shells for around 7 minutes to warm up.
  • Melt butter in a saucepan over medium heat.
  • Break eggs into saucepan and add milk.
  • Stir often with a fork until some clumps of egg are just starting to form.
  • Add taco sauce and ham. Continue stirring until eggs are fairly firm but still moist.
  • Fill taco shell with mixture and optionally cheese and tomato slices. You may have a little liquid left at the bottom of the saucepan so use a spoon to fill the tacos to avoid getting too much liquid in them.

We always have leftover taco shells after Taco Tuesdays, so, this is how we use them up. Add whatever ice cream toppings you prefer to create your own delightful ice cream taco.

1 (1 ounce) square dark chocolate, chopped
1 hard taco shell
1 teaspoon assorted sprinkles
1 scoop vanilla ice cream, or more to taste
1 tablespoon mini candy-coated chocolate pieces (such as mini M&M's®)
1 teaspoon chocolate sauce, or to taste
1 teaspoon caramel ice cream topping, or to taste
1 tablespoon chocolate whipped topping
1 maraschino cherry, halved

Steps:

  • Melt chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, about 1 minute.
  • Dip ends of taco shell into the melted chocolate. Dip in sprinkles. Scoop ice cream into taco shell. Top with candy-coated chocolate, chocolate sauce, caramel, whipped topping, and maraschino cherry.
