UNCLE BILL'S STEAMED OYSTERS

Steps:
- Shuck oysters carefully and save the shell.
- Arrange oysters in a half shell on a heat-resistant plate ready for steaming.
- Heat a small frying pan over medium heat.
- Add olive oil, garlic and grated ginger and cook until pale golden, about 1 minute, stirring constantly.
- Add brandy and ignite, shaking pan to mix; cook until alcohol is burned off, about 10 seconds.
- Spoon lemon juice equally on each oyster that are arranged in the half shell.
- Spoon chili sauce equally on each oyster.
- Top each oyster with the chopped green onions.
- Place plate of oysters in a steamer.
- Cover and let steam for 6 to 8 minutes or until oysters are done to your likeness.
- Serve immediately.
- If you buy oysters already shucked, then place them in egg cups that are used for poaching eggs, also use the pan that comes with the egg cup.
- Firstly, spray each egg cup with olive oil or a good cooking oil.
- Place one oyster in each cup.
- Proceed to prepare oysters as noted above.
- Add about 3 cups of water to the steaming pan and bring to boil.
- Place the cups into poaching tray and then into the steamer.
- Cover and let steam for about 8 minutes or until oysters are done to your likeness.

UNCLE BILL'S FRESH BEET FILLING FOR PYRAHI

Steps:
- Wash and scrub beets, cut off the tails and the end.
- In a saucepan, add beets, just cover with water and bring to boil.
- Reduce heat and cook until beets are just tender, about 30 minutes.
- Drain and immediately pour cold water over beets.
- When cool enough to handle, remove skins and discard.
- Grate beets.
- In a mixing bowl, add grated beets, sugar and salt, mix well.
- In a frying pan, melt butter, add beet mixture and saute' for 5 minutes stirring occasionally.
- Let cool slightly before using.
- Use about 3 tablespoons of filling for each pyrahi.
- You can also use canned regular beets.
- Grate the beets and prepare them as above.

UNCLE BILL'S CRISPY HALIBUT STEAKS
A very easy recipe to make and it tastes so good. The halibut steaks can be fried or baked. I find baking is the best.

Steps:
- Rinse halibut steaks in cold water, then pat dry on paper towels.
- In a bowl, whisk eggs, add mustard and whisk until blended.
- In a shallow dish, combine garlic powder, dill weed, crushed cornflakes, parmesan cheese, and Italian seasonings; mix well to blend.
- Dip halibut steaks in egg mixture.
- Now place halibut steaks individually in dry mixture and coal both sides well.
- BAKING.
- Preheat oven to 450°F.
- In a 13 x 9 inch oven-proof casserole dish add olive oil and butter.
- Place dish in heated oven until butter melts.
- Place coated steaks in casserole dish in a single layer.
- Bake in preheated 450 F oven for 5 minutes, then turn over and continue to bake for another 5 minutes or until fish flakes when tested with a fork.
- DO NOT OVERCOOK halibut steaks.
- FRYING.
- In a large frying pan, melt butter with olive oil on medium high heat.
- Add steaks and fry for 5 minutes on each side or until fish flakes when tested with a fork.
- DO NOT OVERCOOK halibut steaks.
- Serve with with a nice homemade tartar sauce.
UNCLE BILL'S BULGARIAN STEW
My Uncle Bill was the best cook ever! Well, that's what I though while growing up anyways. He used to make what HE called a "Bulgarian stew", and being he was from Bulgaria maybe it truly was. One thing it is for sure is delicious. This is perfect for a cold day and goes great with baked potatoes and his "Bulgarian Salad". Also, make sure you have some fresh Italian or French bread to sop up the juice in the bottom of the bowl...MMMMM good!

Steps:
- Add olive oil, pork, peppers and onions in a large pot and stir fry until pork is done, stirring frequently.
- Add tomato sauce and 2 cans of water (approximately 3-4 cups).
- Add all spices, lemon juice, and bouillon cube and stir.
- Bring to a boil.
- Add green beans and northern beans and stir.
- Lower heat to low, cover with lid and simmer for 2 hours stirring often in between.

- Preheat oven to 450 degrees F.
- In a mixing bowl, combine milk and flour.
- Add eggs one at a time and beat well after each addition until batter is smooth.
- Add salt and mix well.
- Heat a 12 cup muffin pan for 3 minutes in preheated 450 F oven.
- Remove pan from oven and add 1 1/2 teaspoons of olive oil to each muffin cup.
- Return muffin pan to preheated 450 F oven and heat for about 2 minutes or until oil gets hot (THIS IS VERY IMPORANT.) Remove heated pan from oven and spoon about 3 tablespoons of batter into each cup until mixture is evenly distributed in the 12 cups.
- Return to oven and bake in preheated 450 F overn for 10 minutes.
- Reduce heat to 350 F and continue to bake for another 10 minutes or until Yorkshire pudding has risen and is lightly browned.
- DO NOT OPEN OVEN DOOR AT ANYTIME DURING THE BAKING PERIOD.
- At the end of the baking time specified, you may open the oven door to take a peek at the pudding to see if it has risen and is lightly browned.
- Remove from oven and serve immediately with your favorite gravy recipe along with your roast.
- If you have any fat from your roast, you may use this in lieu of the olive oil.
- Prepare muffin pan in the same manner.

- If using split green peas, add to saucepan, cover with water and cook until just tender.
- Drain and mash.
- Add sugar, salt and butter and mix well.
- Use about 3 tablespoons of mixture for each pyrahi.
- If using fresh or frozen green peas, place in a microwave safe dish, add 2 tablespoons of water and microwave on HIGH (full power) for 4 minutes or until cooked.
- Drain and mash.
- Continue preparing filling as noted above.
