UNBELIEVABLE TOMATO SANDWICHES
This is a Paula Deen recipe that's just delicious, homegrown tomatoes and homemade mayonnaise is a must in this recipe. I make my mayo in the food processor, doesn't take long this way. This is the most requested lunch in the summer.

Steps:
- Peel tomatoes by dropping them into boiling water for a few seconds then slice into rather thick slices. Put tomatoes on a paper towel and shake seasoning on both sides and let them sit and "sweat" while you prepare the bread and mayonnaise.
- Cut bread into rounds (I use a small coffee cup) and save the crusts for bread pudding!
- Mix mayonnaise with grated onion and accent. Spread mayo mix onto each round of bread and slap a thick slice of tomato with Cajun seasoning on it and enjoy.
- I usually make a nice summer soup to go along with these.

BACON, HORSERADISH, AND TOMATO SANDWICHES

Steps:
- Saute bacon in small skillet until brown and crisp. Drain and cool on paper towels; crumble.
- Combine bacon, cream cheese, and horseradish in small mixing bowl; blend thoroughly with a fork.
- Spread mixture in a thin layer onto 6 slices of bread.
- Top 3 slices of bread with single slices of tomato; with other 3 slices of bread, make sandwich with cream cheese-side down. Press gently to adhere.
- Cut each sandwich into fourths lengthwise with a sharp knife-each sandwich makes 4 long finger sandwiches.
- Stack on a serving tray, cover tightly with plastic wrap or foil and refrigerate until serving time.
RED HOT MAYO AND TOMATO SANDWICHES
A mayonnaise and tomato sandwich is a Southern staple. The Deen brothers think a little heat makes it all the more appetizing. Adapted from their cookbook, Get Fired Up.

- Whisk together mayonnaise, hot sauce, and cayenne in a small bowl.
- Spread the mayo mixture over one side of each slice of bread.

- Mix cheese, green pepper, Worcestershire, mustard, mayonnaise, onion and pepper.
- Place sliced tomatoes on toasted bread and divide cheese mixture evenly among them. Gently press cheese mixture onto tomatoes with the back of a spoon until tomatoes are completely covered.
- Broil until bubbling and golden brown.

Double the pleasure! Adapted from Cooking With Paula(Deen) magazine. I don't eat bacon, so adapted this to suit my taste. Actually, you could make this without the bacon and it will still be good. Sometimes you could skip toasting the bread, and yep, it'll still be great. I hope you enjoy.

- Cook the bacon and place on paper towels. When cool, break each slice in half.
- Toast the bread slices.
- Spread mayonnaise on 2 slices of bread. Now lay lettuce leaf, tomato slices, and 3 pieces of the broken veggie bacon on one slice.
- Top with other bread slice, mayonnaise side up. Lay lettuce leaf, tomato slices and 3 pieces of broken bacon on bread. Top with additional slice of bread.
- Repeat for remaining three sandwiches. Slice diagonally and serve. Great served with pickles and chips. Enjoy!

- In small bowl, whisk together oil, balsamic vinegar, red wine vinegar, tarragon, 1/4 teaspoon salt, 1/4 teaspoon pepper, and garlic.
- Place half the tomato slices and half of the onion slices in a shallow baking dish; drizzle with half of the olive oil mixture. Add remaining tomato and onion slices; drizzle with remaining olive oil. Let stand at least 2 hours, spooning juices over tomato and onion 4 or 5 times.
- To assemble sandwiches: Split bread loaves and place, cut side up, on a platter; brush cut sides with marinade. Divide tomato and onion mixture among loaves. Top with lettuce and avocado; sprinkle with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.

Tastes like summer! Room temperature tomatoes are key here and once the salt and pepper hit them, the juices start flowing. SUPER TOMATO SANDWICHES
I never could resist a tomato sandwich. It is the combination of mayonnaise, tomatoes and bread that is so compelling. I call these MLTs: mayonnaise, lettuce and tomatoes. I make a spicy mayo with chipotle adobo (my son's favorite), and an herbal mayo with tarragon (my favorite). Play around with aioli and other flavored mayonnaises. Use whole grain bread and toast it lightly so that it doesn't get soggy. The tomatoes should overlap in a thick layer.

- Spread mayonnaise on both slices of the lightly toasted bread. Arrange tomato slices in a thick overlapping layer on top of the bottom slice. Sprinkle with salt, pepper and basil if desired (do not salt if not eating right away).
- Place a layer of thin avocado slices on top of the tomatoes and top with lettuce leaves and the top slice of bread. Press down firmly and cut the sandwich in half. You can wrap and transport the sandwich, as the toasted bread will resist becoming soggy for a few hours.

This version, based on pan con tomate, involves rubbing the guts of a ripe tomato all over garlicky toasted bread. More tomato slices are added on top, along with slivers of onion and mayonnaise, and bacon if you'd like. It's a supremely messy sandwich best munched over the sink, or with plenty of napkins nearby.

- Toast the bread. Take each slice and rub one side all over with the cut side of the garlic clove. (The clove should start to disintegrate into the bread.) Rub each slice with the cut sides of the soft halved tomato, pressing so the tomato flesh sticks to the bread. Drizzle bread with oil, then sprinkle with salt.
- Spread mayonnaise over the tomato pulp. Place the sliced tomatoes on top of 2 pieces of the bread. Cover tomato slices with onions and sprinkle with salt. Top with bacon if using, then use the other 2 slices of tomato-rubbed bread to make sandwiches. Eat over the sink.
